#takeyourmumout this Mother’s Day!

How many times have we flopped down on the couch after a long day at work or school, whining about how tired we are, while waiting for our mums to whip up dinner? Now imagine having to prepare a meal for an entire family after a day of working your butt off… And I don’t know about you, but that sounds like straight up torture to me. 

Chope is paying homage to all the incredible, sacrificial mums out there this Mother’s Day by getting three participants to put together something nice for their mum – and what better way to do so than with her guidance?

Here are the three adorable duos that joined us at CulinaryOn:

Kelly is a busy mum-slash-businesswoman – she’s the person in charge of Mellben Seafood (impressive, right?) Rachel…Well, she doesn’t cook at all. This is her first ever attempt, apart from the Home Economics classes she had to take in Secondary School, and it didn’t go as badly as anticipated (despite the slightly burnt garlic). Mum was proud either way – her daughter has skill!

Agnes is sassy and adorable, and says that her fitness-trainer son Moses cooks up a mean Oxtail Stew that turned her into a beef lover. It’s his very first time cooking beehoon, and he nailed it (7.5/10 despite it being slightly dry, says mummy) – not too shabby! She’s now looking forward to enjoying more of Moses’ cooking so she can finally sit back and relax.

Cindy is one of CulinaryOn’s fantastic sous chefs, and Brandon is the sweet boy who stole all our hearts. They both baked a fantastic dark chocolate cake doused in chocolate sauce, mini marshmallows, and sprinkles (with plans to eat it with vanilla ice cream afterwards, YUM), and this was Brandon’s very first time baking! Talk about pure talent – the gift of cooking certainly runs in the family.

The Carvery: A Meat Lover’s Paradise

The Carvery sits on the 7th floor of Park Hotel Alexandra and offers spectacular, unparalleled views of the lush greenery of the Southern Ridges, as well as of the beautifully intricate Interlace Condominium (which won World Building of the Year 2015) – be sure to sit back and relax at their poolside al fresco dining area, which is undoubtedly the best way to enjoy all their delectable cuts of meat on offer!

Meat takes the center stage in this buffet, as there are usually 3-4 meat options available for lunch and dinner, respectively. They’re slow-roasted to perfection and carved by Chef Robert right in front of your eyes, and served alongside a large variety of intriguing condiments to complement all the luscious roasts they have on display.

Their Australian beef prime rib is dry aged in-house, slow roasted for about 8 hours, and served medium rare for a beautifully moist and tender finish. It’s then perfectly paired with flaky Maldon sea salt for a bit of texture, a delicate red wine jus if you’re more of a traditionalist, or anchovy butter for an umami twist! I had mine with a sprinkle of Maldon sea salt and anchovy butter and it felt like I just died and went to roast beef heaven. Even looking at this gif is making my mouth water at the memory! The beef was succulent, juicy, and full of beefy flavour, made even better with the hint of umami flavour. Delish!

Not a fan of red meat? Fret not, their Rotisserie Chicken is also a hot favourite – the entire chicken (bones and all!) is marinated in fresh herbs, carrots, onions, celery, and bay leaves for 10-12 hours before being roasted on a spit in the rotisserie – rendering succulent, tender meat that falls off the bone. Pro tip: it’s best paired with either chili sea salt for a mildly spicy kick, chicken gravy (for obvious reasons), or truffle butter! I had mine with a sprinkle of black lava salt (it contains remnants of activated charcoal) and a generous helping of truffle butter for a fragrant, earthy kick that had me going back for more!

The roasts take centre stage in this buffet; the other dishes are usually on rotation, and are made up of items that complement the different meats they have on offer – like Yorkshire Pudding, Baked Portobello, Roasted Butternut Squash, Honeyed Beetroot, Saffron Rice, Cassoulet, Beef Bourguignon, Coq au Vin, and Chocolate Beef Stew (don’t be put off by how strange it sounds, it’s actually really delicious)! There’s also a salad counter, seafood section (with goodies like Chilled Tiger Prawns, Canadian Black Mussels and Freshly Shucked Oysters – only available during dinner!) and a wide assortment of cheese to suit your palate.

If your meal isn’t complete without carbs, grab some freshly baked bread, a slice of pizza fresh out of the oven, or your choice of spaghetti, farfalle or linguini, cooked in pomodoro (tomato sauce) or aglio olio (oil and garlic), prepared a la minute!

What better way to top off a meal than with dessert? Their classic English Trifle is incredibly luscious – creamy custard between layers of Bailey’s soaked sponge cake and a generous portion of fresh fruits and berries; basically heaven in a bowl. There’s also a Crème Brûlée that’s to die for, and a seriously luxurious, decadent, chocolate mousse named ‘Harry’s Choice’. Don’t miss it!

Saffron Sharpe: Food Obsessions & Favourite Travel Destinations!

This week, I managed to sit down with the effortlessly beautiful Saffron Sharpe (@saffronsharpe) (who’s basically every girl’s #fitspiration) for what was supposed to a quick chat over lunch at Wild Honey @ Scotts Square. It turned into a pretty long one, and she dished the dirt on her workout routines, eating habits and food obsessions. Spoiler alert: she’s a foodie! (And just in case you’re curious, we both got the Canadian Breakfast).

RL: People are constantly asking you about your eating habits and workout routines on your Instagram page. Do you actually eat healthy and work out all the time?

SS: Not all the time! This is going to sound so boring and cliche, but moderation is the keyword. I usually limit my carb intake so I have a lot of quinoa, and I know it sounds gross but I assure you that it’s pretty delicious when you cook it right. I didn’t like it until my mum taught me how to cook it properly: you’re supposed to wash, soak and cook it like rice, then add butter. It’s not that bad, I promise!

I also have just half a bowl of rice, get beehoon if I feel like having noodles, eat a lot of vegetables, and swap out carbs with extra cheese on my salads if I’m trying to get lean. My mum cooks a lot and I LOVE her cooking – she roasts chicken almost every day so I have chicken on a daily basis. I’ve always been eating healthy as my mum is pretty health-conscious, and since I never had much fast food as a child, I don’t really crave it. BUT if I do indulge in fast food, I’ll definitely order a McSpicy!

I also enjoy working out and it isn’t a chore for me, so my diet isn’t that strict. I even run on holidays or do a short circuit (usually just the warm up section of the Insanity workout) when I feel bloated! I really enjoy going for Spin class as well – I’m pretty bored with going to the gym these days. Oh, I also have a Kit Kat or some sweet fruit after dinner most days, and I love ice cream!

RL: Ooh, so you have a sweet tooth then?

SS: Yes! I love sweet-salty things most: savoury ice cream like Sea Salt Gula Melaka and Salted Caramel from Creamier, chicken and waffles with maple syrup, honey butter fried chicken… You name it. I also love chocolate and lemon tarts, and I’m super basic so I love Açaí Bowls as well, especially the ones from HAAKON. Extra points because they’re supposed to be healthy and good for you, but you have to be mindful of not eating too many of them – once again, moderation is key!

RL: Yeah, Açaí Bowls really aren’t as healthy as you’d think, especially when they come with so many toppings! What would you say is your ultimate comfort food?

SS: Bak Chor Mee and Mee Pok, HANDS DOWN! I just grab some from the hawker centre closest to my house, and I sometimes go to Meng’s Kitchen to get my fix. My mum also makes amazing lasagna, and it’s one of the best things in the world. It’s actually my favourite thing to eat! I also love pumpkin pasta, butter chicken and margarita pizza.

RL: Woah, you really love all kinds of food! What’s the one thing you really dislike?

SS: My mum would scold me if I were picking at my food, so I’m not a picky eater; but the one thing I can’t stand is Mayonnaise. UGH. I think Japanese mayo is tolerable in small amounts, but the sort you get in a jar is just too much for me to handle. I saw a video of someone eating copious amounts of mayonnaise and I wanted to gag. It’s so gross!

I can’t stomach the idea of eating Balut and insects either, but I’ve never actually tried them. The worst thing I’ve ever had was chicken that wasn’t cooked properly and was sort of raw and slimy in the middle – but I actually had chicken sashimi and it’s surprisingly good!

RL: Okay ew, your uncooked chicken story really grossed me out. Let’s talk about something more pleasant – what are your favourite restaurants in Singapore?

SS: I really like Japanese, Italian and Thai food. Right now I can’t get enough of Grounded by Common Man Coffee Roasters, it’s a new cafe that’s right by Yoga Movement – I actually just tried yoga for the first time yesterday and I’m SO tired today – but they serve really good and wholesome food. I also love Odette, Fat Cow, and Tatsuya, and I’m obsessed with Tendon Itsuki!

RL: Hah, I remember my first time trying yoga – I actually thought I was going to die the next day. Where is your favorite travel destination?

SS: For sure, I feel your pain! Definitely London.  The weather is perfect and they have such a wide variety of good food!

RL: London really is amazing! So is the best meal you’ve ever had something you ate there?

SS: London has a great variety of food, but the best meal I’ve ever had was definitely something I had in Melbourne. It was there that I really learned to appreciate wine, and they have really fresh ingredients! Actually, no… The best meal I’ve ever had is definitely my mum’s lasagna. (Are you seeing a trend here?) She really is the best cook – she does it so well that I rarely have to! I do cook a little, but I can’t bake – it’s so difficult. I tried making Black & White cookies and they turned out all fluffy and cakelike.

RL: Is there anything else you’d like your followers to know about you?

SS: I’m 20 this year – I took a gap year to travel and focus on other things, but I’ll be attending SMU’s School of Business this coming semester.
I’m definitely a dog person; I love French Bulldogs and Shiba Inus!
I’m a single child but I’ve always wanted a sibling.
I’m a very light sleeper, so I can’t stand people who snore!
I want to pick up either Japanese or Spanish. Mandarin Chinese is my second language, but it’s SO HARD.
I love nature, but I’m not into camping and roughing it out – I’d love to go Glamping, though!

“Dear Memory”

One of Singapore’s favourite actors Pornsak teams up with Chef Davian of The Line to curate a nostalgic Thai-inspired menu that evokes memories of his mother and their moments together. This exclusive menu is available only on Mondays and Wednesdays as part of the lunch and dinner buffet, and it’s well worth it. Each dish whets your appetite more for the next, and the flavours of Thailand shine through with every course!

The Crabmeat with Pomelo is a welcoming starter; fresh and sweet chunks of Sri Lankan crab and refreshing, pithy pomelo pieces are tossed with mesclun salad, served with a spicy, tangy dressing that’s quintessentially Thai. Crispy popiah skin is served alongside the salad, adding a satisfying crunch to finish off. The velvety-smooth Curry Seafood Velouté is reminiscent of bisque that’s packed with flavour. Generous portions of seafood come together beautifully with root vegetables which give the soup texture. Appetising and comforting with just the right amount of kick, it’s a heart-warming substitute for (dare we say it) tom yum!

The dessert is also given a touch of Thai: the Soursop and Raspberry Pudding is surprisingly mellow in tartness, but the unique flavour of soursop adds a whole new dimension to the summer berry compote and raspberry crystal jelly. This one’s fruity and refreshing, and it’ll make you feel as though you’re sipping on an ice cold smoothie at a beach resort in Phuket.

“An Oriental-Peranakan Fairy Tale”
Jeanette Aw & Wan Hao Chinese Restaurant, Singapore Marriott Tang Plaza Hotel

Everyone’s favourite Little Nonya star Jeanette Aw draws inspiration from her Peranakan lineage to pay homage to the aromatic, spicy and herbal flavours of Nonya cuisine. Teaming up with Executive Chinese Chef Brian Wong of Wan Hao Chinese Restaurant, the menu curated through this collaboration is both whimsical and visually-appealing.

First up on their Peranakan menu is a Double-boiled Salted Preserved Vegetable soup with duck and bird’s nest dumpling. Delicate and gentle in appearance as it is in taste, we find this light soup comforting with every mouthful! On the other hand, we can’t help but be beckoned by the visually vibrant Braised Chicken with Buah Keluak. The vibrant blue fried rice is light and the taste of scallops shine through, and this goes extremely well with the tender braised chicken. The Buah Keluak also adds a whole new depth of flavour to the chicken! It’s unlike anything we’ve ever had.

The dessert on this menu comes with a delightful Peranakan twist. Gula Melaka, a quintessential Peranakan ingredient, is the main highlight of the Baked Lava Cake. Robust in flavour with just the right about of sweetness, the Baked Lava Cake is a welcoming end to the meal!

Avid home cook and former Masterchef Asia contestant Lennard Yeong pairs with Chef Armando of LaBrezza to create a menu with two of the most sought after cuisines from the East and the West in a delicate fusion of Japanese and Italian.

Impressing us right off the bat was the Tonno, Alghe & Bonito – where Chef Armando whips up a dish of yellowfin tuna tartare with wakame salad, bonito flakes and bonito-soy sauce. The marriage of flavours from the tuna, wakame seaweed, and bonito evoke flavours of the sea. Equally as impressive is the Tagliata di Manzo, Soia & Sesamo, where 120 days Grain Fed Angus Beef Striploin is cooked to a perfect medium, served with fresh salad blanketed over with shaved parmesan and a Japanese soy and sesame dressing.

As for dessert, Lennard and Chef Armando gives a Japanese spin on everyone’s favourite Italian dessert: The Savoiardi Al Thé Verde & Mascarpon sees Matcha ladyfinger biscuits soaked in Green Tea Syrup, with Mascarpone Mousse, Sakura gel, and Macaron. The flavours were mellow and earthy, which was a great end to a meat-heavy feast!

Nobody transforms food into edible art quite like Janice Wong does, and her collaboration with Chef Chris of SKIRT is breathtaking. As an artist and chef, her passion for food stems from her love of colours and this can be seen in the beautiful, almost otherworldly, dishes that she presents.

Janice & Chef Chris’ Lobster Mai Tai with smoked sweet potato paprika, lobster espuma and king prawn kataifi is a stunner. Fresh chunks of lobster are enveloped in delicate vermicelli nests, settled in a shallow pool of spiced coconut milk that imparts warmth with every bite. Packing up on flavour is the 6-Spiced SKIRT Steak with elements of mushrooms & mustard. The natural flavours shine through without overpowering the tender, beefy steak. Peppery and well spiced, this dish is phenomenal all around.

Known for her desserts, Janice’s culinary prowess dazzled us in the form of Rhubarb & Pistachio that looks too pretty to eat. The dish is delicate and feminine, with tart Rhubarb Compote and floral Champagne Rose Jelly perched on top of a mellow, pastel green pistachio custard base. A bite had us transported to springtime in Japan – if that’s not impressive, we don’t know what is!

If there’s one thing Singaporeans will never tire of, it’s Japanese food! Happily, new Japanese restaurants are popping up every year to satiate our enormous appetites, but our favourite Japanese culinary exports (like fresh slabs of sashimi) can also be one of its most expensive, and if you’re not careful, that delicious sushi dinner can easily set you back hundreds of dollars.

Not to worry – for the benefit of your wallet we’ve taken on the trying task of eating our way through Singapore’s multitude of Japanese restaurants to bring you some of the best and most affordable spots on our sunny island. Itadakimasu!

Teppei Japanese Restaurant

You’ve probably seen a couple of Teppei Syokudo stalls all around Singapore serving up bowls of Kaisen-Don tossed in their signature specialty Bara Chirashi sauce (Teppei-san has it specially manufactured in Japan), but the original restaurant at Tanjong Pagar is where the party’s at! An assortment of generously cubed fresh Salmon, Tuna, Cuttlefish, Scallop and Swordfish sashimi pieces lies atop a bowl of warm, fluffy Japanese rice, topped with seaweed flakes, spring onions, sprouts and a sprinkling of Ikura ($17.60). The Bara Chirashi sauce is reminiscent of Japanese Soy Sauce, but with a touch more umami flavour. Oishi!

(Tip: they have different Higawari (daily specials) lunch bowls every day, so check out their Facebook page for what they have on offer before you go!)

Sushiro is situated at Thompson Plaza and serves up amazing bowls of Bara Chirashi don as well, and among one of the cheapest at only $12.90! Their generous bowls contain large cubes of sashimi – namely Salmon, Tuna, Octopus, Scallop and Prawn, along with a sprinkling of Ikura for a burst of umami flavour. The sashimi is covered with a slightly sweet and sticky sesame sauce, definitely your cup of tea if you’re into sweet-savoury foods. There’s usually a queue outside before the tiny store even opens, so go early or be prepared to wait in line!

We’re obsessed with their Chirashi Don ($19.90) and their phenomenal Soft Shell Crab Salmon Aburi Roll ($17.90) – truly the stuff of dreams! For the less voracious, choose a set meal like the Unagi Kagayaki ($28): grilled, soft freshwater eel accompanied by a bowl of rice, an appetizer, fruit and miso soup.

Indulgent tip: if you’re feeling particularly flush from all the money you’ve saved up from dining at the previous restaurants on the list, spring for Marukyu’s Omakase sets ($68 or $88) and let the chef decide your meals for you.

First the St. Louis pork ribs are sliced into thick portions of 3-4 rib lengths.

The ribs are then immersed in a huge metal container containing pineapples, onions, bay leaf, pepper, and salt. The chef then pours in enough water over to cover the ribs.

The entire container is wrapped up and placed into the oven to cook for 2 whole hours, sealing each individual flavour in the ribs even before they hit the grill.

After the rice is added to the mix, a liberal dose of kecap manis (Indonesian sweet soy sauce) is the final touch before the chef stir-fries the entire mixture.

For the accompaniments, the chef turns to the grill once again, deftly preparing juicy sticks of chicken satay.

The familiar fragrance of these two dishes had us tucking in to the comfort food with gusto. The nasi goreng, for only $12, comes laden with a fried egg and sticks of satay, the peanut sauce lending a roasted, nutty edge that complements the grilled chicken perfectly. The fluffy rice absorbed not just the full-bodied depth of the kecap manis, but also the quintessential wok hei flavour from the charred wok. Rice may seem like a simple accompaniment, but we couldn’t help taking bite after toothsome bite!

Meanwhile, the hearty ribs dish, at just $24.90 for a half-rack, presents an interplay of flavours that invites your taste buds on an adventure. The secret marinade stood out with its savoury, slightly tangy note, and added to our appreciation of the pork’s full-bodied flavour. Not to forget the hint of lime, which made each forkful of ribs so refreshingly delectable. You could share—but we guarantee you probably wouldn’t want to.

Along with the bottles of wine imported to Hong Kong, Spanish specialties such as jamon Iberico and paella are quickly gaining a mass following. But what’s better than the traditional paella? Tapas.

Tapas are a traditional Spanish dining concept, and have roots tracing back to the early thirteenth – fourteenth century. The most popular legend involves the late King Alfonso X of Castille. After recovering from an illness where he could only eat small portions of food and wine, the King mandated for all inns across Spain to always serve a small snack, paired with wine. This storied history has made tapas infamous, particularly in Asia. A dozen or so new tapas bars have quickly cropped up across Hong Kong, and here are some to look out for next time you’re craving some Spanish cuisine.

Fofo by el Willy

Fofo by El Willy has been the talk of the town ever since it opened in 2010. Wondering who this El Willy character is? Fofo is the second restaurant by Willy Trullas Moreno (aka ‘el Willy’), an infamous chef hailing from Barcelona. Sadly, Willy no longer helms his Hong Kong jaunt, but another Barcelonian chef by the name of Alex Fargas takes pride in producing Chef Willy’s contemporary Spanish tapas.

Our favourites on their tapas menu include the ‘Atun’ Marinated Tuna, Smoked Sardine, Salmorejo Tomato Salad and the Explosive Smoked Salmon Air Bag (buckle up for a flavour blast!). The latter is a delicious ‘melt-in-your mouth’ combo that provides incredible flavour as the pastry, topped with a chunk of salmon, bursts in the mouth.

Sure, Supergiant doesn’t sound Spanish at all. In fact, it kind of sounds like a grocery store. But its moniker doesn’t forebode inauthentic Spanish eats. Quite the opposite! Nestled in the third floor of a stunningly beautiful boutique hotel, Supergiant Tapas is led by famed Chef Guillermo Delvault, hailing from Argentina. Trained in Barcelona, Delvault has designed a wonderfully Spanish-influenced menu, but with a Chinese twist.

Favourites on their menu include Saturn’s Rings (crunchy, succulent strips of calamari dipped in flour, and fried to golden perfection) and Grilled Chorizo Oreado Sausage – two traditional fresh chorizo sausages, infused with paprika, served with a crusty baguette. End the meal with Supergiant’s infamous Traditional Churro, paired with a sumptuous, rich chocolatey dip and vanilla ice cream. Talk about Supergiant taste!

No, not all. In fact, the Tapas Lunch menu has grown incredibly popular amongst the lunch crowd; priced at a reasonable $188 and $200, for two and three tapas respectively, it’s hard to beat! On the Hot Menu, make sure to choose the Hokkaido Scallops with Coconut – coconut-celery vichyssoise mixed with curry oil sliced almond and perfectly cooked with Hokkaido scallops. It’s an irresistible combination of flavours! On the Cold Tapas Menu, make sure to try out the Tuna Tataki, which features pieces of succulent, just-caught Atlantic tuna paired with salpicon and raspberries. The other ‘can’t miss’ menu item is the Cod Fish “Esqueixada” – featuring flaky pieces of just-cooked fish, onions, olive oil and hard-boiled eggs.

An up-and-coming tapas bar located in hip Sai Ying Pun, Chico Chica is one of our favourite places to try out tapas outside the Iberian coast. Crowd pleasers include Tomato Tempura – cherry tomato paired with wasabi and mozzarella, and Pluma Hamburger – a juicy hamburger patty with Hoisin sauce on the side. Sure, the tapas are on the simple side, but we love their simple, fresh creations.
