In The Pantry: Chef Kazuma Ishikawa of Panko

We’ve rattled on about Panko and their affordable lunch sets plus kushi sticks, this time we’re settling for a tiny peek into the life of Panko’s Head Chef Kazuma Ishikawa. Read on for his favourite tool, the one ingredient he can’t live without, and more!

 

Interesting fact about yourself: I come from a family with over 100 years of history as sushi chefs.

What would you be if you weren’t a chef: I’m not sure. Probably a sushi restaurateur like my family.

That’s still a chef, though? : Oh, right. laughs I can’t think of anything else though.

One ingredient you can’t live without: Fresh wasabi.

What’s a favourite tool of yours: My Japanese knife. I’ve had it for years and years.

Where did you work previously: After I first graduated from cooking school, I worked in a sushi restaurant in Nagoya for 12 years. Then I went overseas to Amsterdam and worked in Hotel Okura for 3 years. After that, I came to Singapore and worked under Chef Hide Yamamoto. That was the last restaurant before Panko.

Why did you switch from sushi to kushikatsu: I wanted to try something new. Have a fresh experience.

Panko, as previously mentioned, is a kushikatsu restaurant under Unlisted that aims to serve the freshest kushi-sticks at affordable prices. It is, in fact, Unlisted Collection’s current lowest price point restaurant, offering kushi lunch sets at $17++. In addition, as you can tell, Chef Ishikawa is also no slouch at sushi, so do try their don sets!

Chin Lee Restaurant

Founded in 1973, this family-run restaurant for families is located in the heartland of Singapore, Bedok. A considerably “ulu” (rural) area, the restaurant is mostly known to only locals living nearby. Chin Lee has been serving humble Teochew fare to Singaporeans for years, adhering to their promise of comfort, scrumptious food, and excellent service. Visitors and fellow Singaporeans alike, don’t miss out!

Cafe Colbar

Trek through the bushes for a taste of Colonial Singapore. Cafe Colbar was established by a Mr and Mrs Lim in 1953, making it 64 years old this year. A former military canteen, this colonial bar was originally located on Jalan Hang Jebat. It was, however, moved to its current location due to the construction of a flyover, and hence is no longer the original bar but a recreation by both owners and fans. The rustic eatery hasn’t changed its menu much since establishment, with local eats and Hainanese-styled British food. So take a walk down Singapore’s heritage lane and check them out!

ENAQ Restaurant

What’s that? You have a craving for ab-so-lute-ly awesome Prata? Well, hold onto that hunger just a little longer to make the drive all the way to Jurong West for some Enaq Prata! As a self-proclaimed Prata Connoisseur, I profess to favour crispy prata over the softer prata. There’s just no comparison between the two. Between the regular chewy version and the crunchy one, crispy prata wins hands down. And this is one of the rare places to get said crispy prata! There’s another outlet in Ghim Moh now, which caters to the hipster crowd unlike the original mamak stall style, so if you want to get your #Instastories, hop on over there instead.

Chong Wen Ge Cafe

Have I come to the wrong place? This is a temple…or is it? Chong Wen Ge is a Peranakan cafe hidden in plain sight! Sharing the same tiling as Thian Hock Keng Temple (just next door), it definitely blends in well with the traditional look. Blink, and you’ll miss it. Serving up piping hot local favourites like Nyonya laksa and Nyonya Mee Siam (Nyonya also referring to Peranakan), this camouflaged spot is certainly worth squinting for!

Despite its disguise as a heritage shop in Tiong Bahru, this classy gastrobar is no kopitiam stall. You’ll have to creep through the back lanes of Moh Guan Terrace alley, spot the entirely metallic door with the tiny Bincho lettering, and then watch as the world transforms around you as you walk through. Do try the custom cocktails and specialty yakitori, for they are sure to blow your mind.

The Dragon Chamber

While speakeasies are not uncommon in Singapore, they’re not usually Chinese. A large group of them are admittedly Japanese or Western concoctions, so I have to say that there was a little me squealing in excitement when I learned of this secret “speakeasy dining experience” by Tunglok. Head to Lokkee, a restaurant also under the Tunglok group, and ask to enter the Dragon Chamber. You’ll be lead to a red door through which you’ll enter this secret bar. There’s a secret menu that boasts exotic dishes. I won’t ruin the surprise, but do check out the Dragon Claw dish there—it’s proof that Chinese do eat everything!

In keeping with the speakeasy style, The Dragon Chamber does not have an official page, so you’ll only be able to access its front restaurant, Lokkee’s, website.

Guac & Go

This trendily named restaurant doles out healthy and yummy salad/grain bowls in generous helpings. Started by two avocado lovers, it claims to serve the “best guacamole bowls in the CBD” and seems to be living up to this promise. Be sure to look hard for them, as they’re hidden behind Maxwell Chambers. This hipsterific place has seasonal menus that keep customers on their toes and absolutely instagrammable desserts. Lau Wang Claypot Delights

I navigated the narrow streets of Serangoon to this back-end alley corner coffee shop just to satiate my desire for clay pot. Perhaps we should remove “just”, for a craving is certainly no small deal! And I definitely got my wish at Lau Wang Claypot Delights, for a very reasonable price. This humble family-style kopitiam has been around since 1985, which only goes to show that they’ve been doing things right. So if you ever crave clay pot dishes, do take a short trip to Serangoon!

Singapore Snags 6 spots on World’s 50 Best Bars list

Hear ye, hear ye, this year’s World’s 50 Best Bars was officially released on 5th October 2017 and, while there are the usual New York bigwigs and London suspects, Singapore proved a force to be reckoned with, with an impressive 6 spots on the list. All the better to toast ourselves with!

7th Place: Manhattan at the Regent Hotel

Ah yes, the bar we go to if we’re feeling in the mood for some Prohibition Era America (as one does). We love the regal drapes, textures of velvet and leather, and rich bronze tones, but our favourite ogling spot has got to be the staggering display of custom casks, filled with expertly reconstructed classics, in The Rickhouse.

Don’t try to finish everything on the incredibly extensive menu all at once; we recommend starting with the cocktail menu, which uses a few of the spirits anyway. It’s sorted by era (beginning with the 1520s!), so grab a group and have every person select one drink from each period to try.

If you’ve been there, you’ll know why this super swish hotel bar totally deserves its 7th place spot and, ahem, the title of Best Bar in Asia 2017.

Looks like we’ve stumbled upon the formula for success when it comes to getting Singaporean bars on the World’s Best list – grand, historical-style decor coupled with excellent liquors. Of course, the interiors miiight need to look like it was transplanted from a time when Art Deco ruled, and the spirits miiight need to be 1,000 gins from countries near and far, stocked in a looming tower behind the bar – but if you can hack it, then we think you stand a good chance.

Pro tip: Because haters gonna hate, Atlas also stocks some pretty fabulous champagne for those who aren’t quite fans of the taste of juniper.

24th Place: Operation Dagger

Remember what we just said about opulent design? Operation Dagger bucks that trend and make us eat our words. Forget in-your-face glamour, this tiny bar requires you to stretch your detective skills just to find the entrance. Spy an inconspicuous doodle on the outside, peer into the glass blocks on the ground, and bingo, you’ve cracked the case.

The underground den is lit only by a cloud of light bulbs dangling overhead, casting a burnished glow on concrete tables and open shelving packed with mysteriously labelled bottles. Great for cool, Instagram selfies, but you might need a posse of torch-shiners to get well-lit food shots.

Minimal though the look may be, the drinks themselves aren’t shy to wallop you in the face with unique pairings and strange ingredients. What exactly? You’ll have to find out for yourself. #somysterious

Back in our younger hipster days, dear reader, 28 Hong Kong Street’s nameless exterior and plain, panelled storefront made us feel like the coolest bunch around. We’re older now, and a little lousier in the sense of direction department, so it’s a good thing the bar’s name doubles up as its address, but the jazzy tunes and cosy booth seats of this 1920s American-style drinking hole still holds a special place in our hearts. We come here to snack on indulgent bar bites like mac ’n’ cheese ball and wash them down with lip-smacking iterations of alcoholic classics.

If we’re in the Tanjong Pagar neighbourhood, it’s probably to stuff our faces with fried chicken or Korean barbecue. Occasionally, however, when we feel like ending the night with drinks and people watching, we wind up at Tippling Club – outside of course, so the miasma of barbecue smells radiating from us won’t suffocate the folk within. The drinks here aren’t just about flavour, although there’s plenty of the good stuff to go around, but play a lot with aromas and scents too. If you like the fun factor, quality food, and creative drinks that evoke leather, rain, and fire, then come right on in because you’ve hit the jackpot.

And the final Singaporean spot to make a coveted appearance is newcomer Native. Sure, it only opened in 2016, but when a bar boldly claims to use foraged ingredients in their creations, wouldn’t you sit up and take notice too? The idea is to connect the drinks with our surroundings so be prepared for familiar items like coconut yoghurt and sugar cane, plus a dash of the unknown in the form of weaver ants, turmeric leaves, and more. Nope, not a typo, that’s A. N. T. S. Ants. Full disclosure, we have yet to pay a visit to this Amoy Street resident (mainly because our foodie lifestyle is strictly regulated by our budgets) but we’re already making plans to remedy that. Propeller is the first rooftop bar at Harbourfront, and specialises in concocting creative cocktails. It’s tough to pick a favourite from their selection of delicious tipples, but if we had to choose, The Propeller Bay – a delicious mix of vodka, orange juice, raspberry syrup, and thyme – would be it. The homemade lime espuma topping can be torched for extra zest and is the perfect touch to propel our spirits to greater heights.

Of course, great drinks must be paired with great tapas! The bar offers a mighty combination of modern inventions, like the incredibly indulgent Pan-seared Scallops with Citrus Fennel Salad or the Seared Beef Cubes with Truffle Mayonnaise. Of course, that’s not all: if you’re lucky, you can watch the Sentosa Boardwalk fireworks from Propeller’s plush sofas. (Pro tip: it’s at 8pm.)

Chef Wan is back with yet another restaurant, and this time with the self-evident name of Chef Wan’s Kitchen. He’s making his comeback with a new mix of Moroccan, Javanese, Peranakan and Spanish recipes passed down from his grandmother to mother to auntie! (Don’t we all wish that our family had heirloom recipe books too?!) With dishes like Lawar Salad, Lontong, and Lemak Noodles, we’re head over heels for the lineup of heritage eats on the menu! The restaurant is currently pending its Halal certification, post-MUIS audit, so all Muslim friends are welcome too!

Are you a lover of hot pot? Visit this new addition to the hot pot scene, Love in the Pot 美颜锅! Open until 1:00AM, this place is a good spot for a warm and relaxed supper with friends. Try out their nutrient soup broths, in particular their specialty Collagen Soup broth. If you can’t decide, you can just order all four types in a partitioned pot for the best of all the flavours they have to offer! Don’t miss out on their handmade prawn balls and beef “ice-kacang” either – you’ll see what we mean!

Everyone agrees that this bicycle-themed café deserves praise for its relaxing ambience and hip decorations. Providing healthy rice bowls through a DIY menu that you can choose from (Carbs, Proteins, sides & dressing), this café was conceived by a bike enthusiast and his athlete wife to encourage female athletes! (and healthy eating) They’ve recently added Nitro Cold Brews to the drinks bar, so be sure to stop by to enjoy a refreshing respite from the heat!

Japan Food Town is celebrating their first year anniversary with a 1-for-1 promo!

With 16 casual dining establishments handpicked from Japan, Japan Food Town is the closest you can get to the Land of the Rising Sun without hopping on a plane.

Located on the 4th floor of Wisma Atria, it’s a place where friends and families can enjoy a diverse array of Japanese culinary experiences. All the outlets in this sprawling 20,075 square food enclave are carefully selected based on their strong reputation and rich heritage dating back centuries, and with its eclectic range of Japanese dishes, it has won the hearts of gourmands.

From 14th July to 10th August, Japan Food Town will be celebrating its first year anniversary! To commemorate this momentous occasion, they will be holding their first ever 1-for-1 promotion across all 16 outlets, for the span of a month. Each restaurant will be offering the promo on a selected dish, and there are limited sets each day, so head down early to enjoy the deals!

We got to feast on some of the signature dishes offered by the restaurants in the food hall. Join us as we take you through a gastronomic journey of Japanese culinary delights, and feast your eyes as you witness the chefs whipping up a storm!

First up was this glorious, immaculately-plated Shokado-bento from TAKI. The bento is a treasure trove of classic Japanese dishes such as tamago, yakitori skewers, and thick slices of sashimi. The chawanmushi that came with the set was silky smooth, bouncy, and had a melt-in-your-mouth texture that we couldn’t get enough of.

At TAKI, diners can get acquainted with a one-of-a-kind dining experience. Called “Kuzushi-Kappo”, this new branch of Japanese cuisine involves adding a modern and casual twist to traditional Japanese dining, using fresh and premium ingredients. Originating in Kyoto, it is fast gaining worldwide popularity.

  1. Osaka Kitchen

Next, our taste buds were treated with this simple yet absolutely delectable stuffed egg omelette at Osaka Kitchen. With the head outlet in Tokyo recognized as a Michelin Bib Gourmand restaurant in 2016, you know you’re in good hands here. Sit at the counter and watch the chefs whip up your meal, while you dig into teppanyaki dishes fresh off the flat iron top.

Called Tonpei Yaki, this dish features a crepe-like omelette that is stuffed with chopped pork belly strips and rolled into a fluffy egg pillow. Prior to serving, the chef adds generous amounts of mayo and okonomiyaki sauce. We absolutely loved this – the saltiness of the okonomiyaki sauce perfectly balanced the sweetness and creaminess of the mayo, and together with the fluffy egg omelette, it was an explosion of tastes and textures.

Beef takes centre stage at Japanese hot pot restaurant Nabe Seizan, opened by the same chef behind 2-Michelin starred restaurant Seizan in Tokyo. What differentiates them from other hot pot restaurants is their soup stock. At Inaniwa Yosuke, a restaurant specializing in handmade udon noodles, the beauty lies in the simplicity of its dishes. We tried two versions of the noodles: one chilled and the other in hot broth. The noodles in the Kake Udon were steeped in a steaming vinegary broth, while the Zaru Udon came chilled, with 2 dipping sauces.

To prepare the chilled udon, the chef boils the noodles for 2-3 minutes, rinses them twice in cold water to stop the noodles from cooking further, before skillfully pulling it into a neat bundle. The udon is then served with a smooth sesame dip and a soy sauce that has hints of wasabi. Soft, chewy, and silky, the noodles were truly remarkable, with the wasabi adding a punch to every bite.

We had the Deluxe Heijoen Kalbi which features Japanese beef carefully sourced from black-haired cattle. Thin, beautifully sliced beef are presented to you at the table, which a waiter later proceeds to help you cook them to perfection. Buttery with an almost mellow milky flavour, the beef is moist, tender, and has an astoundingly melt-in-your-mouth quality that you won’t soon forget. The marbling of the beef fat adds a level of complexity to the otherwise plain meat. Despite the simplicity of having it gently cooked over a hot grill, the nuances of flavours is anything but simple.

Beef buffs will also be able to sample top-notch Nozaki beef from Japan at Yakiniku Heijoen. Nozaki beef is an A-5 grade meat, the highest out of 5 levels, and is sourced from cows which are taken care of under a thorough fattening management. This gives the meat an excellent flavour, while not being overly rich.

Sushi takes a creative spin at SABAR, a restaurant specializing in all things mackerel. Using top-quality mackerel from Aomori, the Assorted Saba Sushi comes with saba cooked in 3 ways – Aburi, Vinegar, and Grilled. Rolled into a compact oval shape, the rice grains used are from Yamagata prefecture and have a texture reminiscent of those used in Chinese rice dumplings.

All of us couldn’t stop raving about the Shime Saba which had a slight tang imparted by the vinegar and salt marinade used. If there’s anything I would come back for, it would be for the vinegar mackerel sushi, hands down.

The interior of Tsukiji Sushi Takewaka is simple and understated with two kinds of seatings – floor and counter. Upon entering the restaurant, we promptly plopped ourselves onto the high stools and watched in amazement as the sushi chef nimbly assembled our sushi platter. We had the Tsukiji, a platter of authentic Edomae-style sushi that came with a variety of nigiri sushi. Fresh and clean-tasting, it didn’t take long for us to wipe the plate clean.

Rice is usually thought of as the supporting role in a meal, or as a mere accompaniment to meats and vegetables. However, a meal at Bonta Bonta will change your mind about the humble rice grain. Here, the rice is selected by a rice sommelier and processed to the highest standards to qualify as Kinmemai. It is moist, fluffy, and has a slight buttery taste, making it an excellent base for rice bowls such as the Salmon Oyako Don that we had.

The Salmon Oyako Don was a stunning sea of orange – think thick cuts of salmon sashimi, aburi salmon, and beads of fish roe crowning a bed of warm Kinmemai rice. The chewy rice grains balanced out the richness of the fatty salmon while the fish roe added a pop of umami to each bite; this was truly a bowl of decadence.

Without hesitation, you head towards the buffet line, ready to dig in. Platters of tantalising food greet you – Mediterranean, Asian, Japanese, Seafood, Dim Sum, and not one, but THREE dazzling dessert stations.

Your gaze drifts over the four uniquely themed dining spaces. You have the requisite Japanese selections of sashimi, sushi, and teppanyaki – they may not grab your attention immediately like the three dessert bars (we can’t get over this), but they are highly underrated. At the Rotisserie section (yep, that’s where that amazing smell is coming from), you’ll find a Chicken Kebab (Shovaslaki) live station where meat is carved straight from the roasting spit onto a pita bread or tortilla, packed with fresh greens, and then drizzled with creamy mayonnaise before serving. There’s also a Nasi Lemak station with a large variety of sides and mains to accompany the fragrant coconut rice, such as Baked Chicken with a Sambal Peanut Sauce and Sambal Prawns with Beancurd and Quail Eggs.

If that wasn’t enough, there’s also a live Popiah station, Waffle station, Deli corner, Seafood on Ice, and so much more, you’ll be spoilt for choice!

On the menu are popular snacks such as Crispy Chicken Thigh with Oriental Spices (综合盐酥鸡), Oyster Mee Sua (蚵仔面线), and Braised Beef Brisket Noodle Soup (红烧牛肉面). There will also be a variety of braised dishes at the Taiwan Stew Station such as braised chicken wings and beancurd tofu, served with assorted sauces and condiments.

Fans of the iconic Taiwanese street food, Oyster Omelette (蚵仔煎), can happily indulge at the Teppanyaki live station, which will also be serving up steaming hot, Pan-fried Crystal Buns (水煎包) .

Other highlights of the high tea include Braised Seafood in Bread Toast (台湾棺材板), also known as ‘Coffin Toast’, Taiwan Spring Roll (台湾润饼), Grilled Taiwan Sausages (台湾香肠), and Flaky Scallion Pancakes (葱油饼).

Finally, to round out the meal, indulge your sweet tooth with signature Taiwanese desserts such as Shaved Ice (综合冰) with your choice of flavored toppings and condiments, Lemon Aiyu Jelly, and Taiwanese Pineapple Tarts (台湾凤梨酥). Or you could go to one of the three dessert bars. Just sayin’.

Sunday Folks – Savour Some Spring Specials!

Visit Sabio By The Sea for great tapas – the El Pulpo (grilled octopus leg, $24) and Vieiras en Salsa de Cava (sea scallops with white wine sauce, $22) are seriously top notch; or Miska Cafe for yummy Falafel ($19) or Shakshouka ($20) – you can’t go wrong with Mediterranean fare! There’s also Greenwood Fish Market if you’re feelin’ seafood – the Cold Seafood Platter ($99) consists of a steamed ½ Boston lobster, marinated Yellowfin tuna, freshly shucked oysters, New Zealand green lip mussels, littleneck clams, tiger prawns, and in-house apple wood cold smoked salmon, and is great for sharing!

Fancy some chewy New York style breakfast bagels? Get The Central Park sandwich ($14) stuffed with spring onion cream cheese, lox, and a smattering of capers from Schmearperfect anytime of the day. If pizza’s your thing, BIG FAT MAMA’s One Metre Pizzas are bound to satisfy!

Their signature Lucky Cocktails are smooth and citrusy – Potion No.8 ($24) is especially satisfying as it incorporates the fragrance of exotic fruit and flowers with its a refreshing blend of rum, homemade hibiscus grenadine syrup, fresh pineapple & lemon juice. Want something more mellow? Try their Dragon’s Breath ($22) instead (we do realize that this doesn’t sound all that mellow, but you have to trust us on this)! It’s a smooth blend of High West campfire whiskey, artisanal Mezcal, homemade goji & wintermelon syrup and fresh lemon.

Feeling peckish? Amanda Wan on the Sh*t You Go Through as a Female Bartender

International Women’s Day passed by earlier this month, and we’re celebrating the coolest female culinary stars in Hong Kong’s food and beverage scene. With a degree in International Hotel Management (First Class Honours with a dissertation on the Evolution of Mixology, natch) as well as the 2010 Crown of the Diageo World Class Bartender of the Year, Amanda Wan is quickly making a name for herself at The Envoy. Here’s Amanda on her background, what makes her tick (and ticks her off) at the bar, and how she rose to the top in Asia’s bar scene.

BL: What’s your story, and how did you get started in bartending?

I started as a Starbucks barista, and that got me fascinated with how one bean could be translated into so many varieties of coffee. From the bean, I went to the grape, and that was what got me hooked onto wine. That was what really intrigued me about the drinks industry, where you could get so much exposure in different varietals and regions. It was a natural progression for me, especially being in the beverage industry.

One more thing that was important was having a mentor. Frankie Anthony took me under his wing, and showed me the ropes. All I did in the beginning was cut slices for garnishes and wash glasses. That was 11 years ago, now look at where I am!

BL: 11 years and now you’re reaping the benefits of your hard work! International Women’s Day is coming up in March, and bartending is such a traditionally male-dominated industry. What are some of the challenges you faced in the industry as a female, and how have you overcome them?

Both males and females face challenges in the food and beverage industry. I can’t speak on behalf of all women, but one of the early challenges that I faced was being taken seriously. There’s this public perception that female bartenders are supposed to be all cute, fun and bubbly in the bar – basically, trying to keep up with being the life of the party, rather than serious professionals.

I exhausted myself trying to do that. Looking back, I would now advise other young women to be confident with who you really are, and be clear with what you like and what you don’t like. If you are being put in a position that you’re not comfortable with, just stop to consider why, and feel free to change your mind, and express your opinion. Back then it was always a bit tough, easier said than done (though not impossible). I was just 19 or 20, and it was hard to say “no.” I was doing everything — taking every job and going to every party — and now I wish I was more selective with what I did.

There also weren’t many prominent women or role models for me when I started either. No mentor figures. All I could see were men succeeding. In order to progress in the industry, I thought I had to be macho, but in hindsight, that obviously just isn’t the case.

BL: What are the most important skills that a bartender should have?

First and foremost, quick hands, and a winning smile. First and foremost. There are nights where you’ll be completely slammed with orders and unreasonable customers, and you have to keep on moving.

Then there’s the smile. You have to be super enthusiastic and gracious to each guest that walks through the door. You’re in the hospitality industry. As Starbucks CEO Howard Schultz would say, “we’re not a coffee business serving people, but a people business serving coffee”.

BL: So true. What influences your cocktail-creation style?

I am from Kuala Lumpur originally, and we love our food. So that means lots of flavours and influences from Malaysia, Singapore, and China. A lot of my drinks have key Asian ingredients in them.

BL: What are the inspirations behind your drinks at The Envoy?

It really is the culinary factor. It is a uniting thread for all Malaysians. When you travel to different places in the world you get to hear and see different stories and experiences. For example, take the notion of supper as an institution. When you go to Hong Kong, you experience a multitude of cultures, flavours, and guests. Every place tells a different story in terms of tastes. I play with all those influences.

BL: What ingredients are you particularly into at the moment? Why?

I am known as the ‘Pandan Queen’. It shows up in way too many of my cocktails. I also am inspired by coffee, tea and wine. These days people want low alcohol options and more flavour profiles.

BL: I hear that. It’s great to dine out to experience flavours you never thought possible in a drink. Are there any specific cocktail trends that you’ve seen in Hong Kong lately?                 

One of the things that I love is the ‘locavore’ concept. There are people that want to enjoy ingredients locally sourced from the city. So that means trying to get local ingredients showcased in drinks.

You also have these high-volume cocktails gaining popularity. People want the quality, flavor and they also want the speed. You have a lot of these canned cocktails, bottled cocktails and punches gaining momentum nowadays.

BL: What is your favorite cocktail at the Envoy? And are there any special cocktails that you’ve made that didn’t really hit it?  

Dewdrops of the Heart is definitely my favourite. It’s a sickly romantic name, but it’s a symphony of flavour (pandan vodka, green tea and jasmine flowers). It’s topped off with homemade pandan syrup, and force-carbonated with CO2 in a shaker. It is served in a gorgeous champagne flute with a leaf. (BL personal note to self: need to try this).

I’ve also had so many flops, and it’s a constant drive to innovate. Just look at Thomas Edison. He had a lot of inventions, and a lot of flops. You really have to push yourself, and keep on creating. My inspiration comes from all areas – some from traveling and others, from speaking with other people. I also have a lot of chef friends, and they all love to try different ingredients and flavours. So as a group, we’re like “how can we make a drink that uses elements of ginger and scallion steamed fish?” It’s a constant innovative process. That’s where most of my inspiration come from.

BL: Tell us one of your craziest experiences you’ve had as a bartender.

When you’re in the service industry you get caught up in the lives of other people. That was one of the things that threw me off-guard. I was just telling one of my regulars here that I got accepted to the Barista Competition in Milan, and he invited me to his personal place in Barcelona to chill out at, after the competition, even though he wasn’t there. He literally gave me the keys to his home!

BL: Seriously?? I’m in the wrong line of work.

Hah! When you have built up trust like that, it’s something which is pretty extraordinary. It was such a cool experience, and not something that I could get anywhere else. Not something that I could ask from anyone. You really never know what opportunities this industry might throw at you.

BL: Where do you head on your night off?

I need to recharge. I teach Sunday School on my night off. I love it as I teach toddlers, and they’re not really chatty yet, and they don’t have the vocabulary to properly converse. They’re all very cute and cuddly. They love hugs and just sitting next to you.

BL: I love it when kids aren’t old enough to talk back. So, other than the Sunday School, which sounds fine and dandy, what do you really do? 

I love hanging out at cafés and bars here in Hong Kong. My favourite coffee place has to be The Cupping Room. It’s super consistent, and serves great coffee. I also am a huge Guinness fan, so that’s what I drink on my night off!

BL: I’ll drink to that! What advice would you have for aspiring female bartenders?

For ambitious female bartenders, my three pieces of advice are to have no fear, put in the hours, and work really hard at your job. There will always be challenges, but you will overcome them. The people that you surround yourself with, are family – your family will help you get through any of the challenges that you might face and turn them into opportunities for growth.

These days it seems like every corner harbours yet another craft brewery enmeshed in Sai Ying Pun and Soho. Fear not, it’s not the same scene in Mong Kok. At Garage Bar, chill out amidst loungers sprinkled between two vintage Citroën vans, one from 1966 and the other from 1972.
