7 Must-Try Tapas Bars in Hong Kong

Along with the bottles of wine imported to Hong Kong, Spanish specialties such as jamon Iberico and paella are quickly gaining a mass following. But what’s better than the traditional paella? Tapas.

Tapas are a traditional Spanish dining concept, and have roots tracing back to the early thirteenth – fourteenth century. The most popular legend involves the late King Alfonso X of Castille. After recovering from an illness where he could only eat small portions of food and wine, the King mandated for all inns across Spain to always serve a small snack, paired with wine. This storied history has made tapas infamous, particularly in Asia. A dozen or so new tapas bars have quickly cropped up across Hong Kong, and here are some to look out for next time you’re craving some Spanish cuisine.

Fofo by el Willy

Fofo by El Willy has been the talk of the town ever since it opened in 2010. Wondering who this El Willy character is? Fofo is the second restaurant by Willy Trullas Moreno (aka ‘el Willy’), an infamous chef hailing from Barcelona. Sadly, Willy no longer helms his Hong Kong jaunt, but another Barcelonian chef by the name of Alex Fargas takes pride in producing Chef Willy’s contemporary Spanish tapas.

Our favourites on their tapas menu include the ‘Atun’ Marinated Tuna, Smoked Sardine, Salmorejo Tomato Salad and the Explosive Smoked Salmon Air Bag (buckle up for a flavour blast!). The latter is a delicious ‘melt-in-your mouth’ combo that provides incredible flavour as the pastry, topped with a chunk of salmon, bursts in the mouth.

Supergiant Tapas & Cocktail Bar

Sure, Supergiant doesn’t sound Spanish at all. In fact, it kind of sounds like a grocery store. But its moniker doesn’t forebode inauthentic Spanish eats. Quite the opposite! Nestled in the third floor of a stunningly beautiful boutique hotel, Supergiant Tapas is led by famed Chef Guillermo Delvault, hailing from Argentina. Trained in Barcelona, Delvault has designed a wonderfully Spanish-influenced menu, but with a Chinese twist.

Favourites on their menu include Saturn’s Rings (crunchy, succulent strips of calamari dipped in flour, and fried to golden perfection) and Grilled Chorizo Oreado Sausage – two traditional fresh chorizo sausages, infused with paprika, served with a crusty baguette. End the meal with Supergiant’s infamous Traditional Churro, paired with a sumptuous, rich chocolatey dip and vanilla ice cream. Talk about Supergiant taste!

Located on the other side of Ship Street past a bunch of other buzzy restaurants such as Akrame and 22 Ships, Timon Seafood Tapas is an excellent place for fans of traditional tapas paired with house wines. Our favourites at Timon include the Salted Anchovy with Quince Jam on Toast and the Octopus with Sweet Potato Foam & Paprika. The former is a piece of salted fish goodness, whilst the latter couples the spicy kick of paprika with the tanginess of Octopus.

Who could forget the delicious bites found at Spanish mainstay, Catalunya? One of Hong Kong’s most talked about restaurants ever since its opening, Catalunya has not seen its popularity abade. No, not all. In fact, the Tapas Lunch menu has grown incredibly popular amongst the lunch crowd; priced at a reasonable $188 and $200, for two and three tapas respectively, it’s hard to beat! On the Hot Menu, make sure to choose the Hokkaido Scallops with Coconut – coconut-celery vichyssoise mixed with curry oil sliced almond and perfectly cooked with Hokkaido scallops. It’s an irresistible combination of flavours! On the Cold Tapas Menu, make sure to try out the Tuna Tataki, which features pieces of succulent, just-caught Atlantic tuna paired with salpicon and raspberries. The other ‘can’t miss’ menu item is the Cod Fish “Esqueixada” – featuring flaky pieces of just-cooked fish, onions, olive oil and hard-boiled eggs.

An up-and-coming tapas bar located in hip Sai Ying Pun, Chico Chica is one of our favourite places to try out tapas outside the Iberian coast. Crowd pleasers include Tomato Tempura – cherry tomato paired with wasabi and mozzarella, and Pluma Hamburger – a juicy hamburger patty with Hoisin sauce on the side. Sure, the tapas are on the simple side, but we love their simple, fresh creations.

The Summerhouse

Be prepared to have your mind blown when you set your sights upon the grandeur of the architecture on which the Summerhouse resides. Housed in a pristine, ivory heritage conservation bungalow built in the 1930s, it is located in Seletar which offers diners a relaxing respite from the city. The kitchen is helmed by chef de cuisine, Florian Ridder, who has garnered experiences from numerous Michelin-starred restaurants such as Piment, La Belle Epoque and Alma by Juan Almador.

On the restaurant’s second floor, Ridder has adopted a farm-to-table concept, providing a Collective Farming Menu ($90++ per pax for a 10-course meal) where guests can enjoy the best of local ingredients with in-house harvests from the restaurant’s Edible Garden. A crowd favourite is Panzanella, an eggplant ‘caviar’ served in tomato broth and drizzled with coriander oil. We are extremely taken by his Kelong Rojak as well, where Ridder adds finely-chopped rojak flower and burnt lemon zest onto fresh prawns caught from local kelongs and serves them with dollops of Thai basil puree. Enjoying these unique creations in a tranquil and relaxing setting is definitely worth going the extra mile for in our book!

We can’t get enough of their grass-fed grilled Lamb Shoulder that’s cooked tender with only a mild hint of butter to complement its original flavours. Giving the traditional burger a little posh upgrade is the Truffled Shrooms Burger where Wicked Grill serves a grilled patty with a slice of cheese and piles it with truffled mushrooms for that extra touch of umami.

Nothing says classic Red, White, and Blue like a good ol’ plate of fried chicken, mac & cheese, and pancakes. Located in a quaint corner in the hip River Valley Road enclave sits One Night Only, an intimate and charming eatery, complete with diner booths and warm mood lighting, that serves simple and unpretentious American fare.

We love how the ambience of the diner made us feel at home, and the food even more so! Tuck into the Buttermilk Fried Chicken for the ultimate Americana experience – the chicken is marinated in buttermilk and then fried to a crispy perfection on the outside while maintaining all its juicy goodness within. For something with a little more kick, the Nashville Hot Chicken would be your best bet for a fiery affair, and don’t forget to order that side of Mac & Cheese (trust us, you won’t regret it)! We’d recommend taking it up a notch and getting their Chicken-Fried Steak. Here’s a hint: it’s not chicken.

As for drinks, nothing goes better with fried chicken than a tall frosty milkshake. One Night Only does a solid range of shakes, including special concoctions like the Brooklyn Egg Cream, and diners can opt to have it malted. You can bet that these are enough to bring all the boys to the yard!

Acqua e Farina

This little 60-seater neighbourhood ristorante at Upper Bukit Timah dishes out authentic Northern and Southern Italian fare that makes it perfect for intimate get-togethers and family dinners.

With a name that means “water and flour” in Italian, it comes as no surprise that the made-from-scratch pizzas and hand-rolled, egg-based pastas are specialties at Acqua e Farina. We were told that Chef Antonio Manetta handmakes and kneads the dough for his pizzas, allowing it to rise for at least 30 hours before using them for the Neapolitan-style red and white base pizzas (a dedication like that can only produce the best dough, we believe!).

Acqua e Farina’s signature pizza, the aptly named Pizza Acqua E Farina, is a crowd-pleaser and we can see why: the oven-fresh dough is topped with the classic Italian combination of spicy salami, tomatoes, mozzarella, ricotta and sautéed spinach. You wouldn’t want to miss Chef Antonio’s Risotto alla Zafferano e Salsiccia, a radiant dish that embodies simplicity at its finest. We are in love with how the smooth and creamy risotto takes on a sunflower-yellow vibrancy and hints of earthy flavours from the saffron, while chunks of fennel sausages add texture and depth to the rice.

It’s not too late to hop onto the whisky bandwagon: The Wall Singapore is the latest addition to Singapore’s bar scene and they’re here to help de-mystify the art of whisky drinking on a friendlier and more accessible platform. Named for the 100-year-old shophouse walls that house this laid-back establishment, The Wall is a Whisky & Sumiyaki Bar that offers an exquisitely curated list of whiskies and a full dining menu. Some 20 top-quality whiskies by the glass are available at an extremely friendly price starting from $14 per glass.

Unlike other whisky bars that focus almost entirely on the drinks, The Wall takes a different approach by offering whisky and sumiyaki pairing sets from $49, and a Chef’s omakase with whisky at $168 to ease guests into the art of whisky appreciation. For whisky novices, this is definitely a welcoming ‘spirit-ual’ experience!

There was also a whisky tasting chart, indicating the characteristics of whiskies, which helped us in selecting whiskies with the type of flavour profiles that will suit our palates. Those who prefer to savour whiskies with a twist are in for a treat: The Wall plays with whisky’s versatility and presents it through the lineup of whisky-forward cocktails. We were spoilt for choice with a range of classic and bespoke cocktails created by The Wall’s bar manager with our preferences in mind.

Affordable whiskies and quality food? We’ll drink to that!

Platform 1094

Wands at the ready! There’s finally a place to geek out for hours on end at the newly opened Platform 1094. Already making waves in the region within the first month of their opening, there’s just something magical about Platform 1094 that people can’t seem to get enough of.

When you first step into this wizardry-themed café, the warm brick walls and inviting wood-panelled ceilings and furniture beckon you into an ambience that is both soothing and welcoming at the same time. Fancy throwing in a little cosplay to heighten the experience? Go all out and don yourselves in wands and witch’s hats that are provided by the café – and did we mentioned that it’s free of charge? Plus points for that!

From their ‘Magically Delicious’ menu, we highly recommend the Pesto Mayo Pork Ribs, where the slab of ribs is first poached to tender perfection in buttercream then served drizzled with creamy pesto mayo and the butter-cream brown sauce that the pork was cooked in. For something a little healthier, their Grilled Chicken Quinoa Salad and Beetroot & Carrot Soup are two must-haves. The desserts at Platform 1094 are also a sight to behold: the intricate Bloodberry comprises two chocolate shells filled with Hoegaarden Rosée and yogurt parfait. On the other hand, the majestic Black Magic looks like something from right out of the Forbidden Forest, with an assortment of black sesame panna cotta, squid-ink profiteroles, charcoal bread, blackberries, and a chocolate wand plated into a deliciously dark masterpiece.

However, it comes as no surprise that the most famous and talked-about item is the Goblet of Fire, an enchanting beverage made of Blue Curacao liqueur, lemonade and Bacardi rum which is torched before serving. The pièce de résistance is saved for last when a sprinkling of cinnamon powder is dusted above the drink, creating mesmerising sparks and flames that left us spellbound! Citrusy, sweet and tangy, it’s hard not to love this simple yet tasty concoction – we were certainly, ahem, spellbound.

7. Pololi Singapore

If you didn’t know, poké bowls are the latest rage in Singapore. With so many specialty eateries popping up, we’ll do you a solid by sharing it doesn’t get more authentic than those at Pololi, the latest hotspot in town to get your hands on this Hawaiian favourite.

Chef and entrepreneur Steph Kudus first started Pololi in Hong Kong three years ago after graduating from the U.S., where her college summers were spent riding waves and enjoying poké bowls in Hawaii. With flavours inspired by many of Steph’s favourite foods & her travels around the world, Pololi holds a repertoire of more than 20 different poké flavours where five different flavours will be served daily. Portions at Pololi only come in two sizes – the standard Da Keiki Poké Bowl ($15.99) and the heftier Da Kama’aina ($17.99) – but the range of flavours alone are enough to keep us coming back for more. Looking to savour the flavour without feeling the guilt? Swap out the white rice base with brown rice, salad, or both!

You can never go wrong with signature flavours like Traditional Spicy or Yuzu Salmon for an authentic experience. For a mid-week pick-me-up, enjoy their weekly specials such as Sweet Onion Teriyaki Swordfish, Thai Spicy Tuna, Korean Spicy Tako, Ginger Marlin, & even Sambal for those who love a little kick! The menu also offers special Hawaiian treats such as Spam™ musubi (tastes better than it sounds), tropical granitas and ice-cold beers from Kona Brewing Co.

Botanico at The Garage

Not until you’ve tried dining in the heart of nature will you be able to understand how transcendent that experience can be, and that is exactly what a night out at Botanico at The Garage gives you. Helmed by Spanish-born Chef Antonio Oviedo, Botanico offers a modern dishes from a seasonality-driven menu to bring the best of diverse flavours to the table.

Beef or steak tartare are a dime a dozen but Botanico’s Lamb Tartare is definitely a first for us (they had us at ‘lamb’). Garnished with egg yolk cream, pickled onions and nasturtium, this starter is one of the most indulgent we’ve ever had. For mains, try the pan-seared Spanish Mackerel and Roasted Pigeon cooked two-ways. Signature cocktails Blackberry Lychee Mojito and Thyme Lemonade make perfect accompaniments as well.

Desserts like the Botanist take on a whole new level of creativity: a dish of cucumber sorbet, coconut cream, lime jam and granny smith cubes sprinkled with kaffir lime zest, each mouthful is a flavour explosion in your mouth – baby, now THAT’S a firework!

Ho Rang I

Drawing upon his Korean heritage, restaurateur Edward Chia (who also happens to be the founder of the DoSiRak) sets up Ho Rang I in the heart of Novena to bring homestyle Korean cuisine to the table in a setting that is stylishly modern yet pleasantly humble. Ho Rang I has also received a nod of approval in the Michelin Guide, serving as a testament to its authenticity and dedication to Korean roots.

Lunch at Ho Rang I sticks to the classics: we appreciate the simplicity of the of noodle and rice dishes, homemade Banchan (Korean appetisers), and soup of the day. Homemade gochujang (korean chilli paste) is used in their Gal Bi Sal, or Grilled Beef Short Rib Bibimbap, rendering it a satisfying rice bowl that packs a punch. Being noodle-lovers at heart, we instantly took to the Gamja Ramyeon (Pork Rib Stew with Instant Noodles) which features Ho Rang I’s signature stew from Edward’s long-lived family recipe.

For dinner, we’d recommend to start with their signature seafood pancake Haemul Pajeon that’s good for two, where a fresh medley of seafood is tossed in simple batter with a sprinkling of scallions and pan fried until deliciously crisp on the outside and fluffy within. A whiff of this had us coming back for seconds! A night out with friends isn’t complete without a good korean barbecue session – once we sank our teeth into their Yangnyeom Samkyub Sal (soy-marinated pork belly), we were sold. Their newly-introduced fried chicken, made with locally farmed chicken and served with Yangnyeom spicy sauce or ganjang sauce (Korean-style soya sauce), is a great way to kick-back with a beer and relax after work.

While the watersports and daytime activities are highlights at the club, we can’t help but rave about the Hawaiian fare offered at Ola that rings true to the pacific islander way of life. Helmed by Chef Liinson Heng (who’s had stints with OCF, Joel Robuchon and Swiss Butchery), you can count on the fact that the menu at Ola is fashioned to impress.

Hot starters like the Grilled Octopus showcases the best of the sea’s bounty served with a side of earthy olive tapenade, confit tomatoes, roasted fava beans, artichoke and house-made garlic and saffron mayonnaise. With mains, it doesn’t get more Hawaiian than the Loco Moco, where a delicious Wagyu beef patty is cooked to perfection and placed onto steamed Japanese rice with sesame seeds and chopped konbu (kelp) and topped with a panko-crusted egg. And who doesn’t like piña coladas? A sip of Ola’s Melemele Tiki that comes with a special twist (think homemade cinnamon banana puree) left us pining for more!

Located in the latest enclave of South Beach Avenue, Fynn’s Restaurant’s modern yet laid-back ambience make for the perfect setting for lunch, dinner and even weekend brunches.

Go for a classic brunch favourite with the Vanilla Hot Cakes with Coconut Cream and berry compote (because why not?). In an age where healthy-eating is on the rise, we’re impressed with their Grilled Chicken Fried Wild Rice, where succulent pieces of grilled chicken and a variety of healthy vegetables such as snow peas and edamame (we feel healthier already) are placed on a bed of fried rice. We find the Rice Noodle Salad, plated with watercress, shredded chicken, sweet nashi pear and drizzled with Oriental Citrus Dressing is also worth a mention.

With the comfortable ambience and their delectable dishes, Fynn’s may very well be the next hotspot for anyone looking for a good time.

Attractions – From Beaches to Buddhas and James Bond

The Big Buddha

Sitting boldly on the peak of Mount Nagakerd, The Big Buddha was only recently completed in 2015, but quickly became a must-visit attraction for locals and tourists alike. This 45 meter tall statue is nestled atop one of the highest points on the island, and is considered a religious site that boasts magnificent views of Chalong Bay, Phuket Town, and Kata Beach. The Big Buddha was constructed with reinforced concrete, then covered in 135 tons of Burmese white marble for a shimmering finish.

Take Note!
Opening hours are 08:00 – 19:30 (get there before 18:30 for the sunset), and it’s free to visit, though they encourage donations. Women must also wear pants or long skirts that go below the knee, and in general it’s best to be on the cautious side when it comes to dressing for a religious site like this.

Bangla Road

If you’re looking for a more debauched and wild experience, Bangla road offers up everything you can and probably can’t imagine. A typical unassuming street by day, Bangla shuts down to traffic at night and shows its true colors with 400 metres of bars, street entertainment, pulsing music, and ping pong shows (Google that at your own risk). Although it can be a bit overwhelming for some, the atmosphere is largely positive and vibrant, and you’ll be tempted to spend more than just one night taking in the sounds and sights of this sinfully fun stretch of culture.

Nai Harn Beach

One of the most pristine beaches you can find in Phuket, Nai Harm is an appealing alternative to a mainstream option like Patong Beach – which is more suitable for water sports and known for easy access to party areas. Nai Harn is comparatively quaint and a bit more difficult to get to, but like most worthy attractions, its relative inaccessibility remains the key to its beauty. Think warm clear water, airbrushed blue skies, and sand so soft you’ll never want to leave. I’s truly a contender for the best beach in Phuket; in addition to the lush and relatively untouched environment, it boasts easy access to restaurants, vendors, and souvenir shops housed nearby under large shady trees. Ah, paradise!

Wat Chalong

Wat Chalong (Chalong Temple) is one of the largest, most visited, and oldest temples in Phuket. Along with the exquisite architecture (the highlight being the gorgeous Grand Pagoda housing a small piece of bone from the ‘Lord Buddha’) the temple grounds themselves are downright stunning. It’s certainly not the quietest temple in Phuket, but undoubtedly one of the most significant: locals still come to pay their respects to its two founding monks who took care of villagers and helped make peace during a rebellion in the 1870s. This is a Buddhist temple, so be sure to dress appropriately!

Phang Nga Bay (James Bond Island)

You might have seen pictures of friends on holiday boating around the beautiful limestone formations at Phang Nga Bay, or perhaps just glimpsed the singular needle-like rock in the famous James Bond film The Man with the Golden Gun. This is a day trip (best utilized by booking a tour – you’ll probably have to travel by speedboat about an hour out from Phuket) that all visitors should add to the top of their lists. The bay is filled with dozens of breathtaking islands, lagoons, coral reefs, mangroves, wetlands, and caves to explore, which alone makes us want to buy our plane tickets to Phuket right now.

Elephant Trekking

Trekking around tropical jungles – boasting stunning views of both mountains and seascapes – atop these awesome animals is a once-in-a-lifetime experience. You’ll find that there are many options for elephant trekking in Phuket, but our Thai colleagues recommended Kok Chang Elephant Camp for the best value, views, and overall experience for visitors. Choose from different routes varying from 20 minutes to 1 hour, and rest assured the guides are expertly trained to handle the elephants (this particular camp has been running since 1993). The hours are 08:30 – 17:30 – be sure to book a tour in advance!

A Glass of Campfire With a Side of Leather: Tippling Club’s New Scent-Focused Drink Menu Is Daring and Delicious

I was a wee bit skeptical when first reading about the new ‘scent over spirit’ cocktail ‘programme’ from Tippling Club that features drinks like ‘Rain’ – it all sounded too gimmicky and post-modern for my taste. I was happily proven wrong however, as the attention to detail, passion, and quality of ingredients behind this endeavour make for an experience unlike anything else the city has to offer. Most importantly, these are some capital D-elicious cocktails created by a top-notch mixologist who truly loves his craft.

Head bartender Joe Schofield worked with IFF (International Flavors & Fragrances Inc.) and Chef-Owner Ryan Clift to craft the “Sensorium Menu”, a flavour-forward cocktail experience that emphasizes smell and memory over the actual alcohol. This was a months-long process, and the first of its kind in Singapore.

When you go for a drink or meal at Tippling Club you’ll be welcomed by an array of scent choices:

Each slip has been dipped into the fragrance and is inscribed with the drink ingredients; you choose cocktails based on the fragrances that attract you most. They are all priced the same at $22 to further encourage you to pick based on aroma, not pricing or spirit.

This is me rereading the Negroni slip for the fifth time to make sure I understood it correctly – yes, “soundwaves” make an appearance in this tipple. Here the team uses ultrasonic soundwaves to create a barrel-aged flavour with the fragrance more quickly.

Mind, BLOWN.

Now that’s some mad(ly delicious) science.

Scientists estimate that 80% of the flavours we taste come from our sense of smell, so Joe wanted to ensure that the fragrances they crafted would stir deeply-rooted memories to make for a more complex and fulfilling drink experience.

While there are 12 selections, below are my four favourites:

1. Campfire (on left)
A soothing concoction of smoky campfire fragrance, marshmallow milk, burnt syrup, ash, and gin that took me straight back to starry nights spent under the stars, huddled by a crackling fire in the North American wilderness. Disclaimer: I’m not a gin fan and I don’t particularly like marshmallows, yet here I am waxing poetic about this drink. It’s just that good.

The homemade charred marshmallow provided a superb, melt-in-your-mouth sweetness without being too overpowering, and the smoky mix of flavours combined so well with the woodsy overtones of gin that I felt like I was tasting this memory. Mind BLOWN, again.

2. Rain
Joe’s personal favourite, the cocktail involves rain fragrance, stone, citrus, soda, and vodka – think the most layered and tasty vodka soda ever. The ‘stone’ is actually a crunchy edible clay garnish that sits atop the drink like a dark Singaporean storm cloud. As you sip and bite it becomes soft, creating a wondrous mix of earthy and citrus flavours. FYI Joe and Chef Ryan spend at least 10-15 hours a week JUST on cocktail garnishes like this edible stone. Now that’s dedication.

3. Leather
A smoky concoction that pairs whisky, Pedro Ximenez (sweet dessert sherry), and notes of orange and vanilla with a fragrance that legitimately smells like leather. Like, really nice leather that you’re tempted to take a bite of (anyone, ever? Just me? Okay). It’s luxurious and down-to-earth all at once, and smooth enough to accentuate the best flavour components of whisky. I imagine a range of leather-tinged memories that this one could stir up, but let’s just focus on those indulgent moments of extravagance and material newness that we too seldom get to enjoy.

4. Grass
It’s telling that I enjoyed most the cocktails that involved my least favourite alcohols – tequila is by far at the bottom of my list, and if I were to choose based on spirit I never would have picked this one. Grass manages to combine a grassy fragrance, dill, anise, citrus, and tequila in one of the most refreshing and innovative glasses of alcohol I’ve had this year. Picture a warm sunny day lounging on a hill, you sipping on an ice cold lemonade while running your hand through the freshly mowed grass – that’s what this tastes like.

Joe was genuinely excited to share his thought process behind the creation of this menu, and it was downright infectious. After hearing him talk for a few minutes it was clear – this fabulously talented team does not rely on gimmicks to push the boundaries of F&B. I’m still holding on to the scent slips, by the way. The tasting is now embedded as a fresh, warm memory that lingers in the back of my mind intertwined with smells of cool rain, campfire, and grassy hills. My notebook actually still smells like campfire though.

7 of the Most Innovative Coffee Cocktails in Asia

These are not your typical espresso martinis, folks.

Inspired by a recent visit to my Chope Shanghai compatriots that involved several coffee-based alcoholic beverages, as well as my general predisposition for all things coffee and alcohol, I decided to take it upon myself to find the most innovative caffeinated cocktails across Asia.

While a shot of whisky in your afternoon long black is a quick ‘n dirty instant fix (not that I’ve ever done that)
, I suggest you instead visit any of these renowned spots to experience a creative coffee cocktail mixed to perfection – at a more socially acceptable hour of course.

The Liberties: Coconut Cold Brew & Irish Whiskey at Jigger and Pony, Singapore

Let’s start right in our own backyard – we all know that the team at Jigger and Pony crafts a killer cocktail, but The Liberties truly exceeded my high expectations. As you take the first sip an arresting aroma of roasted chocolate makes it difficult not to dive right into the mix of Teeling small batch Irish whisky, coconut cold brew coffee, pandan bitters, and the source of the heavenly smell: a garnish of roasted chocolate nibs. The taste is impeccably smooth with only the faintest hint of coconut complementing the full-bodied flavour combo of Irish whisky and cold brew. It’s like the rich, sophisticated aunt of a Black Russian who you’ll want to visit again and again.

Californication – coffee infused beer at Ocean Grounds, Shanghai

What do you get when you cross one of the best craft beer breweries in China with one of the most innovative coffee bars in Asia? Cue up Californication, a combination of Boxing Cat Brewery amber ale that’s brewed with Ocean Grounds’ Santa Leticia Bourbon Especial cold drip coffee. The 14-hour brewed cold drip has hints of palm sugar, tootsie roll, and nougat, thus the the resulting beer that’s been brewed WITH the coffee is crisp with notes of caramel  – a heady experience that warrants several rounds. What surprises me most is that coffee beers tend to be in the stout or porter families, but this light and refreshing amber ale brew pushes boundaries in new and delicious directions.

Golden Eclipse – hot espresso Nutella milk with rum at Olfactory Bulb Cafe, Petaling Jaya (Kuala Lumpur)

Olfactory Bulb Cafe specialises in coffee, tea, and chocolate-based cocktails (when can I move in?), so choosing just one from their extensive menu proved a bit challenging. One look at “Nutella milk” however, and I was sold. The Golden Eclipse contains Mount Gay Barbados Rum, Frangelico, chocolate bitters, espresso, and house-made Nutella milk. It’s a nutty, sweet, hazelnut-mocha-like reason to drink alcohol that warms like a nice cuppa hot cocoa, with a grown-up twist.

Reviver – jalapeno and coffee bean infused apple brandy at Manhattan, Singapore

Forget an alarm clock, take a swig of the Reviver at Manhattan (which was recently named Asia’s best bar and 11th best in the WORLD) and you’ll be feeling all kinds of alive. Daron calvados (apple brandy), Carpano Antica Formula vermouth, Ferrand Dry orange curaçao, sugar, bitters, cloves, jalapeno, and coffee beans are all soaked together overnight to make this complex drink. Spicy, bold, and strong, this is a cocktail fit for one of the top bars on the planet.

Costadoro Martini, an updated espresso martini at The Artisan Room, Hong Kong

It’s no secret that I’m a sucker for a good espresso martini, but The Artisan Room’s updated version on the classic reinvents the wheel in all the right ways without straying too far from a formula proven to work. They specialise in coffee and tea cocktails, so rest assured there is skill, passion, and experience behind this badass tipple. Instead of coffee liqueur, vodka, and espresso (a typical espresso martini), the Costadoro Martini is created with dark rum, Costadoro espresso, Bailey’s, coconut milk, and Okinawa black sugar. The heavier coconut milk and dark sugar result in an exceptionally smooth martini laced with hints of hazelnut and toasted bread from the the Italian coffee exclusive to Artisan Room. Pair that with an al fresco garden area and I think that’s the sound of me packing my bags for Hong Kong.

Coffee Negroni at Q&A Bar, Bangkok

This hip Bangkok speakeasy is so secret that there isn’t even a photo of the elusive coffee cocktail – but something as delicious and unique as a coffee negroni deserves a spot on the list. Hidden behind a nondescript green door in Asok, Q&A has become somewhat of a cult hit for cocktail lovers in Bangkok. With equal parts gin, vermouth, and campari, this negroni mixture brews for six hours with Ethiopian coffee beans resulting in a sultry combination of flavours that fit perfectly with the intimate interior of the bar. The depth and nuttiness of the coffee mellows out some of the bitterness you’d expect from a negroni, which basically means it’s the negroni I’ve always wanted. Ask about their cold brew version as well!

Prohibition – Cutty Sark & cold brew at Gibson, Singapore

One of the fruitier options on the list, Gibson goes for a refined simplicity with Prohibition. They mix Cutty Sark Prohibition whisky, grapefruit & orange campari, and Antica Formula (sweet vermouth), with cold brew ice cubes, then garnish with grapefruit zest and gold leaf – ‘cause Gibson is that badass. Think a more robust Manhattan that becomes increasingly smooth as the cold brew ice gradually melts and infuses the drink with the dark and chocolatey notes of the coffee.

Tucked away amidst the hipster haunts of Haji Lane is vinyl record bar meets South American small plates concept LongPlay. Perhaps better known for its cocktails – and we’ll get to those – we heard that head Chef Jorge also whips up a mean ceviche, Peruvian style. He invited us in for a look at how he takes it from fresh fish to plating, so come on in!

Chef Jorge’s Red Snapper Ceviche ($18++)

It all starts with Malaysian red snapper delivered fresh daily – see that poor fella being sliced open on the right? If only he knew he was destined for greatness.

Jorge first adds ice cubes to the filets to keep them cool and fresh, then dabs in yellow chili paste from Peru along with house-made chili padi sauce, salt, and red onion.

The most prominent flavour combo (and key ingredient according to Jorge) comes in the form of house-made Tiger’s Milk: a combination of lime juice, fish trimmings, celery, ginger, garlic, onion, & coriander stem. He then adds a dash of evaporated milk before mixing, and finishes with fresh coriander for a final toss.

Jorge elevates this dish by adding a perfect dollop of sweet potato puree, which he then garnishes with purple sweet potato crisps.

The result? An incredibly fresh and flavourful ceviche that is perfectly mellowed by the addition of the sweet potato. As we took the first few bites, Chef Jorge couldn’t help but add that ‘it’s the perfect time and temperature for ceviche – hot and midday, served just like we would have it in Lima.’ The tart milkiness and cold fresh snapper set off by a light kick of spice was indeed a perfect afternoon pick me up.

Hailing from Latin America, Jorge has transformed the LongPlay menu into something more reflective of his background, though he’s quick to point out that the flavour profiles of South American cuisine have a lot in common with local fare: both involve ‘spicy, sour, and strong flavours’, which means he’s a sucker for prata, laksa, and BBQ stingray. A man after our hearts, indeed.

Head Bartender Kannan’s El Rey Maradona ($18++)

On the beverage side of things, head bartender Kannan recently revamped the drink menu to pair with the South American bites. The cocktails are split into four countries (Peru, Brazil, Venezuela, and Argentina) and celebrate the regional flavours of each. Kannan is a huge Argentine football fan, so he was quick to point us in the direction of those tipples. He is especially enamoured with the legendary Argentine footballer Maradona, so we took a closer look at how he mixes the
El Rey Maradona (The King Maradona), a celebration of Argentinian culture, flavours, and a different kind of royalty.

The key flavour is Fernet Branca, a popular digestif made from 27 herbs that people in Argentina typically drink with Coke. Kannan admits ‘It’s kind of weird the first time you drink it.’ He’s right: Fernet Branca is an herbal-cough-syrupy bitter tasting liqueur, and if you ask around you’ll find that it’s an intensely polarizing beverage.  Let’s see how it turns out…

Combined with the sweet nuttiness of the Maraschino liqueur, the complexity of the vermouth, and the sour lemon, the Fernet Branca adds just the right amount of biting coolness perfect for a hot Singapore afternoon. Kannan says that people tend to try it based on the name, and it has quickly become one of their best-selling drinks (pro-tip: it pairs well with the ceviche).

The Shanghai Maglev Train

Step out of Pudong International Airport and you’ll see the the world’s first and only commercialised magnetic levitation train. The Maglev can reach speeds up to 430 km/hour,  taking a mere 8 minutes to travel 30km to its next stop at Longyang Road. Skip the taxi and traffic jams and fly into downtown Shanghai in mere minutes.

The Bund (Wai Tan)

The Bund, otherwise known as 外滩 (Outer Beach in Chinese), stretches out over a sprawling 2km and is the best place to admire the phenomenal views of Shanghai’s historical-cum-modern skyline. For a bird’s eye view of The Bund and Shanghai’s cityscape, be sure to head to the observation deck on the 100th Floor of the Shanghai World Financial Centre.

Zhujiajiao Ancient Town

Dubbed as Shanghai’s Venice, this ancient town has a history dating back almost two centuries. It boasts charming traditional Chinese residences along the canals connected by the many bridges built during the Ming and Qing dynasties. Check out the Qing Dynasty Post Office along Xihu Street too, allegedly the best preserved of its era in China.

Jing’an Temple

This regal temple in downtown Shanghai was built in the tumultuous Three Kingdoms period in the 3rd century and survived being converted into a plastic factory during the Cultural Revolution. Remember to catch a glimpse of the Jade Buddha, the biggest jade statue of the Buddha in mainland China.

The Grand Palace

From Kaya Martinis to Laksa Cocktails: 9 Drinks Inspired by Local Flavours

With a massive and rather pricey drink scene in Singapore, it’s easy to fall into a pattern of revisiting your favourite spot to down that same happy hour G&T week after week.

Yeah, we’re guilty.

But after discovering these quirky cocktails that celebrate local and regional cuisine dreamed up by some of the top mixologists in the city, we can’t help but want to shake things up a bit. Consider this your ultimate Singaporean-Cocktail-Bucket-List when you need a break from the expected, or when you want to expose visiting friends to uniquely Singaporean experiences. OR when you’re feeling particularly sentimental about the good ‘ol days and want an excuse to slurp down some Milo in an adult way.

Take note. Print it out. Hang it up on your wall. Get tipsy. Add some laksa spice to that vodka soda life.

1. Tom Yum Cocktail ($20++), from Opus Bar & Grill

Don’t be surprised when you can’t find any shrimp paste or mushrooms in this one – though that’s probably how the team at Opus managed do such a stellar job at transforming our favourite comfort soup into a totally drinkable and refreshing alcoholic beverage. Muddled ginger, lemongrass, and kaffir leaves are infused with tequila Don Julio Blanco, lychee liqueur, lime, pomegranate juice, & grenadine to make this beauty. Crisp and aromatic with a tiny kick of gingery spice, it’s a new way to experience the unique combination of flavours that only a bowl of tom yum can deliver.

2. Mr. Bean ($23+), from Jekyll & Hyde

The story goes something like this: a friend brought everyone’s favorite Lao Ban soya beancurd (douhua) during Jekyll & Hyde’s soft launch as a dessert – because who wouldn’t – and that somehow turned into a challenge for the bartenders to create a cocktail out of it. The result? A seriously unique drink experience that pushes the boundaries of what a cocktail can be. Butterscotch liqueur, Frangelico, vodka, kaya, and Lao Ban’s douhua are mixed and garnished with a perfectly fried youtiao for this smooth and filling cocktail. Now if only Maxwell could dish out alcoholic beancurd like this…

3. Seah St. Power Nasi Lemak ($24++), from Tess Bar & Kitchen

Considering that late-night nasi lemak feasting and alcohol go hand in hand, let’s admit that this cocktail just makes sense. Creator Steve Leong only recently conjured this one up earlier this year in March for a hawker-inspired pop up bar event, combining Tanqueray No. 10 gin, barley with pandan syrup, fresh coconut water, & fresh lemon juice, then garnishing the drink with sambal chili and peanuts to mix in to your heart’s content. A few refreshingly spicy sips paired with crunchy bites of peanut and you’ll be in hawker heaven.

4. Malt n’ Marsh ($23++), from Hopscotch Bar

We bet when you were young you never slipped rum into your Horlicks – though perhaps mum did as she sat next to you with her own cup. Horlicks itself may not be unique to Singapore, but it’s certainly a flavour that nearly every Singaporean can vividly remember with sweet nostalgia. Hopscotch Bar serves up this gorgeous Malt ‘n Marsh made with Horlicks, milk, Angostura white reserva rum, giffard caramel & toffee, vanilla ice cream, himalayan pink salt, and then garnished with cereal pieces and roasted marshmallow. Decadent, smooth, and just the right amount of sweet, this is dessert, alcohol, and childhood (minus the innocence) all in one cup.

5. Chew’s Laksa ($18++), from Baba Chews Bar & Eatery

That’s right, a laksa cocktail. We can imagine the doubt and grossed out expression on the face of every skeptic right now.

While, yes, the flavour is a bit shocking ‘cause it does both unexpectedly and unsurprisingly taste like laksa, it’s refreshingly easy to gulp down. Only one bartender at Baba Chews can stir this up – a mix of Bacardi white, Malibu rum, pineapple juice, coconut cream, gula melaka syrup, laksa-infused whipped cream, and garnished with ground laksa leaves. The initial flavor is very much laksa, which transitions into a smooth & sweet coconut finish with just the tiniest kick of spice. Seeing as the restaurant is located in Katong, and laksa is of course the iconic regional dish, they wanted to pay tribute to the local food culture. We think they succeed brilliantly.

Would we order several of these in one sitting? Probably not. But is this more than worth a trip through Katong for a totally unique mod-Sin alcoholic update on a neighborhood staple cuisine? Absolutely.

6. Rojak, from Ah Sam Cold Drink Stall

How the heck do you recreate the wonderful sensation that only a plate of sweet and crispy and savoury rojak can deliver…in drink form?! Well, the team at Ah Sam Cold Drink Stall have managed to do just that. Nitro-charged gin, ginger flower, grilled pineapple tamarind shrub, fresh lime juice, shrimp paste syrup, and 4 slices Japanese cucumber, then garnished with dried bean curd and peanut butter – it’s a surprising mix of ingredients that actually blend very well together. Sweet, savoury, and just tad bit sour, you even get to choose degree of spiciness, just like you would at your favorite rojak stand.

7. The Kaya Lumpur ($19++), from Loof

Although you’d be hard pressed to find us sipping on a cocktail before noon (on most days that is), we’re gonna go right ahead and call the Kaya Lumpur the breakfast of champions. Loof, one of the chillest rooftop hangout spots near Bugis, takes refined and subtle approach to infusing local flavours by mixing pineapple rum, kaya, citrus, soda, house bitters, and fresh Thai basil for a perfectly sweet, yet dangerously drinkable cocktail. Pace yourself on this one because they go down easy! We applaud the team for not trying to mix in cold butter for the full kaya toast experience, even though that would’ve totally let us off the hook for considering this as an actual breakfast option.

Be sure to try their Stylo Milo (pictured above) as well, a very alcoholic take on our childhood favorite, served up in glass we very secretly wish we could take home.

8. Egg Cocktail ($25), from Operation Dagger

Don’t worry, this isn’t one of those ultra-post-modern drink “experiences” that you simply stare at rather than consume – there’s an actual cocktail here. The unassuming (and custom made) ceramic ‘egg’ cup on the left contains a chilled homemade salted egg yolk liqueur that’s created by curing egg yolks for 24 hours with rum, sugar, salt, caramel, and vanilla. Think slightly salty American eggnog, for those who are familiar with that particular form of holiday bliss. Remove the bell jar to find a ceramic egg cup atop smokey star anise and hay, soaking up all of those earthy aromas for your drinking pleasure.

This elusive drink at Operation Dagger isn’t even on the menu anymore, but guests can still order it – consider this our little secret.

9. Who Moved My Kueh, from KITE

The amount of love and work that goes into this drink shines through in its delicate balance of flavours, and of course in this beautiful presentation. The team at Kite cooks pandan leaves and vodka sous-vide for two hours, adds homemade passionfruit syrup, cointreau, fresh lime and egg white, then tops the mix with ground dehydrated pandan leaves. Kite is already well-known for expertly fusing local and Asian flavours in both their cuisine and drinks, and Who Moved My Kueh is no exception. It was first inspired by a former bartender’s childhood memories of his mother getting nonya kueh for breakfast before school, and was named so because the pandan flavour only really emerges at the end like an aftertaste – as if it were moved. Clever. But don’t you dare move this kueh away from us, we want to savor every single sip.

10. Moo Daeng, from Ah Sam Cold Drink Stall

Ah Sam Cold Drink Stall mixes up some of the most creative cocktails inspired by local flavours, so we had to include another one. The Moo Daeng is made with homemade char siew sauce, salted butter fat washed whiskey(!), fresh calamansi juice, two dashes of tabasco, Japanese cucumber, and served with an actual piece of wood-smoked & roasted char siew.

Let us pause for a moment to appreciate just how intensely magical that sounds…

Phew.

Anyway, as the legend goes, head bartender Edwin had traveled to Bangkok four years back, tried some Thai whisky and wanted a snack so ended up buying a bunch of char siew at a nearby hawker. He was inspired by the flavor combination, and decided that the obvious answer was to craft a cocktail. The result is an insanely bold and innovative creation that expertly marries regional flavors – it’s savory, refreshing, and truly one-of-a-kind.
