The Palmary’s known for Head Bartender Moses’ inventive tipples but if there’s one drink that they’re known for, it’s their Matcha Sour. For those who don’t like alcohol, this may just be the drink to start you off proper.

It’s an extremely smooth cocktail, despite containing matcha which is known to be extremely earthy. The description beneath the drink on the menu aptly says: “We got creative one drunken night and created this smooth and tangy baby”. And what a creation they have made! It’s light, it’s easy, it’s everything you never thought you needed – until you take your first sip, that is.

Searching for something a little stronger before your meal? Enter the Lavender Negroni. This is probably what we’d imagine a femme fatale would be sipping on at the bar after hours. A Gin, Aperol, and Rosso concoction that’s laced with lavender bitters, this floral tipple packs quite an alcoholic punch. If you love your drinks with a little kick, you can’t go wrong with this one.

Ease yourself into the courses with a Soup of the Day, in which case we had the privilege to sample the luxurious Lobster Bisque. And trust us, The Palmary doesn’t just do an average lobster soup – it’s all about flavour, flavour, flavour.

Chef Timothy transforms good lobster into a creamy bowl of comfort. Your first mouthful (and all others that follow) conjures up the essence of the sea. Meanwhile, flavours from the garden – onions, celery, and carrots – help to round off the palate. Creamy and pleasant, it’s a great way to start the meal.

Forget about everything you know about laksa because The Palmary will have you rethink your allegiance for the local favourite. Again, Chef Timothy does justice to the fresh Boston Lobster, cooking it to perfection and plated with a creamy laksa sauce, topped with crisp laksa leaves. The Palmary’s Boston Lobster Tail Laksa has all the flavours that it’s meant to have, but the fresh sweetness of the lobster still shines through.

Once you’re done with the lobster, return to land and tuck into the Westholme Wagyu Beef Rump Cap. With a marbling score between 6 and 7+,  you know you’re getting the good stuff without breaking the bank.

Utmost care has gone into the grilling that ensures a beautiful charring on the beef, lending a deeper flavour to the meat. A dashi reduction is cooked with burnt shallots and a medley of mushrooms, amping up the earthiness.

Everyone knows that after the mains, it’s on to sweeter indulgences – and might we interest you in the Grapefruit Crémeux, Lavender Jelly, Berry Granita? Cleanse your palate with a refreshing berry granita nestled in a light grapefruit pudding, finished with berries and lavender jelly. Inviting, soothing, and overall revitalising, this little treat will brighten up your taste buds. Essentially, it’s the ultimate balance of goodness in a dessert.

If you’d rather have something warm, look no further than the Black & Red Jujube Pudding Gelato. Give your heart a little hug with a pudding consisting of the perfect blend of smokey black and sweet red dates, accompanied with a light salted wolfberry toffee. That’s how you end a smokey hot date on a sweet note.

But of course, true to No Signboard fashion, these aren’t just your average dim sum selections! From global favourites to upgraded classics, here are some of our favourites from the menu that you definitely shouldn’t miss.

 

1. Signature Poached Pork Dumpling with Spicy Vinegar Sauce

If you’re looking at this dish and thinking “wow, these look like little pockets of explosions just waiting to happen”, you’re probably right! These pork dumplings are the stars of the dim sum lunch menu, and it’s easy to see why: proper dumplings tossed in a piquant vinegar-and-chilli sauce, these babies are perfect to start a meal with.

You might think it unwise to start off with a spicy dish but don’t let the fiery red dressing fool you! It’s mild in heat but packs a tangy punch that jump starts your appetite like no other. Just when you think that that’s the most impressive part of the carrot cake, its robustness takes you by surprise. Steamed to pillowy perfection, your next instinct is to probably bite into them but we strongly suggest to break them into half instead to avoid burning your mouth with its piping hot filling. Plus, it’s more gratifying to watch as the golden savoury liquid ooze out and coat the buns before tucking in. We assure you.

Feeling a little down in the dumps? Then this bowl of comfort is just what the doctor ordered. Heartwarming and delicious, it’s a nice respite between dim sum dishes as well. Made with top-notch Mao Shan Wang and Wang Zong Wang durians, the golden-hued custard is smooth, buttery, and full of flavour. One bite won’t be enough, so it’s a good thing the Durian Salat comes in a 2.5-kilogram cake. It’s meant to serve twelve, but if you want the whole thing for yourself, who are we to judge?

5. Durian Fried Rice at Escape Restaurant and Lounge

As the easiest way to use up leftovers, fried rice is a forgiving dish you can throw pretty much anything into. Still, it has its limits, and putting durian in there clearly pushes those limits. Durian and fried rice may seem like an odd combination, but the fruit does surprisingly well in a savoury dish. When you add in a dose of sambal, you’ll get a firework of flavours, with smoky wok hei, aromatic durian, and the spicy umami of sambal coming together on your tongue. Make sure to bring your sense of adventure, because this isn’t a dish for the faint-hearted!

Foods to Try at Geylang Serai

The highly anticipated Geylang Serai Ramadan Bazaar is back! It’s famous for having both delicious pasar malam fare we know and love as well as various creative concoctions, but it’s also infamous for the pricier and sometimes “overly-hipster” food. To save your money and time, we’ve gone down to the bazaar to try some of the most hyped dishes, and discover a few hidden gems you’ll be glad to know about.

Who hasn’t heard of these famous beef cubes? Grilled over an open fire and seared with a blowtorch, then covered in mentaiko sauce… it sounds like the dish of our dreams. While flavour-packed, it would have been better if the meat were a little less done. It could make do with a little sear on the outside for heightened depth of flavour, which would have complemented the sauce. As the saying goes, the devil is in the details.

 

Chilli Crab Pasta and Swedish Meatballs by Hyde & Co.

Another stall that’s garnered some excitement is Hyde & Co, best known for their signature Chilli Crab Pasta, which has clearly earned its social media fame. Everything about this dish was on point, even down to chilli crab’s unique power to keep us coming back for more despite the punchy heat and spiciness. The pasta was cooked al dente, and the sauce made slightly thicker than the usual chilli crab sauce to stick to the pasta, was fragrant and slightly sweet. However, the star of the show was clearly the generous dose of sweet, fresh crab.

Next up is the meatballs, doled out in bucket-sized servings. Don’t expect a bucket’s worth of meatball though! The dish is about two-thirds mashed potato and one-third meatballs served with gravy and a dollop of strawberry jam. We absolutely loved the meatballs. They were flavourful, tender, and (dare we say it) even better than those at Ikea. However, the jam could be less sweet and the mashed potatoes would fare better with more substance.

Grilled cheese or burger? Melty cheese or juicy patty? The Grilled Cheeseburger is a godsend for anyone who’s ever faced that impossible choice. Two pieces of bread and butter, nutty and slightly charred, wrap around a thick, generous patty. It was savoury, juicy, and complete with a satisfying patty your teeth just sink into, including a melty slice of cheese. The Angus beef patty was overcooked but somehow wasn’t dry – perhaps because of the good quality beef. Considering the long queue, it best to pop by and grab these babies first!

We all get excited when we hear the word “Raclette”. There’s something fascinating about cheese melting from the wheel straight onto our plates, and while the raclette ticks all our cheesy boxes, the dish left more to be desired. The rosti lacked crispiness and it was a tad bit over-salted. Pro tip: load up on your H2O!

If you’re looking for a sweet treat to cut through all that greasy food, then a box of Dutch baby pancakes might just be perfect for you. These adorable little guys come in all sorts of creative flavours from classic icing sugar to ondeh ondeh. We highly recommend the ondeh ondeh option, not just because we’re Singaporean and love our local desserts, but also because it’s one of the really good ondeh ondeh-turned-Western desserts out there, with more than enough gula melaka and desiccated coconut to go around.

 

Deep-Fried Oreos, Sweet Potato Balls, and Other Pasar Malam Things

Of course, you can’t say you’ve been to a bazaar in Singapore without overdosing on deep-fried goodies. Go ahead and binge on deep-fried Oreos (Mr Q) slathered in condensed milk, syrup, or whatever other toppings you want, addictively chewy sweet potato balls (OMG), and as many flavours of goreng pisang (The Original Pisang Keju) you can imagine. You already know that they taste great, so we’re here to tell you how to make sure you get the greatest of the great.

As a general rule, you want to look for stalls that sell these treats fried on the spot, and stay away from the huge warming displays filled with languishing forgotten soldiers. Deep-fried foods are only worth the cholesterol when they’re just out of the fryer. Those that have been sitting out for a while tend to go soggy or hard. You’ll have to wait at the stalls that prepare their food to order, but trust us when we say that it’s worth the wait.
