Canggu is the place to go in Bali now – it’s an increasingly popular and hip stretch of beaches that provides an alternative to Kuta yet is just a 20-minute drive from Seminyak. It’s comprised of almost 8 km of coastal attractions, biking options, rice fields, restaurants, and a plethora of surfing spots. There are four fantastic beaches to surf in Canggu: Berawa, Echo, Pererenan, and Batu Bolong. From beginner to expert level options, anyone looking to ride the crystal clear waters of Bali can find the right place at a Canggu beach.

They’ve definitely taken the ‘hipster-cafe’ vibe that’s been consuming Canggu to heart, but when the food tastes this good and comes at affordable prices we’re not gonna complain. Let us not judge a cantina solely on its Margarita, but let’s also just say that Lacalita knows how to make a killer margarita. Their modern Mexican cuisine brings a breath of (spicy?) fresh air to the Batu Bolong beach area, with a fun, group-friendly ambience perfect for a night of bites and drinks after a long day riding waves. Their Ahi Poke Ceviche is to-die-for, while other highlights like the Wild Mushroom Tacos and Short Rib Beef Burger more than stack up.

The Savage Kitchen

Don’t let the name fool you – if you’re looking for a more refined dining experience, The Savage Kitchen is where you want to go in Canggu. Their philosophy is simple: fresh, locally sourced food that looks great and tastes even better. Expect exquisite but filling dishes like the Black Rice Risotto with roasted pepper jus, or the Savage Pork Belly Ramen with wild mushrooms, quail eggs, and tempura bok choy. Seafood is the real star here though. From Roasted Lobster Tail with sweet potato puree, burnt shallot and citrus cream to the wildly yummy Smoked Butterfish with avocado, citrus caramel, and lotus chips, you’ll be spoilt for options. The team considers themselves ‘savages’ in the food industry because of their focus on regional ingredients and obsession with simple food done well. We say bring on the savagery!

Another ‘warung’ style dining option, Dandelion dishes out some sensational local cuisine and a surprisingly fantastic cocktail menu in a charmingly rustic garden setting. From the moment you step through the charming wooden doors to when you’re feasting on Satay Chicken Dumplings and Nasi Goreng overlooking the Canggu rice paddies (perhaps catching a glimpse of children playing with the rabbits in the backyard garden area), it’s truly a one-of-a-kind Bali experience. The team and staff are also among some of the most lovely and friendly you’ll find on the island, and you can’t beat the downright affordable prices for quality wines by the glass.

Little Flinders

Cozy Australian style all-day breakfast right by the beach in Bali? Yes, please! Indonesian chef-owner Fany Hermawan brings Melbourne food culture to Canggu, but don’t worry – he’s spent over 20 years in the F&B industry and led teams in several renowned restaurants in Melbourne, so you can eat assured that this is authentic and quality contemporary nosh. Some of our favourites are the Smoked Salmon Eggs Benedict with saffron hollandaise, Ox Tongue Teriyaki, Green Tea Truffle Fries, and the badass Barbecued Jack’d Ribs that are slathered in a whisky & orange BBQ marinade. It may sound fancy (and taste superb), but the prices are still reflective of a small and humble beachside cafe.

Old Man’s Cafe

Dubbed by some as ‘the Tinder of real life’, this youthful seaside cafe and bar is definitely a laid back/good vibes kind of space (though we can’t promise you’ll find love). Old Man’s Cafe is mostly outdoors and boasts varied seating from bean bags, to couches, counters, tables, and more. Situated right along Batu Bolong beach, it’s also perfect for burgers and Bintang after an afternoon surf lesson, as they even have an outdoor shower, changing rooms, and a board rack. Try the Fish & Chips and various local dishes, but more importantly go for their daily happy hour (5pm – 6pm) and catch a beautiful sunset with a cold beer in hand.

10. Ji Restaurant

Located right across from Old Man’s is Ji, which provides a decidedly different type of dining experience than it’s neighbor. The setting and ambience are essentially unmatched, as Ji sits in an ancient Kang Xi period temple built in 1706. So in addition to enjoying the boutique wines, East-Asian-inspired cocktails, extensive sake collection, and of course fabulous Japanese fusion cuisine, guests can also browse ancient Chinese and Balinese artifacts in the museum section of the restaurant. Ji also have an upstairs. You could also choose to dine al fresco with a great view of Batu Bolong, just be sure to try the ‘Dragon of Ji’ maki roll that’s stuffed with avocado, shrimp tempura, tobiko, and spicy mayo.

Drool-worthy Eats of the Week: Tom Yum Cereal Salmon & BBQ Pork Ribs at Pluck

One glance at Pluck’s new menu was all it took win my heart…er, stomach. So like any good foodie I strolled over to get a taste of what promised to be a feast of fusion bites highlighting Southeast Asian flavors.

Full disclosure: the reality was so much better than I could have ever anticipated.

Two dishes truly stood out among some stellar competition: the Tom Yum Cereal Salmon…

Talk about leaving me breathless. I wolfed down that salmon in under two minutes and the ribs didn’t take much longer. Naturally I HAD to get a behind-the-scenes look at how these absurdly tasty dishes were created. Come fly with me…into Pluck’s kitchen!

Tom Yum Cereal Salmon ($22++)

The Norwegian salmon bites take a quick dip in a lake of tom-yum spiced cereal crumbs…

are presented to the oven gods for 7 brief minutes…

and are finished with simple topping of mentaiko mayo and spring onion. BAM.

Sublime.

The salmon is ridiculously moist and tender and the scrumptious bites pack a huge flavour. The smooth mayo nicely tempers the spice of the tom yum, and the crunch of the cereal contrasts appealingly with the melt-in-your-mouth fish. Just putting it out there – it makes for an otherworldly experience.

Assam BBQ Pork Ribs ($22++)

Next on my plate are some meaty bad boys. After being marinated in a tamarind/secret spice/BBQ sauce compote they get a royal 12 hour sous-vide treatment at 75 degrees to lock in the flavour. Then the magic happens:

They get an extra coating of the pineapple & honey infused BBQ sauce before being torched to perfection. (Hey, is that drool on your phone?)

They’re finished with a beautiful spattering of peanuts, Japanese rice seasoning, fried shallots, and red onion.

And here we have the five wickedly tender, well-sized pieces of juicy meat. The hint of fish in the Japanese rice flavoring is pleasantly balanced by the tangy sweetness of the sauce and the entire dish is elevated thanks to the combined texture of peanuts and shallots. Never thought I’d say it but this is a surprisingly complex rib!

I have to give a special shout-out as well to the Thai Tea-ramisu ($10++). The ladyfinger cookies are soaked in, you guessed it, Thai tea, and chilled together with a premium Thai-tea infused mascarpone for 24 hours. Overall it’s an incredibly palate-pleasing dessert that nails the right balance of creamy, fluffy, and refreshing. Don’t expect the sugar level of a typical Thai iced tea though, cause it’s a less prominent hint of sweetness and a surprisingly subtle flavour of tea that provides the perfect ending to the savory mains.

The Newbie’s Guide to Middle Eastern Cuisine

There are countless reasons why Middle Eastern cuisine should be your top choice for your next meal. Rich, aromatic, and delectable, you’ll fall hopelessly in love with the smorgasbord of flavours it boasts. Health-conscious individuals can also indulge without fear: most Middle Eastern fare is grilled, baked or stewed, and olive oil is usually used in place of fats like lard or butter.

As part of your induction to the sumptuous cuisine of the Middle East, below are some staple dishes you have to try, as well as five restaurants where you can satisfy the cravings that will be kicking in quite soon. By the time you finish this article we promise you’ll be dying for crispy falafel and some sweetly addictive baklava!

Hummus

A creamy dip made of chickpeas and assorted spices and herbs, this dish is ubiquitous across the Middle East. Enjoy it with some freshly baked pita, another popular staple, and you’re good to go. Be sure to check out its popular sibling, the moutabal, too, an equally scrumptious dip made from charbroiled aubergine and tahini.

A popular fast food in the Middle East, falafels are deep-fried balls or fritters of mashed chickpeas and herbs. Although they can be eaten on their own or as a mezze (a small dish), they are also often stuffed in pita bread with assorted veggies and drizzled with creamy yoghurt or sesame dressing to make a satisfying sandwich. We would recommend sharing a mezze platter with some friends, heaped with generous helpings of falafel, hummus and other Middle Eastern delights such as fattoush (a bread salad mixed with vegetables like radishes and tomatoes) and tabouleh (a salad comprised mainly of bulgar, onions, tomatoes, and a generous serving of chopped fresh mint and parsley).

What’s the difference between the kebab and the shawarma, you might ask? Other than differences in their provenance, a kebab is diced or minced meat grilled on a skewer and served directly onto a plate or in a pita, while shawarma is shaved meat that’s grilled using a rotating vertical spit and served in a wrap. For the more authentic version, go with lamb over the beef or chicken. There’s nothing quite like piping hot meat served right off the spit, and when it’s served alongside some cooling yogurt and cucumber dip you’ll have to hold yourself back from devouring the entire thing in three bites like we usually do!

Baklava

This sweet and buttery delight features layers of crusty filo pastry and chopped nuts snugly held together by syrup or honey. Dating back to the former Ottoman Empire, this beloved dessert has been around for centuries and for good reason. Try it with mint or apple tea for a sweet finale.

Kebabs are the highlight here, with variations like a Smoked Kasar Cheese with avocado mousse, pomegranate vinaigrette, candied almond & cashew, and the Duck and Pistachio Kofte with fig compote, duck jus, rocket, & lemon vinaigrette. Sound amazing? Well they taste even better, and are a filling size at $8 a piece. They also serve up a selection of flavourful salads, starters like the epic ‘Fat Prince Hummus’ made with chickpeas, duck fat, garlic and lemon, in addition to an innovative selection of cocktails infused with Turkish flavours and herbal syrups that compliment the meal perfectly.

Attractions – From Beaches to Buddhas and James Bond

The Big Buddha

Sitting boldly on the peak of Mount Nagakerd, The Big Buddha was only recently completed in 2015, but quickly became a must-visit attraction for locals and tourists alike. This 45 meter tall statue is nestled atop one of the highest points on the island, and is considered a religious site that boasts magnificent views of Chalong Bay, Phuket Town, and Kata Beach. The Big Buddha was constructed with reinforced concrete, then covered in 135 tons of Burmese white marble for a shimmering finish.

Take Note!
Opening hours are 08:00 – 19:30 (get there before 18:30 for the sunset), and it’s free to visit, though they encourage donations. Women must also wear pants or long skirts that go below the knee, and in general it’s best to be on the cautious side when it comes to dressing for a religious site like this.

Bangla Road

If you’re looking for a more debauched and wild experience, Bangla road offers up everything you can and probably can’t imagine. A typical unassuming street by day, Bangla shuts down to traffic at night and shows its true colors with 400 metres of bars, street entertainment, pulsing music, and ping pong shows (Google that at your own risk). Although it can be a bit overwhelming for some, the atmosphere is largely positive and vibrant, and you’ll be tempted to spend more than just one night taking in the sounds and sights of this sinfully fun stretch of culture.

Nai Harn Beach

One of the most pristine beaches you can find in Phuket, Nai Harm is an appealing alternative to a mainstream option like Patong Beach – which is more suitable for water sports and known for easy access to party areas. Nai Harn is comparatively quaint and a bit more difficult to get to, but like most worthy attractions, its relative inaccessibility remains the key to its beauty. Think warm clear water, airbrushed blue skies, and sand so soft you’ll never want to leave. I’s truly a contender for the best beach in Phuket; in addition to the lush and relatively untouched environment, it boasts easy access to restaurants, vendors, and souvenir shops housed nearby under large shady trees. Ah, paradise!

Wat Chalong

Wat Chalong (Chalong Temple) is one of the largest, most visited, and oldest temples in Phuket. Along with the exquisite architecture (the highlight being the gorgeous Grand Pagoda housing a small piece of bone from the ‘Lord Buddha’) the temple grounds themselves are downright stunning. It’s certainly not the quietest temple in Phuket, but undoubtedly one of the most significant: locals still come to pay their respects to its two founding monks who took care of villagers and helped make peace during a rebellion in the 1870s. This is a Buddhist temple, so be sure to dress appropriately!

Phang Nga Bay (James Bond Island)

You might have seen pictures of friends on holiday boating around the beautiful limestone formations at Phang Nga Bay, or perhaps just glimpsed the singular needle-like rock in the famous James Bond film The Man with the Golden Gun. This is a day trip (best utilized by booking a tour – you’ll probably have to travel by speedboat about an hour out from Phuket) that all visitors should add to the top of their lists. The bay is filled with dozens of breathtaking islands, lagoons, coral reefs, mangroves, wetlands, and caves to explore, which alone makes us want to buy our plane tickets to Phuket right now.

Elephant Trekking

Trekking around tropical jungles – boasting stunning views of both mountains and seascapes – atop these awesome animals is a once-in-a-lifetime experience. You’ll find that there are many options for elephant trekking in Phuket, but our Thai colleagues recommended Kok Chang Elephant Camp for the best value, views, and overall experience for visitors. Choose from different routes varying from 20 minutes to 1 hour, and rest assured the guides are expertly trained to handle the elephants (this particular camp has been running since 1993). The hours are 08:30 – 17:30 – be sure to book a tour in advance!

A Glass of Campfire With a Side of Leather: Tippling Club’s New Scent-Focused Drink Menu Is Daring and Delicious

I was a wee bit skeptical when first reading about the new ‘scent over spirit’ cocktail ‘programme’ from Tippling Club that features drinks like ‘Rain’ – it all sounded too gimmicky and post-modern for my taste. I was happily proven wrong however, as the attention to detail, passion, and quality of ingredients behind this endeavour make for an experience unlike anything else the city has to offer. Most importantly, these are some capital D-elicious cocktails created by a top-notch mixologist who truly loves his craft.

Head bartender Joe Schofield worked with IFF (International Flavors & Fragrances Inc.) and Chef-Owner Ryan Clift to craft the “Sensorium Menu”, a flavour-forward cocktail experience that emphasizes smell and memory over the actual alcohol. This was a months-long process, and the first of its kind in Singapore.

When you go for a drink or meal at Tippling Club you’ll be welcomed by an array of scent choices:

Each slip has been dipped into the fragrance and is inscribed with the drink ingredients; you choose cocktails based on the fragrances that attract you most. They are all priced the same at $22 to further encourage you to pick based on aroma, not pricing or spirit.

This is me rereading the Negroni slip for the fifth time to make sure I understood it correctly – yes, “soundwaves” make an appearance in this tipple. Here the team uses ultrasonic soundwaves to create a barrel-aged flavour with the fragrance more quickly.

Now that’s some mad(ly delicious) science.

Scientists estimate that 80% of the flavours we taste come from our sense of smell, so Joe wanted to ensure that the fragrances they crafted would stir deeply-rooted memories to make for a more complex and fulfilling drink experience.

While there are 12 selections, below are my four favourites:

1. Campfire (on left)
A soothing concoction of smoky campfire fragrance, marshmallow milk, burnt syrup, ash, and gin that took me straight back to starry nights spent under the stars, huddled by a crackling fire in the North American wilderness. Disclaimer: I’m not a gin fan and I don’t particularly like marshmallows, yet here I am waxing poetic about this drink. It’s just that good.

The homemade charred marshmallow provided a superb, melt-in-your-mouth sweetness without being too overpowering, and the smoky mix of flavours combined so well with the woodsy overtones of gin that I felt like I was tasting this memory. Mind BLOWN, again.

2. Rain
Joe’s personal favourite, the cocktail involves rain fragrance, stone, citrus, soda, and vodka – think the most layered and tasty vodka soda ever. The ‘stone’ is actually a crunchy edible clay garnish that sits atop the drink like a dark Singaporean storm cloud. As you sip and bite it becomes soft, creating a wondrous mix of earthy and citrus flavours. FYI Joe and Chef Ryan spend at least 10-15 hours a week JUST on cocktail garnishes like this edible stone. Now that’s dedication.

3. Leather
A smoky concoction that pairs whisky, Pedro Ximenez (sweet dessert sherry), and notes of orange and vanilla with a fragrance that legitimately smells like leather. Like, really nice leather that you’re tempted to take a bite of (anyone, ever? Just me? Okay). It’s luxurious and down-to-earth all at once, and smooth enough to accentuate the best flavour components of whisky. I imagine a range of leather-tinged memories that this one could stir up, but let’s just focus on those indulgent moments of extravagance and material newness that we too seldom get to enjoy.

4. Grass
It’s telling that I enjoyed most the cocktails that involved my least favourite alcohols – tequila is by far at the bottom of my list, and if I were to choose based on spirit I never would have picked this one. Grass manages to combine a grassy fragrance, dill, anise, citrus, and tequila in one of the most refreshing and innovative glasses of alcohol I’ve had this year. Picture a warm sunny day lounging on a hill, you sipping on an ice cold lemonade while running your hand through the freshly mowed grass – that’s what this tastes like.

Joe was genuinely excited to share his thought process behind the creation of this menu, and it was downright infectious. After hearing him talk for a few minutes it was clear – this fabulously talented team does not rely on gimmicks to push the boundaries of F&B. I’m still holding on to the scent slips, by the way. The tasting is now embedded as a fresh, warm memory that lingers in the back of my mind intertwined with smells of cool rain, campfire, and grassy hills. My notebook actually still smells like campfire though.

7 of the Most Innovative Coffee Cocktails in Asia

These are not your typical espresso martinis, folks.

Inspired by a recent visit to my Chope Shanghai compatriots that involved several coffee-based alcoholic beverages, as well as my general predisposition for all things coffee and alcohol, I decided to take it upon myself to find the most innovative caffeinated cocktails across Asia.

While a shot of whisky in your afternoon long black is a quick ‘n dirty instant fix (not that I’ve ever done that)
, I suggest you instead visit any of these renowned spots to experience a creative coffee cocktail mixed to perfection – at a more socially acceptable hour of course.

The Liberties: Coconut Cold Brew & Irish Whiskey at Jigger and Pony, Singapore

Let’s start right in our own backyard – we all know that the team at Jigger and Pony crafts a killer cocktail, but The Liberties truly exceeded my high expectations. As you take the first sip an arresting aroma of roasted chocolate makes it difficult not to dive right into the mix of Teeling small batch Irish whisky, coconut cold brew coffee, pandan bitters, and the source of the heavenly smell: a garnish of roasted chocolate nibs. The taste is impeccably smooth with only the faintest hint of coconut complementing the full-bodied flavour combo of Irish whisky and cold brew. It’s like the rich, sophisticated aunt of a Black Russian who you’ll want to visit again and again.

Californication – coffee infused beer at Ocean Grounds, Shanghai

What do you get when you cross one of the best craft beer breweries in China with one of the most innovative coffee bars in Asia? Cue up Californication, a combination of Boxing Cat Brewery amber ale that’s brewed with Ocean Grounds’ Santa Leticia Bourbon Especial cold drip coffee. The 14-hour brewed cold drip has hints of palm sugar, tootsie roll, and nougat, thus the the resulting beer that’s been brewed WITH the coffee is crisp with notes of caramel  – a heady experience that warrants several rounds. What surprises me most is that coffee beers tend to be in the stout or porter families, but this light and refreshing amber ale brew pushes boundaries in new and delicious directions.

Golden Eclipse – hot espresso Nutella milk with rum at Olfactory Bulb Cafe, Petaling Jaya (Kuala Lumpur)

Olfactory Bulb Cafe specialises in coffee, tea, and chocolate-based cocktails (when can I move in?), so choosing just one from their extensive menu proved a bit challenging. One look at “Nutella milk” however, and I was sold. The Golden Eclipse contains Mount Gay Barbados Rum, Frangelico, chocolate bitters, espresso, and house-made Nutella milk. It’s a nutty, sweet, hazelnut-mocha-like reason to drink alcohol that warms like a nice cuppa hot cocoa, with a grown-up twist.

Reviver – jalapeno and coffee bean infused apple brandy at Manhattan, Singapore

Forget an alarm clock, take a swig of the Reviver at Manhattan (which was recently named Asia’s best bar and 11th best in the WORLD) and you’ll be feeling all kinds of alive. Daron calvados (apple brandy), Carpano Antica Formula vermouth, Ferrand Dry orange curaçao, sugar, bitters, cloves, jalapeno, and coffee beans are all soaked together overnight to make this complex drink. Spicy, bold, and strong, this is a cocktail fit for one of the top bars on the planet.

Costadoro Martini, an updated espresso martini at The Artisan Room, Hong Kong

It’s no secret that I’m a sucker for a good espresso martini, but The Artisan Room’s updated version on the classic reinvents the wheel in all the right ways without straying too far from a formula proven to work. They specialise in coffee and tea cocktails, so rest assured there is skill, passion, and experience behind this badass tipple. Instead of coffee liqueur, vodka, and espresso (a typical espresso martini), the Costadoro Martini is created with dark rum, Costadoro espresso, Bailey’s, coconut milk, and Okinawa black sugar. The heavier coconut milk and dark sugar result in an exceptionally smooth martini laced with hints of hazelnut and toasted bread from the the Italian coffee exclusive to Artisan Room. Pair that with an al fresco garden area and I think that’s the sound of me packing my bags for Hong Kong.

Coffee Negroni at Q&A Bar, Bangkok

This hip Bangkok speakeasy is so secret that there isn’t even a photo of the elusive coffee cocktail – but something as delicious and unique as a coffee negroni deserves a spot on the list. Hidden behind a nondescript green door in Asok, Q&A has become somewhat of a cult hit for cocktail lovers in Bangkok. With equal parts gin, vermouth, and campari, this negroni mixture brews for six hours with Ethiopian coffee beans resulting in a sultry combination of flavours that fit perfectly with the intimate interior of the bar. The depth and nuttiness of the coffee mellows out some of the bitterness you’d expect from a negroni, which basically means it’s the negroni I’ve always wanted. Ask about their cold brew version as well!

Prohibition – Cutty Sark & cold brew at Gibson, Singapore

One of the fruitier options on the list, Gibson goes for a refined simplicity with Prohibition. They mix Cutty Sark Prohibition whisky, grapefruit & orange campari, and Antica Formula (sweet vermouth), with cold brew ice cubes, then garnish with grapefruit zest and gold leaf – ‘cause Gibson is that badass. Think a more robust Manhattan that becomes increasingly smooth as the cold brew ice gradually melts and infuses the drink with the dark and chocolatey notes of the coffee.

This new concept by Ninja Bowl recently opened its doors, but don’t mistake the ‘younger sibling’ as being any less awesome. Here you can find a new menu with several slightly more indulgent versions of Ninja Bowl options. Some of our personal favourites are the showstopping Truffle Polenta Mash ($18), a refreshing salmon & avocado based ‘Wakiki Surf’ bowl (pictured above, $16), and the Marvellous Matcha hotcake ($16). Savoury all-day brunch (24-hour braised Japanese curry beef cheek ON TOP of a grilled cheese sandwich?! Yes, please!), some healthier (but equally tasty) bowl options, and a surprisingly outstanding coffee and drink selection makes this an absolute must-try.

Ash & Char 

From the team behind Rise & Grind Coffee Co (the fab Bukit Timah brunch spot) comes Ash & Char: a laidback joint that delivers a more refined menu for lunch and dinner at Telok Ayer. Expect substantial mains in the form of pastas, burgers, and bowls, while still casual and under $20, along with all the coffee and dessert options you’d crave at a great café. One of the most popular dishes is the Tomyum Seafood Pasta ($17++), a staple at Rise & Grind that they were smart enough to bring over in all its original glory. Other standouts include the Truffled Bacon & Mushroom Carbonara ($15++) and Korean Chicken Burger ($15++).

The world’s first and only Michelin-starred ramen joint from Tokyo is FINALLY opening in Singapore on the 6th of November. We were lucky enough to score an exclusive pre-opening tasting with the staff, and let’s just say this ramen is the stuff of legends: Shoyu Soba with truffle sauce and the Ajitama Char Siu Shoyu Soba don’t just live up to the hype, they surpass all expectations of how truly outstanding ramen should taste. Also, you had best prepare yourself for the most perfectly cooked eggs you will ever sink your teeth (and chopsticks) into.

FOC Sentosa 

This is is the closest you’ll get to Barcelona without hopping on a plane. Think superb tapas backed by a seriously talented (and award-winning) kitchen combined with a top-notch bar menu, served at a ridiculously beautiful and relaxing beachside spot. FOC’s Hong Kong Street location is already well-known for its impeccable menu, and you can expect a similar focus on Mediterranean fare at Sentosa: heavy on grilled fish & meats, paellas, and of course tapas. Lounge in the hammocks or dine by the pool deck, just be sure to try the Beetroot Gazpacho w/ Olive Oil Ice Cream ($12++), and the Iberian Pork Paella ($18++), all with a refreshingly smooth Matcha Colada ($16++) in hand of course.

Kin Cow

Now is the perfect time to experience Kin Cow’s traditional kuay teow neua (Thai beef noodles) as the team has already worked out all the opening kinks. This Thailand export boasts 11 outlets back home, and the newly opened S’pore location delivers the quality and authenticity you’d expect from a family owned operation. Bowls range from the simpler Brisket ($10.90) to the fancier Wagyu ($22.90) with options in between, solid side dishes, and delectable Thai desserts like the creamy Coconut Ice Cream. The portions aren’t exactly gigantic, but you’ll get really high quality ingredients with this one, as well as a flavour experience that most cheaper options simply can’t match.

Little Bastard 

Hidden within the already quite hidden Refinery along King George’s Ave, Little Bastard bills itself as ‘not your average illegitimate child’, as it offers up a myriad of Asian explorations with a focus on Thai and Chinese influences. Expect modern fusion in the form of Cold Tom Yum Udon ($20++), Sichuan Beef Tartare w/ Century Egg ($20++), Sous Vide Lemon Barley Gin ($18++), and other impressively inspired concoctions. One of the more curiosity-piquing options recently opened, you’d be remiss not to give this one a taste.

PIM PAM by FOC

The team at FOC have clearly been busy, with their new concept PIM PAM opening just days ago along Orchard Road near Tanglin. You can swing by from breakfast to tippling time, as this ‘gastro-bodega inspired by the Barcelona tapas and wine culture’ offers all-day dining options in addition to a retail corner where you can grab a variety of bites to go. Some of our favourite plates are the Spinach & Pine Nut Croquetas, PIM PAM Migas, and the Straciatella Salad.

Man Man Japanese Unagi Restaurant 

Teppei Yamashita has had incredible success with his series of Japanese concepts, the most popular being Teppei Japanese Restaurant, where an Omakase dinner requires a reservation more than three months(!) in advance. Next up? Man Man Unagi, a grilled eel concept on Keong Saik. Just check out the reviews and it’s quite clear: insane kitchen expertise, huge queues, and lots of ‘the best eel I’ve had outside of Japan’ types of comments. The pricing is fantastic for the quality and portions, as you can expect to spend under $30 a person and leave with a belly full of eel that could not be fresher – it’s flown in from Aichi prefecture, plucked from a tank, then sliced and cooked in a glass front kitchen for patrons to watch live.

Behind The Scenes at LongPlay – Making Ceviche & Argentinian Cocktails

Tucked away amidst the hipster haunts of Haji Lane is vinyl record bar meets South American small plates concept LongPlay. Perhaps better known for its cocktails – and we’ll get to those – we heard that head Chef Jorge also whips up a mean ceviche, Peruvian style. He invited us in for a look at how he takes it from fresh fish to plating, so come on in!

Chef Jorge’s Red Snapper Ceviche ($18++)

It all starts with Malaysian red snapper delivered fresh daily – see that poor fella being sliced open on the right? If only he knew he was destined for greatness.

Jorge first adds ice cubes to the filets to keep them cool and fresh, then dabs in yellow chili paste from Peru along with house-made chili padi sauce, salt, and red onion.

The most prominent flavour combo (and key ingredient according to Jorge) comes in the form of house-made Tiger’s Milk: a combination of lime juice, fish trimmings, celery, ginger, garlic, onion, & coriander stem. He then adds a dash of evaporated milk before mixing, and finishes with fresh coriander for a final toss.

Jorge elevates this dish by adding a perfect dollop of sweet potato puree, which he then garnishes with purple sweet potato crisps.

The result? An incredibly fresh and flavourful ceviche that is perfectly mellowed by the addition of the sweet potato. As we took the first few bites, Chef Jorge couldn’t help but add that ‘it’s the perfect time and temperature for ceviche – hot and midday, served just like we would have it in Lima.’ The tart milkiness and cold fresh snapper set off by a light kick of spice was indeed a perfect afternoon pick me up.

Hailing from Latin America, Jorge has transformed the LongPlay menu into something more reflective of his background, though he’s quick to point out that the flavour profiles of South American cuisine have a lot in common with local fare: both involve ‘spicy, sour, and strong flavours’, which means he’s a sucker for prata, laksa, and BBQ stingray. A man after our hearts, indeed.

Head Bartender Kannan’s El Rey Maradona ($18++)

On the beverage side of things, head bartender Kannan recently revamped the drink menu to pair with the South American bites. The cocktails are split into four countries (Peru, Brazil, Venezuela, and Argentina) and celebrate the regional flavours of each. Kannan is a huge Argentine football fan, so he was quick to point us in the direction of those tipples. He is especially enamoured with the legendary Argentine footballer Maradona, so we took a closer look at how he mixes the
El Rey Maradona (The King Maradona), a celebration of Argentinian culture, flavours, and a different kind of royalty.

The key flavour is Fernet Branca, a popular digestif made from 27 herbs that people in Argentina typically drink with Coke. Kannan admits ‘It’s kind of weird the first time you drink it.’ He’s right: Fernet Branca is an herbal-cough-syrupy bitter tasting liqueur, and if you ask around you’ll find that it’s an intensely polarizing beverage.  Let’s see how it turns out…

Combined with the sweet nuttiness of the Maraschino liqueur, the complexity of the vermouth, and the sour lemon, the Fernet Branca adds just the right amount of biting coolness perfect for a hot Singapore afternoon. Kannan says that people tend to try it based on the name, and it has quickly become one of their best-selling drinks (pro-tip: it pairs well with the ceviche).
