Fresh Eats: 9 Restaurants You Don’t Want to Miss in April!

Chope’s taking you on a culinary adventure this April with amazing restaurants from Hokkaido to LA – perk up your palate with nine new dining spots for you to check out this month!

Firebake-Woodfire-Oven-(1)Firebake-Cured-Norwegian-Salmon

Firebake

A well-baked loaf of bread is just as crucial to a good sandwich as an al-dente plate of pasta is to a good carbonara – it’s an art form to be cultivated, and Firebake aims to do just that in sunny Singapore. Tear into freshly baked artisanal loaves baked to perfection in their wood fire oven and tuck into other European classics while you’re at it – like their Cured Norwegian Salmon ($25++)! It’s cured in-house, is incredibly moist and tender, and exhibits none of the dry flakiness that’s frequently associated with a salmon dish. Have a sweet tooth? Their Bread & Butter pudding is bound to satisfy and is made with that same amazing bread!

Find it at 237 East Coast Road, 428930

Don Ho

Want to feel like you’re sharing dinner with a group of friends on vacation even if you’re just getting together after a long day at work? Don Ho’s definitely the place to be – it’s perfect for group settings and beautifully furnished to boot: a step into the hidden restaurant on Keong Saik Road (the entrance faces the alley) instantly transports you to a lush tropical paradise. Chow down on bar food with an Asian twist by giving their kimchi-topped Pork Cheeks Char Siu Sliders ($20+) a go, or order an entire Crispy Whole Suckling Pig ($230) on a spit to get the party started!

Find it at 1 Keong Saik Road, Singapore 089109

Choose from a wide assortment of gin labels from around the globe (or more champagne, if you’d like) and pair it with decadent desserts, an assortment of hors d’oeuvres, or a hearty meal like their Gindara Black Cod with red grapes, glazed chervil roots & cauliflower ($34) instead!

Dooki Ramen Dooki 1

Dookki

Dookki means ‘two meals’ in Korean, and this popular establishment promises to provide just that! Here’s a quick breakdown: the first meal consists of everyone’s favourite Tteokbokki, or stir fried rice cakes (they offer EIGHT types, all air flown from Korea), cooked to your preferred level of spiciness. Add rice, kimchi, and a couple of your favourite mix-ins (like sweet corn, yum) into your Tteokbokki pot and you get a second meal – Kimchi fried rice! You can also splurge on a Double Cheese Ring ($9.80++) for the ultimate cheesy indulgence. The best part? This will only set you back $18.80, and comes with free flow soft drinks!

Find it at 3 Temasek Boulevard #B1-107 (East Wing), 038984

Tengawa

Tengawa Hokkaido White Curry

This Japanese restaurant takes you to another part of Japan – all the way from the north this time! Tengawa Hokkaido White Curry comes from (you guessed it) Hokkaido, and is the first of its kind in Singapore. The curry is reminiscent of the Cremesuppe (cream soups) you’d get in Europe, but one taste reveals its true provenance: it exhibits a kick that is omnipresent  in  Japanese curry. Try the curry with their juicy Iberico Pork patty ($15.80) for a deliciously creamy, yet crunchy, explosion of textures and flavours all in one bite!

Find it at Millenia Walk, #02-16, 9 Raffles Blvd, Singapore 039596

25 Degrees-Burgers

Their Number One burger ($14) is made out of 200g USA Angus beef, caramelized onions, aromatic and creamy prelibato gorgonzola and crescenza (stracchino) cheese, smoky bacon, arugula, and thousand island sauce. If there’s one thing Singaporeans will never tire of, it’s Japanese food! Happily, new Japanese restaurants are popping up every year to satiate our enormous appetites, but our favourite Japanese culinary exports (like fresh slabs of sashimi) can also be one of its most expensive, and if you’re not careful, that delicious sushi dinner can easily set you back hundreds of dollars.

Teppei Japanese Restaurant

You’ve probably seen a couple of Teppei Syokudo stalls all around Singapore serving up bowls of Kaisen-Don tossed in their signature specialty Bara Chirashi sauce (Teppei-san has it specially manufactured in Japan), but the original restaurant at Tanjong Pagar is where the party’s at! An assortment of generously cubed fresh Salmon, Tuna, Cuttlefish, Scallop and Swordfish sashimi pieces lies atop a bowl of warm, fluffy Japanese rice, topped with seaweed flakes, spring onions, sprouts and a sprinkling of Ikura ($17.60). The Bara Chirashi sauce is reminiscent of Japanese Soy Sauce, but with a touch more umami flavour. Oishi!

(Tip: they have different Higawari (daily specials) lunch bowls every day, so check out their Facebook page for what they have on offer before you go!)

Dishes We Love: Kaisen Don, Negitoro Kaisen Don, Japan Gyudon, Steamed Unagi Don, Sukiyaki Don

Standing Sushi Bar

Despite its name, Standing Sushi Bar doesn’t actually require its customers to stand and consume their sushi. Just as well, for it’s going to take us a while to take full advantage of the restaurant’s generous promotions. On Mondays and Thursdays, gorge yourself on tender Salmon Sashimi with Standing Sushi Bar’s promise of 5 slices for a mere $3. Then come back on Try Us Tuesdays and eat your way through the restaurant’s nigiri sushi selection, including classics like Mackerel, Yellowtail, Salmon, Ebi, and Tuna for half-price. It’s probably a good thing they don’t offer these promos every day of the week because we’d never leave!

Sushiro is situated at Thompson Plaza and serves up amazing bowls of Bara Chirashi don as well, and among one of the cheapest at only $12.90! Their generous bowls contain large cubes of sashimi – namely Salmon, Tuna, Octopus, Scallop and Prawn, along with a sprinkling of Ikura for a burst of umami flavour. The sashimi is covered with a slightly sweet and sticky sesame sauce, definitely your cup of tea if you’re into sweet-savoury foods. There’s usually a queue outside before the tiny store even opens, so go early or be prepared to wait in line!

We’re obsessed with their Chirashi Don ($19.90) and their phenomenal Soft Shell Crab Salmon Aburi Roll ($17.90) – truly the stuff of dreams! Mitsuba Japanese Restaurant

Did someone say buffet? Mitsuba Japanese Restaurant offers an all-you-can-eat sushi and sashimi buffet from its a la carte menu for less than $40, with a 25% discount for groups of four adults. We threw restraint out the window and immediately indulged in delicious Sashimi Moriawase ($30): two of each of the six types of sashimi, Negi Toro (Tuna belly) Handroll ($10), and Tobikko Sushi ($4). For the less voracious, choose a set meal like the Unagi Kagayaki ($28): grilled, soft freshwater eel accompanied by a bowl of rice, an appetizer, fruit and miso soup.

Shinagawan ramen

Shinagawa Ramen & Izakaya

Tucked away in Anson Road, Shinagawa Ramen & Izakaya offers simple, unpretentious and (most importantly) delicious Japanese fare. We loved the Salmon Mentai’s tender slices of salmon sashimi topped with salted cod roe ($5.00), and the restaurant’s Chirashi Don: generous slices of mouthwatering sashimi atop a bed of perfectly prepared sushi rice. To sweeten the deal, visit the restaurant during weekdays for its promotional specials, which include a main course, a side dish and dessert for under $20. With value like that, how can we decline?

otaru suisan

Otaru Suisan

With its widely diverse menu we guarantee you’ll be spoilt for choice in Otaru Suisan. Start with classic appetizers like a refreshing Takoru ($6.80): cool, chewy slices of fresh octopus with cucumber and seaweed in a sweet vinegar sauce, or order the Pan Fried Chicken Gyoza ($7.00) and crunch into juicy chicken tucked in a crispy dumpling skin. Sushi lovers can also sample from the restaurant’s numerous sushi dishes, but if you’re having trouble choosing (truly, we sympathise), order the Nigiri Ume, which promises nine different nigiri for less than $20. We were also fans of the Barachirashi Don, which pleases both the stomach (thanks to hearty pieces of assorted sashimi on a heaping bowl of rice, accompanied by a steaming bowl of miso soup) and the bank account for under $25.

Dishes We Love: Takoru, Pan Fried Chicken Gyoza, Maguro Tataki, Baked Seafood with Cheese and Mentaiko, Nigiri Ume, Barachirashi Don, Sanshoku Don

Sink your teeth into a crunchy Spider Roll ($19.90) – fret not, it’s not actually made of spiders, but heavenly deep fried soft shell crab – or order a melt-in-your-mouth Kagoshima Wagyu Beef Sushi ($7.90). For heartier fare, go for the Hokkaido Salmon Roe Sushi Rice Bowl. With its abundance of soft, piquant, salmon roe on rice for less than $25 it’s a bargain you can’t beat with a stick.

Must-Eats This Week: Sakura Ebi Truffle Pasta and Torched Sushi at IKYU

The new year has added some new bites to my tempting food radar, with this week’s edition finding me in the heart of Tiong Bahru for some seafood delights at the Japanese gastronomy IKYU. The star here is fresh fish, which is in top form when served as the ‘5 Kinds of Aburi Nigiri’: five tender pieces of torched delights served up at the counter for prime viewing (just wait until you see Chef Alex’s pyrotechnic skills). I also went into the kitchen to see how Chef Woei prepares the fan-favourite Sakura Ebi Truffle Angel Hair Pasta, an explosion of fusion flavours that I never knew I wanted…until now!

5 kinds of Aburi Nigiri (semi-torched sushi, $35++)

A simple solution for those undecided diners out there, opt for IKYU’s 5 kinds of nigiri best when enjoyed ‘aburi’ style, torched. The selection depends on what the Japanese imports of the week are, so just take a peek at the fresh cuts of fish on display and chat up Chef Alex or Chef Loong for recommendations on what to pick. Here are the five that I was lucky enough to sample, with some exquisite preparation to boot:

ikyu-sushi-1
Chef Loong packs a pinch of wasabi between the rice and fish – here we have sweet shrimp topped with sea urchin.

ikyu-sushi-2
Look at that technique! He uses the same wasabi-rice packing expertise to prepare some gorgeous semi-fatty tuna and kampachi belly.

ikyu-sushi-3
Torchin’ like a boss. The five pieces get the finishing semi-torch treatment after a brush of soy sauce.

ikyu-sushi-4
After the final garnishes, it’s time to dig in. This anago (sea eel) dressed with sweet sauce and bonito flakes legitimately melted in my mouth. Unreal.

There’s something magical in the unabashed simplicity here. As Chef Alex emphasizes, the most important aspect by far is the freshness and quality of the fish, which affect the charring, flavour, and ‘everything’ about the dining experience. The sushi speaks for itself, with hints of wasabi and soy the ideal simple complements that fish of such high quality deserve. Feel free to add on a piece of pickled ginger, or more wasabi, but I suggest you do nothing but place these little bundles of perfection directly into your mouth.

Though the sea eel was by far the most delicious of the bunch for me, the other four held their own, especially considering that the char adds a scrumptious glaze and warmth to the cooling, tender cuts of fish. The Kinmedai (red snapper) dressed with yuzu kosho (chili pepper with yuzu peel) was a particular standout, the combination of flavours an absolute culinary delight. Pro-tip: if you can, dine on Tuesday or Friday, the two days a week when they receive their fresh shipments from Japan!

Sakura Ebi Truffle Angel Hair Pasta ($28.50++)

2015-04-24apr-ikyu2973-edited

Next up is a staple on the IKYU menu, and a favourite of repeat diners. The Sakura Ebi (dried prawn) Truffle Angel Hair Pasta is probably unlike anything you’ve had before: a fusion cold pasta dish that marries traditional Asian flavours with truffle and a touch of magic. Watch as Chef Woei takes me into the kitchen for the quick cooking process!

ikyu-pasta-1
Chef cooks the angel hair pasta to a perfect al dente in less than 5 minutes, gives it a cold ice bath, and then adds spring onion, sakura ebi (dried prawn), salted seaweed, and a savoury truffle oil & soy sauce mixture.

ikyu-pasta-2
With a mix, twirl, and sprig of fresh lettuce the pasta is ready for plating.

ikyu-pasta-3
Chef garnishes the dish with salmon roe and edible flowers before I enjoy my first experience eating Italian pasta with chopsticks.

It’s the perfect portion for one, or for sharing when nibbling on plates of sushi. The cold and fragrant dish is a pleasurable play of flavours on the palate: with bites of crunchy prawn and seaweed in between the chewy roe, it’s at once distinctly Japanese and yet subtly Italian due to the marriage of truffle oil and angel hair pasta.

Chef was inspired by the classic Wanton Mee, which he says shares a very similar cooking process. When I asked him why he chose Italian pasta over an Asian-style noodle (did anyone else assume it would be soba?), he explained that the textures would not have worked, which he confirmed through the creation process when experimenting with different noodle bases. The key he says is that the pasta is ‘80% done’, which in my humble opinion adds to the irresistible spectrum of textures in this complex dish. This is one quirky, savoury, and delicious plate of pasta we have here folks, and you can bet I slurped down every last bit!

fish-display

Tucked among the hip cafés of Tiong Bahru, with dimly lit industrial interiors (that added just the right amount of drama to my sushi filming!), IKYU is ideal for a refined lunch or intimate dinner. The team here knows what it means to do simple but high-quality Japanese cuisine well, with the occasional flare of delectable innovation that balances classic flavours with tasty creativity.
