Here’s what you missed from Chope’s food photography workshop with Dishtag

 If there’s someone we trust to take a drool-worthy photo, it’s got to be the folks at Dishtag. A search and social platform dedicated to food, Dishtag busted out their best photographers to coach over 20 lucky participants in a joint workshop, ‘Learn How to Take the Perfect Food Photo’.

Tickets sold out in just a few hours, and it’s not surprising why. Budding food photographers picked up tips and tricks on food styling, lighting and composition, making sure they had all the right tools in their arsenal for an amazing portfolio. A complimentary Porterhouse brunch buffet spread was prepared, giving them the opportunity to test out the new skills they’ve learned.

Capturing moments and memories on Instagram, a photo contest encouraged participants to take a shot (pun intended) at impressing judges and their fellow attendees. Winners walked away with a teapot set from Franc Franc. On top of that, a free Francfranc PUTON Cup Cover Hat was also gifted to all participants.

7 Dishes to Try at Ramen Revolution 2018

Calling all ramen fans! Slurp up all the chewy, springy noodles and umami-filled broth you can manage at this year’s Ramen Revolution. Feast on new and adventurous ramen flavours, premium ingredients, and a host of different styles – all for just $10 per bowl! Of course, you’ve got limited stomach space, so you’ve got to be selective about what you eat.

Here are the 7 ramens we’re most looking forward to trying:

1. Kiramekino Shiosoba

The first things on our list are, of course, the stalls that came in all the way from Japan – especially if they’re in the Michelin Bib Gourmand. With very simple toppings and a clear broth, Junk Story’s Kiramekino Shiosoba doesn’t look like much. Don’t judge a soup by its colour though, because their delicious broth is what earned them the Bib Gourmand. The secret ingredient? Hamaguri clam, which gives the broth a layer of flavour that reminds you of the refreshing, salt-tinged sea air.

2. Tori Paitan

Most of us know and love tonkotsu ramen for its rich, bracing broth, but it’s about time you tried its chicken-based cousin, paitan. Paitan is so creamy and thick it almost looks like gravy, and every mouthful is bursting with an intense chicken flavour. The paitan ramen you’ll get at Ramen Revolution is from Men Dokoro Wakamusha, and is made by simmering whole chickens so that the broth is full of collagen and chicken-y goodness.

3. Truffle Ramen

You won’t be able to resist the earthy, fragrant tones of truffle wafting from this stall. Kanshoku’s truffle ramen isn’t just ramen with a bit of truffle oil splashed on top. Every bit of it, down to the last noodle, is infused with truffle. They also use Hakata ramen, which is thinner than regular ramen, meaning a generous truffle-to-noodle ratio that hits the spot in each and every bite. Pair that with the light charring on their blow-torched pork chashu for a dish that’s nothing less than addictive.

4. Ebi Tsukumen

Step out of your comfort zone and try a bowl of tsukemen. Instead of having the noodles and broth in the same bowl, you dip the noodles into a separate bowl of sauce so you can get your ramen fix even on a hot day. The Ebi Tsukumen by Ebi-Tori Menzo is a seafood-lover’s dream come true, with a thick and flavourful sauce made from boiling whole prawns. For some added intrigue, the sauce is Italian-inspired as well, and you even get a piece of bread to complete the European feel.

With everything dyed jet black, this is probably one of the sexiest bowls of ramen we’ve ever seen. Its intense colour comes from squid ink and bamboo charcoal, but don’t think they’re just there for the looks! These special ingredients also give the tonkotsu broth a deep, intense flavour, and the charcoal is packed full of minerals as well! And have we mentioned that their noodles are hand-made from scratch every day?

Get ready for luxury in a bowl! So Ramen’s Grand Tonkotsu Ramen lives up to its name, with generous slices of three cuts of pork: braised pork cheek, braised pork belly, and of course, chashu. Named after a shop called Ramen Jiro, this style sparked its very own ramen revolution in Japan, with its very own fan base – the Jirorians. In The Pantry: Chef Raymond Blanc’s Homecoming

The incredible Chef Raymond Blanc is finally back in Singapore! Catch him at this year’s World Gourmet Summit to see him in action. Before that, check out our interview with him to find out his recipe for success, his favourite meal, and his ultimate guilty pleasure.

 

It’s been more than a decade since you were last in Singapore to be a part of the World Gourmet Summit 2018. What brings you back, and what do you look forward to the most?

True, it’s been over a decade that I was last at The World Gourmet Summit. Actually, I was the first chef to launch it with the wonderful Peter Knipp (former Group Executive Head Chef at Raffles and now the organiser of the WGS & Peter Knipp Holdings).

What brings me back officially to The World Gourmet Summit is the opportunity to cook and show some of my latest dishes from Belmond Le Manoir aux Quat’Saisons to a select audience. I’ll also create a wonderful evening of food, friendship, and art de vivre.

On a more personal note, I have been back a number of times to Singapore and other countries in South East Asia for leisure, such as visiting friends and for a holiday to enjoy this beautiful part of the world. I love the food scene in Singapore so I look forward to visiting many of the Singaporean hawker foods. My first encounter with street food in South East Asia was in Singapore, which is why I have a fondness for them. Some of the places I visit are Senoko fishery, Tekka Wet Market, and Geylang Serai Wet Market.

I also long to revisit the Singapore Botanic Gardens where I cooked last summer with my partners Kenwood and created an extraordinary moment for the gardeners. As I love gardens, the National Orchid garden will also be on my list. If I have enough time I would love to visit the cloud forest! Having said that, I would love to see China Town too.

Behind every successful restaurant is a team working together and producing great food. What do you think is the best way to motivate a team?
First, you need to have a very powerful vision and philosophy, not only on the expression of your own food but also how and where the food will be served which will define the ambience of the restaurant. Mine is based on seasonality, the nobility, freshness of the produce, and to teach young chefs the importance of provenance as well as management of waste.

This vision should be supported by strong training, an induction program, reviews and appraisals. At all times, budding chefs should be supported, nurtured, and guided so they gain confidence, both in their craft and their personality. I have trained around 40 Michelin-starred chefs. Here at Belmond Le Manoir aux Quat’Saisons, we are a school of thought.

Throughout the course of your career, do you think that the culinary world has evolved? How different is it now as compared to before when you were a budding chef yourself?
All businesses – whether it is technology, fashion, or hospitality – will always change and evolve. It will change according to what the modern consumer wants. I strongly believe that today’s modern guest is knowledgeable, well-travelled, and embraces responsible luxury.

Great leaders are always reinventing their cuisine: Marie-Antoine Carême; then Vincent La Chapelle; then Auguste Escoffier; after him was Michel Guérard who catapulted nouvelle cuisine; followed by Feran Adriá who took the mantle of gastronomy through the medium of molecular gastronomy. Then there was a big bang of fusion cuisine which was a complete mix of cultures and was misunderstood. Now, I think it is the most interesting development of cuisine. It is driven by modernity, the provenance of the produce, and bags of creativity.

Today, there are now so many extraordinary young chefs who are driven by their expression from both their local values and from across the world – it really is an exciting moment. Take London for example, where it now has more than 350 languages and dialects. The mosaic of these different cuisines is just as complex.

Thinking smarter, being creative; it’s something many people struggle with. What advice would you give them in order to achieve that?
The advice that I would give to any young person is to first embrace your own culture, learn it, nurture it, and develop it. At all times be curious, open your mind, your eyes, your heart, your intuition. Then, you can enrich your own culture with other peoples’ culture. My cuisine is very much an expression of that.

As a Frenchman, I know who I am. But I also have enriched my own culture through my travels around the world where I introduced new tastes, new textures, and new techniques which have enriched me without confusing my own identity. This means you will see a lot of nuances of flavours weaved into my creations, especially South East Asian.

What’s the one quality that you think a chef should have in order to succeed?
Talent and passion alone will never be enough to bring you success. There are a number of qualities that are key; strong work ethics, the constant reappraisal of your own work, total curiosity, openness to new ideas, and working as a team.

How do you come up with new recipes? Do you prefer to start with the basics or do you improvise?
Often ideas are intuitive rather than starting with the basics.

For example, morels are in season and a beautiful little dish of the first morels with the first tender spring vegetables will be the base of a new dish.

Singapore has long been a very strong influence in my creativity and I use many of your spices and herbs to create many dishes, including a crab and coconut or ravioli of exotic fruit which I will be serving at this year’s summit on Wednesday 25th April.

What is your favourite home-cooked meal for the family?
When I return to my home in France, my 95-year-old mum, the formidable Maman Blanc, knows exactly what I love.

There will be crudités which are grated vegetables from the garden with different dressings; a beautiful plump, roasted farm chicken with its own juices; garlic sautéed potatoes; and of course, Comté cheese. To round up the meal is my all-time favourite île flottante, a dessert of soaked biscuits in kirsch syrup topped with vanilla cream, poached meringue, and threaded crackling caramel.

What’s currently your most exciting new dish or ingredient and why?
We are currently developing a number of dishes. The morels which I mentioned earlier is one that we’re excited about. We’re also working on a study of different cured cuts of salmon with different herbs which will provide a colourful, fresh, spring palette as well as different flavours. We are also revisiting my former café crème dessert to make it lighter.

What’s the one ingredient and one kitchen tool you must have in your pantry?

What is one thing about you that no one knows about?
I couldn’t possibly say! It would spoil it… but perhaps, something that people don’t usually know is that I have an honorary OBE, given by Her Majesty The Queen, from the French Government, the Legion d’Honneur, which is highest French order of merit. Essentially, I am a Knight without a white horse! It is very rare to be awarded both, but I’m a very privileged and grateful man… oh, and I love dark chocolate KitKats. Don’t tell too many people!

Japan Food Town is celebrating their first year anniversary with a 1-for-1 promo!

First up was this glorious, immaculately-plated Shokado-bento from TAKI. The bento is a treasure trove of classic Japanese dishes such as tamago, yakitori skewers, and thick slices of sashimi. The chawanmushi that came with the set was silky smooth, bouncy, and had a melt-in-your-mouth texture that we couldn’t get enough of.

At TAKI, diners can get acquainted with a one-of-a-kind dining experience. Called “Kuzushi-Kappo”, this new branch of Japanese cuisine involves adding a modern and casual twist to traditional Japanese dining, using fresh and premium ingredients. Originating in Kyoto, it is fast gaining worldwide popularity.

  1. Osaka Kitchen

Next, our taste buds were treated with this simple yet absolutely delectable stuffed egg omelette at Osaka Kitchen. With the head outlet in Tokyo recognized as a Michelin Bib Gourmand restaurant in 2016, you know you’re in good hands here. Sit at the counter and watch the chefs whip up your meal, while you dig into teppanyaki dishes fresh off the flat iron top.

Called Tonpei Yaki, this dish features a crepe-like omelette that is stuffed with chopped pork belly strips and rolled into a fluffy egg pillow. Prior to serving, the chef adds generous amounts of mayo and okonomiyaki sauce. We absolutely loved this – the saltiness of the okonomiyaki sauce perfectly balanced the sweetness and creaminess of the mayo, and together with the fluffy egg omelette, it was an explosion of tastes and textures.

  1. Nabe Seizan

Beef takes centre stage at Japanese hot pot restaurant Nabe Seizan, opened by the same chef behind 2-Michelin starred restaurant Seizan in Tokyo. What differentiates them from other hot pot restaurants is their soup stock. Made with 100% premium bottled water, the soup is prepared with a unique blend of kelp, kombu, bonito, and tuna, with absolutely no added MSG.

With a stock so pristine, there’s no need for dips and sauces – all you need is a good couple of swirls of the beef in the boiling stock and consider yourself sorted! The natural essence of the beef is meaty and tender, coming through beautifully as it cooks. The broth also imparts a slight umami to the beef, adding new dimensions of flavour that you wouldn’t have thought possible. Simple, yet oh-so-amazing.

At Inaniwa Yosuke, a restaurant specializing in handmade udon noodles, the beauty lies in the simplicity of its dishes. We tried two versions of the noodles: one chilled and the other in hot broth. The noodles in the Kake Udon were steeped in a steaming vinegary broth, while the Zaru Udon came chilled, with 2 dipping sauces.

To prepare the chilled udon, the chef boils the noodles for 2-3 minutes, rinses them twice in cold water to stop the noodles from cooking further, before skillfully pulling it into a neat bundle. The udon is then served with a smooth sesame dip and a soy sauce that has hints of wasabi. Soft, chewy, and silky, the noodles were truly remarkable, with the wasabi adding a punch to every bite.

Yakiniku beef lovers will rejoice at the sight of the premium meats served at Yakiniku Heijoen. Here, they treat their beef like fine wine, only procuring top quality Wagyu beef varieties from all over Japan.

We had the Deluxe Heijoen Kalbi which features Japanese beef carefully sourced from black-haired cattle. Thin, beautifully sliced beef are presented to you at the table, which a waiter later proceeds to help you cook them to perfection. Buttery with an almost mellow milky flavour, the beef is moist, tender, and has an astoundingly melt-in-your-mouth quality that you won’t soon forget. The marbling of the beef fat adds a level of complexity to the otherwise plain meat. Despite the simplicity of having it gently cooked over a hot grill, the nuances of flavours is anything but simple.

Beef buffs will also be able to sample top-notch Nozaki beef from Japan at Yakiniku Heijoen. Nozaki beef is an A-5 grade meat, the highest out of 5 levels, and is sourced from cows which are taken care of under a thorough fattening management. This gives the meat an excellent flavour, while not being overly rich.

Sushi takes a creative spin at SABAR, a restaurant specializing in all things mackerel. Using top-quality mackerel from Aomori, the Assorted Saba Sushi comes with saba cooked in 3 ways – Aburi, Vinegar, and Grilled. Rolled into a compact oval shape, the rice grains used are from Yamagata prefecture and have a texture reminiscent of those used in Chinese rice dumplings.

All of us couldn’t stop raving about the Shime Saba which had a slight tang imparted by the vinegar and salt marinade used. If there’s anything I would come back for, it would be for the vinegar mackerel sushi, hands down.

Takewaka opened his first shop over 3 decades ago in Tsukiji, the biggest wholesale fish and seafood market in the world. Here, every piece of sushi is handcrafted by experienced and skilled chefs, using the freshest catch of the day.

The interior of Tsukiji Sushi Takewaka is simple and understated with two kinds of seatings – floor and counter. Upon entering the restaurant, we promptly plopped ourselves onto the high stools and watched in amazement as the sushi chef nimbly assembled our sushi platter. We had the Tsukiji, a platter of authentic Edomae-style sushi that came with a variety of nigiri sushi. Fresh and clean-tasting, it didn’t take long for us to wipe the plate clean.

Rice is usually thought of as the supporting role in a meal, or as a mere accompaniment to meats and vegetables. However, a meal at Bonta Bonta will change your mind about the humble rice grain. Here, the rice is selected by a rice sommelier and processed to the highest standards to qualify as Kinmemai. It is moist, fluffy, and has a slight buttery taste, making it an excellent base for rice bowls such as the Salmon Oyako Don that we had.

The Salmon Oyako Don was a stunning sea of orange – think thick cuts of salmon sashimi, aburi salmon, and beads of fish roe crowning a bed of warm Kinmemai rice. The chewy rice grains balanced out the richness of the fatty salmon while the fish roe added a pop of umami to each bite; this was truly a bowl of decadence.
