3. Three Buns (Impossible Burger)

Well, turns out nothing is Impossible. If you haven’t already heard, the Impossible Burger has finally landed on our shores! The star ingredient of the burger is its plant based ‘meat’. This hearty, yet environmentally friendly patty contains no gluten, no animal hormones, no antibiotics, and is halal certified. Served ‘medium rare’ with a glorious char, the burger is ‘impossibly’ identical to a real burger—truly a mind boggling trip for the tastebuds. Three Buns serves up two of these tantalising enigmas: The Impossible Dream ($27) and The Impossible Chedda ($23).

Fun fact: The Impossible Burger patty uses 87% less water, 89% fewer emissions and 96% less land as compared to actual ground beef!

Not only are the main courses impressive, the appetisers and sides are also must-tries! The premium Jumbo Shrimp Cocktail was literally JUMBO in size. The shrimps were perfectly fresh and firm to the bite, making it a very tasteful appetizer. Cue Rizu Modern Japanese Cuisine, the latest addition to the slew of hangouts at Duxton Hill that is sure to give the other eateries a run for their money.

A Cosy Japanese Respite

If you’re looking for a quiet space to enjoy an exquisite Japanese spread, look no further than this quaint sushiya. The ambience is rather dim, which may not be ideal if you’re trying to take snapshots of the gorgeous interiors and dishes. However, rest assured that the experience here will make up for it! Choose a seat al fresco to soak in the ambiance along Duxton Hill, or take a table indoors and delight in the deep blue interiors of the restaurant.

The service is attentive but not ostentatious, and the waiting staff is always ready to answer any queries about the menu items. Attention to detail is impeccable here; from the food down to the tableware, small meaningful details are added to give Rizu that extra personal touch!

The best way to have a taste of Chef Noboru Shimohigashi’s culinary ingenuity is through Rizu’s Special Omakase, comprised of 11 specially-prepared dishes using the freshest ingredients of the day. Indulgence seems to be a recurring theme in Rizu’s omakase but we’re not complaining! One good example is Chef Noboru’s Wagyu Steak with Special Wasabi Sauce. Tender and beautifully marbled steak slices are seared to perfection, served with a side of seasonal vegetables. For those weary of wasabi, you can take comfort in knowing that the sauce tastes more like earthy sesame sauce dressing.

Sukiyaki Rice Bowl with Miso Soup

Fans of sukiyaki will adore this dish. Savoury and slightly sweet, the beef slices are cooked extremely tender with a melt-in-your-mouth consistency. The flavours lean towards the stronger side, but with the light miso soup, it comes together beautifully. The golden, runny onsen egg gives the rice extra depth that amps up the lux factor.

Crumble, Pear Gelee and Pear with Vanilla Ice Cream

This January, we’ve got our eyes on The Copper Plate, where whisky is served by the carafe (you heard that right!). Taking the reins are the group behind Singapore’s Quaich Bar and ex-William Grand & Sons brand ambassador Matthew Fergusson-Stewart so you can anticipate an experience that’s outside the box.

Of course, the whiskies aren’t the only stars here; The Copper Plate dishes up some pretty amazing dishes as well, such as grilled prawns and barbecued Japanese squid. We can’t think of a better way to end the day than enjoying a dram with your friends over lip-smacking grub.

Have Omakase for lunch at Hanabi – because why not?

Located at the popular nightlife district of Knutsford Terrace in Tsim Sha Tsui is Hanabi – a high-end Japanese restaurant that serves up value-for-money Omakase menus. ‘Hanabi’ is the Japanese word for fireworks, which symbolises the melding of traditional and modern Japanese-style cooking. With sashimi that is shipped daily, the lunch sets are guaranteed to cater to all types of palates.

We had the privilege of trying the Chef’s Special Lunch Omakase, and Chef Chan didn’t disappoint. We were treated to the day’s best produce with high-quality sashimi, grilled fish, and sushi, alongside the seasonal Koubakogani crab – which was both flavourful and fresh. Another of our favourites was the Sake Boiled Fukuoka Black Abalone with Sauce, that comes served with the dark green abalone liver paste.

Other highlights to try include the Tuna Don, which comes served with different cuts of Tuna, including Otoro, Chu-Toro, and Maguro – a perfect mix of texture and taste, all in one bowl. It goes especially well with their specially selected Japanese rice that’s topped with burdock powder, sesame, and seaweed.

Alternatively, try the sushi set, which features 12 pieces of sushi and handrolls. Apart from the variety of items served, it even comes with an appetiser, salad, Chawanmushi, miso soup, and dessert!

尖沙咀諾士佛臺向來是著名的酒吧街,這次想介紹的不是酒吧,而是隱身於這裏的高級日本餐廳——Hanabi。Hanabi在日文中解作煙火,象徵菜式揉合了日式和和現代廚藝,為味蕾帶給驚喜的寓意。餐廳主打廚師發辦(Omakase),刺身每日空運到港,確保新鮮近日更推出多款午市套餐,假如午間有空,來這裏好好享受日本美食,不失爲一個好去處。

新推出的吞拿魚丼(鮪丼)賣相誘人,飽滿的吞拿魚鋪滿飯上,包括大拖羅、中拖羅和赤身,再加上每天新鮮製作的吞拿魚蓉,分量十足。厚切的大拖羅肥美,中拖羅魚味濃郁,赤身色澤紅亮,可見餐廳對挑選食材的嚴謹。筆者最欣賞餐廳選用日本魚沼產的米再配搭赤醋製作醋飯,飯粒飽滿帶黏性,配搭牛蒡漬、芝麻和紫菜等配料,味道上佳。

至於壽司套餐亦頗受食客歡迎,白身魚吃起來清新不油膩,把一貫握壽司放入口,令人想起日本的風味。每個套餐附送前菜、茶碗蒸和時令小菜,茶碗蒸加入貝類、銀杏和三葉,並使用日本雞蛋製作,滑溜有餘,可惜的是欠了些鰹魚香。

這裏最特別的是午市和晚餐都供應廚師發辦,想一嘗主廚手藝,並不用等到晚上。近月為日本蟹當造的季節,故此廚師選用時令的香箱蟹炮製佳餚,先仔細把蟹脚拆肉,擺盤時再放上楓葉,賣相精緻。這道菜建議由上往下吃,先品嘗完條蟹肉的滋味,之後品味蟹膏的香和内子的鮮,令人回味無窮。另一款印象深刻的菜式是清酒煮鮑魚配鮑魚肝醬,福岡黑鮑煮得軟腍,深綠色的鮑魚肝醬,第一口甘香,之後慢慢滲出甜味,值得一試。

Forget store-bought cheese; get yours at The Mast’ of Mozzarella & CO.!

Cheese fans rejoice! You can now tuck into some of the freshest cheese in town at The Mast’ of Mozzarella & CO., the newest addition to the slew of eateries in Tanjong Pagar.

Originally from Rome, The Mast’ of Mozzarella offers freshly-made cheeses and delicious Italian platters at their first Southeast Asian outlet that acts as a delicatessen, osteria, and bar, all in one place. It’s also the only osteria that boasts a laboratory-like facility that produces mozzarella, burrata, and stracciatella daily on site!

Passersby in the area can easily check out the cheese-making process that’s open for everyone to see through the glass windows but if you’re curious, here’s a little sneak peek to satisfy your cheesy cravings:

First, the mozzarella maestros add a controlled amount of buffalo milk imported from Italy, rennet, and salt to the churner.

Fun fact: The Mast’ only uses high-quality milk imported straight from the osteria’s very own buffalo farm in Valle dei Templi in Paestum, Southern Italy, so you know you’re getting the real deal.

It takes roughly 5 to 10 minutes to churn the mozzarella; thereafter, the cheese is ready to be formed into balls! The rollers will then press out the mozzarella balls according to the moulds attached to the machine.

The Mast’ makes mozzarella in a variety of sizes, and they’re made twice daily. If this isn’t fresh, we don’t know what is!

The cheeses can also be shaped and hand-stretched; one of the more popular and common ways to do it is to braid them.

You can even make them into tiny braids too! Come on – how cute is that!?

The best part about The Mast’ is that you get to experience these dairy delights right at the osteria; with cheeses so fresh, it’s a tough one to beat!

   

Hot Off the Brick: Salmone Scozzese e Zucchine

One of the many ways to enjoy the freshly made mozzarella is through the toasty and lip-smacking pinse, which are roman flat breads crowned with a variety of toppings that tickle your fancy.

We recommend the Salmon Pinse, where buffalo mozzarella are torn and adorned alongside smoked salmon and zucchini on a well-baked flatbread. This baby feeds two easily, so grab a friend and share the love!

   

Fresher than Fresh: Tris di Bufala

If your love for mozzarella runs deep, the perfect dish to order is the Tris di Bufala. Enjoy a selection of burrata, mozzarella, and special burrata that come served on schiacciata bread with mixed salads.
