Scarlett Café & Wine Bar, the best restaurant and bar in the Yau Tsim Mong district, welcomes Danny Grimshaw as its new head chef! Danny is from Australia and he has worked in top restaurants located in Melbourne for over 20 years. With his experience in Vietnam and Thailand, he is adding a fresh, seasonal touch to Scarlett Café & Wine Bar’s new menu.

It takes mettle to become a head chef, and Danny’s overcome his fair share of disastrous situations. The toughest challenge he has experienced was a power failure at a countryside golf club. In the middle of a full house, the power went out!

We just had this massive influx of people, all wanting their food now and [the place was] just [an] absolute furnace. No air conditioning, no exhaust fans, it was just horrible.” Though he claims that was probably the hardest day of his life in the kitchen, he managed to laugh it off. Apparently, it was also good fun.

 

Scarlett Interior

As a man of good taste, Danny also has a great appreciation for quality ingredients. For him, the key to making a good dish is in the produce, and how the ingredients complement each other.

You can’t make something beautiful out of something average, you know? So I think for me it’s just about getting the right ingredients and treating it well – putting in some care into it, treating the ingredients with respect.” It comes as no surprise that he adopts a farm to table philosophy, taking inspiration from seasonal ingredients and incorporating them into the new menu. He hopes to bring diners food that is healthier and more rustic, for example:

Weekends are best spent wine-ding down at Winederlust!

We know the woes of a hectic work week: working late, eating disappointing takeout, and just not treating yourself right. This weekend, reward yourself and add some well-deserved quality food to your diet at Winederlust. This friendly establishment is part casual bistro, part wine cellar, and all mouth-watering, taking you on a journey around the world of good food and fine wine. Grab your passports and let’s begin!

 

Appetisers

Winederlust’s Green Pea Espuma is a unique dish you’re not likely to find anywhere else! The espuma – essentially, food foam – is made from pea tendrils and alfalfa. The dish is whipped into a foam so fluffy that eating it is what we imagine slurping up a cloud is like. A final drizzle of truffle oil adds depth and fragrance resulting in a comforting dish full of mellow and earthy notes.

If you can’t decide between cooked tuna or sashimi, then the Tuna Tataki Chimichanga is a must-try. Cooked to tataki perfection, the tuna is nicely seared outside yet still tender inside. As you bite into it, the tuna goes from savoury and just a little smoky to silky-smooth and sweet, a combo that got us craving more. Don’t scarf down everything too quickly though, because we haven’t gotten around to the other components yet.

Use the tostada as a plate, pile it with tuna, onions, avocado, and tabbouleh, and eat it in one bite. You won’t regret it.

Prefer the tried-and-tested classics? Don’t worry, there’s something for you too. While it does put a distinctive spin on the traditional dish, Winederlust’s Caprese Mozzarella Salad ticks all the boxes and more. The smooth and milky mozzarella adds a delightful element of softness and roundness to the tangy heirloom tomatoes and fresh, minty basil, while the nutty smoked tempeh (bet you weren’t expecting that!) keeps everything nicely grounded, creating a depth of flavour you don’t get in your usual Caprese.

Binge watching Hell’s Kitchen has taught us one thing about cooking: scallops are notoriously difficult to get right. That’s why we were pleased to find that Winederlust does justice to their gorgeous Hokkaido Scallops. Creamy and plump without being overly chewy, each scallop boasts a yummy sear, while the tangy raspberry dressing cuts nicely through the sweet meat.

This may be a simple dish but it’s pretty much the epitome of elegance in simplicity. The Flank Steak is more than enough to make any meat lover fall in love. Paired with a smooth and earthy mushroom puree, the plate of beefy goodness is an indulgent treat. If the meat’s too rich for you, try it with the tender rutabaga coins – truly a match made in heaven.

All hail the Sous Vide 12 Hours Pork Belly! You won’t be able to resist this one: pork belly that’s been sous vide for 12 hours so that it’s fork-tender, paired with pork jus cooked with herbs and served on a bed of braised lima beans. The melt-in-your-mouth pork and bold flavours of herb-infused jus make this an addictive dish we can’t get enough of. A little grated daikon helps to balance the dish by providing some freshness, contrasting with the richness of the pork.

As its name suggests, The Sea’s all about seafood, with a little taste of the big blue sea in every bite. Featuring red snapper, squid, and tiger prawns, you’ve essentially got the entire ocean swimming on your plate. We would’ve been happy with a big plate of seafood, but it doesn’t stop there. There’s also a smattering of tropical fruits to brighten the dish with the occasional nuance of bright, floral flavours. Finally, scattered peanuts contribute a playful crunch every now and then, so you’ll never know what to expect next.

Let’s navigate back to land and go right into their Seared Duck Breast with this sublime seared duck breast with mouth-watering notes of a caramelised duck. Full of richness and depth, the succulent meat is complemented by butternut pumpkin and charred asparagus. The veggies are bursting with fresh and sunny flavours that evoke a charming garden – it’s all too easy to imagine you’ve just picked them from your backyard.


Of course, this place wouldn’t be called Winederlust if they didn’t have wines. These dishes are all part of their Weekend Wine Buffet, a special that’s every bit as awesome as it sounds. Each main is going for just $10, and you’ll get unlimited wine hand-picked by the experienced sommeliers too.
