Southeast Asian Cuisines You Haven’t Tried Yet

We’re too busy fighting over whether Singapore or Malaysia has the best nasi lemak or checking out the latest pho offerings to see what other yummy dishes our neighbours boast. Ready to expand your geopolitical consciousness a little bit? Here are some of the best spots for where you can get lesser known Southeast Asian delicacies.

 

1. Filipino: Iskina Cebu

Sink your teeth into the crispiest and juiciest national dish at Iskina Cebu. Here the lechon is spit-roasted for five hours over a charcoal fire — as close as you can get to authentic without flying over. The marinade packs a punch and makes the wait worthwhile. If pork’s not your thing, then check out the inasal na manok, or roasted chicken. Iskina Cebu does not offer a huge menu, but what they do, they do well.

2. Burmese: Inle Myanmar

Make sure you go with friends to this basement joint, because you’ll want to try everything. We love the flavourful Mohinga, a fish-based noodle soup filled with what seems like a thousand other flavours — assam, onion, banana blossom, ginger — that come together to do one thing: get you hooked. Then there’s the Pickled Tea Leaf Salad, which gives you that added punch you need for the day with its crisp peanuts, toasted sesame seeds and fried garlic. We still haven’t found a place that serves our favourite Cambodian dish, fish amok, just yet, but if you don’t have the time for a weekend trip, why not try this standalone stall in the east? Run by a Cambodian lady, 51 serves up Khmer food with a Singaporean spin. Try their Loc Lak Khmer — wok-fried beef paired with a zesty, cilantro dipping sauce — or their fried white-spotted rabbitfish for a healthy(ish) but hearty family meal.

4. Laotian: IndoChine Chijmes

While Singapore does not have many Laotian restaurants just yet, IndoChine can be counted on to bring some of the best dishes to our shores. Its founder, Michael Ma, does hail from the “Land of a Million Elephants” after all. At this gorgeous outlet in Chijmes, order the Ping Xinh Nam Tok, or marinated beef rump, which also comes with a wagyu option. And while this landlocked country may not have much seafood naturally, you can still savour the Beer Battered Sea Bass Fillet with a Laotian-inspired tomato salsa. Delish.

Australian celebrity chef David Thompson has brought street food with pizzazz at his Marina Bay Sands outlet, decked out in hipster grunge. He has upped the glam factor on some familiar street snacks, like using wagyu for his beef skewers. With others, there is a no-holds-barred approach to his dishes, like the sweat-inducing Chiang Mai Chicken Larp with Cabbage, Chilli and Mint. It’s almost like being in a Bangkok soi, minus the grime, plus the air-conditioning.

There are always long lines outside every Nakhon branch, but grab a highly coveted seat and it’s easy to see why. Prices are low (aided by the fact that the outlets are not air-conditioned), and the vibe, authentic (we love listening to the Thai hits playing on the radio). Most importantly, the food is good. The curries here never fail to satisfy, and the Thai milk tea has mastered the perfect ratio of tea to milk.

6. Blue Jasmine

At this Halal-certified restaurant, diners can enjoy rustic Thai dining in a contemporary setting (be sure to grab an Instagram-worthy pic of those floor tiles). From Thursdays to Saturdays, there is also a buffet option — perfect for that Thai binge eating we need on some days.

In claustrophobic Singapore, the high ceilings provide a much-needed breather, and the staff never stop smiling despite the crowds.

A must-try: the Summer Chicken Stew, which is especially delicious on rainy days.

The Bakery by Woodlands Sourdough

We are reluctant to trumpet this place any more than necessary: seats are few and far between, and weekend crowds start to build up at 8.30am on the dot when it opens. But it is, arguably, the best place in Singapore to go for your sourdough fix.

We love their Sunday spin on Bialys, a Polish pastry they present with chopped onions, cheddar, and cracked eggs. Another favourite is the Rye Strawberry Balsamic Brownie, a sinful conclusion to a great breakfast. No meats served here, but that’s because these guys know that bread is their forte. Go early.

Eating Out in Singapore: Table Manners Every Singaporean Should Know

Manners maketh man, but sadly, dining etiquette isn’t a compulsory component in most schools. We run through the basics of eating out in Singapore with its myriad of cuisines and settings, whether it’s a glitzy Italian joint or your favourite kopitiam.

1. Wait for everyone to be served.

Eating out is a communal thing, so it’s rude if you start without everyone at the same time.  If it’s a small group of two to four people, definitely wait. In a bigger setting, like a business meal, hold off munching too, unless the host asks you to start. The best part is that this can be applied in any situation, whether you’re at a fancy French restaurant or at a zichar coffeeshop.

2. Don’t grab the wrong plate / drink

How many of us have ended up with someone else’s drink, or shuffling plates around because someone took somebody else’s while at formal Western sittings? Here’s an easy way to remember where yours are: have both your index fingers meet the thumbs on each hand, and you’ll get a ‘b’ and ‘d’. ‘B’ for bread plate, ‘d’ for drink.

3. The Lazy Susan turns in one direction only

There’s no back and forth with this rotating table at family-style dinners. The first dish should face the most senior at the table, and it spins in the clockwise direction. It’s not polite when your arms cross another’s to get to the food, so wait till the dish is in front of you.

When drinking Western soups, scoop from inside to out, and bring the spoon to your mouth (not the other way around). For Chinese soups, scoop in the reverse direction.

Show respect for cultures and customs

Make sure to leave your chopsticks across the bowl or on a rest if you’re not using them — sticking them upright in your rice bowl is a big taboo because it looks like joss sticks for the dead. If you’re eating fish, don’t flip it over after you’re down with the top half, as it is said to symbolise a fisherman’s boat being overturned, and thus bad luck. And if you’re dining with Muslims, do not pass food with your left hand.

Towards the end of the food haven that is Old Airport Road Food Centre lies a stall brewing fragrant, thick, brothy bowls of goodness. The braised beef brisket noodle soup is a standout, with its warm, full-bodied, and blended with spices to give it a hearty flavour. Uncle William serves up good meat alongside kind smiles — it’s hard to ask for anything more. Unless you want wagyu noodles or rice, which he has on the menu, too.

 Morsels Firecracker Pulled Pork Pasta

It’s always a treat to dine at Morsels, but one of the most memorable dishes we’ve had here is the “Firecracker” pulled pork pasta. The pork is marinated for 24 hours, then braised for another three, so you know it’s juicy and flavourful. The habanero pesto is nestled in the curves of the shell pasta, so with each bite, you’ll be grabbing your glass of water, and craving your next mouthful. Don’t worry if you can’t take the heat — each bowl comes with a dollop of sour cream to ease the burn.

JB Ah Meng

This amazing zichar restaurant is always crowded, and once you have their “san lou bee hoon” (or ‘three-storey noodles’), you’ll know why. Every strand is coated with wok hei, and the charred bits are a great textural contrast to the more moist noodles inside. Fried with shrimp, egg and squid, it is an absolute must-order if you can brave the crowds.

Sumo Bar Happy

This hole-in-the-wall ramen bar was our most visited restaurant last year and we are ecstatic they are finally on Chope so we can continue our streak without the anxiety of not getting a seat. The beef ramen is great (as are the free flow onsen eggs), but my personal favourite is the sashimi mazemen. The fish is great (how can you complain when there’s otoro, ikura and akami among others?), but accompanied with the chilled yuzu noodles and ponzu sauce, and this dish is the most addictive, refreshing thing you can have on a hot day. Wash it down with one of the playful cocktails on offer.

Boon Tong Kee Kway Chap Braised Duck Roasted

Not to be confused with the chicken rice shop of the same name, this stall in Zion Road Food Centre serves braised, tender duck meat with two great chilis. But the kway chap is cooked to perfection, the Chinese equivalent of al dente, and the broth is a soothing herbal blend sure to complete the meal. Go early to avoid the queue.

A Noodle Story

There’s always a long line here for these bowls of “Singapore-style ramen”, but it’s no surprise when the food deserves its two Michelin Bib Gourmand awards. Brave the wait, and you’ll be rewarded with melt-in-your-mouth char siew, an Instaworthy (and tasty) potato-wrapped prawn, a soy sauce-infused onsen egg and crispy Hong Kong-style wontons, served on top of a bed of springy noodles. There are only 200 bowls on offer for lunch though, so get there quick.
