Eat Green, Eat Clean at Verde Kitchen

The term ‘eating clean’ has long been associated with the bland and the boring. On the contrary, healthy eating doesn’t mean that you need to sacrifice on flavour, and Verde Kitchen is here to prove just that.

This 32-seater establishment comes across as a humble one, with minimalistic decor and an intimate setting. Food wise, the kitchen’s philosophy is to advocate for and serve diners sustainably sourced meals. Expect locally-grown, organic, and certified produce as well as free-range meats on the menu. The fact that they cultivate some of their own vegetables cements their commitment to the cause.

We were also impressed with the waiting staff who were well-versed in the ingredients used in both the dishes and drinks (go on, ask them about Kombucha).

 

Salad

Verde Kitchen Salmon Sashimi & Pomelo Salad
Not all salads are made equal; that was certainly the case with Verde Kitchen’s Salmon Sashimi & Pomelo Salad. Piled high with crisp greens, juicy pomelo chunks, crunchy wakame, and voluptuous slices of salmon, it only took us one bite to fall deeply in love with this colourful medley of ingredients.

Diners can also rest assured that the salmon used here is sustainably farmed, certified by the Aquaculture Stewardship Council (ASC).

Looking for something a little punchier? The Green Mango & Quick-seared Tiger Prawns is set to be your new best friend. The brilliantly seared tiger prawns go swimmingly with coriander, refreshing mint leaves, and a bright dressing of lemongrass sauce. It’s one dish we won’t be forgetting anytime soon!

The Marine Stewardship Council (MSC)-certified sustainably wild caught fish is firm, with a slightly creamy taste that goes wonderfully with the herbaceous basil crust and the natural thyme jus. Adding local flavours to the menu is Verde Kitchen’s Malay-style Organic Lacto Chicken. To encourage healthy eating, the dish comes with a side of brown rice instead of the traditional white rice. The spicy turmeric curry has just the right amount of heat that mellows when paired with the rice. However, the organic okra is all set to keep that spice kick going if that’s something you prefer.

 

Dessert

Verde Kitchen Chia Seed & Caramelized Hazelnut Pudding

If there’s one sweet treat that is sure to leave you feeling 100% satisfied with none of that post-dessert guilt, it’s their Chia Seed & Caramelised Hazelnut Pudding. Don’t let its simplicity deceive you because this little number is flavour-packed.

We love how the toasted macadamia nuts, plump blueberries, and burst-in-your-mouth mini passionfruit spheres meld together to elevate the silky, creamy pudding through both texture and taste.

In The Pantry: Chef Jack Allibone of Bayswater Kitchen

Plucked from London to helm Bayswater Kitchen in sunnyside Singapore, up-and-coming Chef Jack Allibone’s warm nature seems to fit right in. From his food to his hospitality, Chef Jack injects sincerity and honesty in everything he creates.

We sat down with the blue-eyed British lad for a quick chat to find out how he went from wanting to be a magician to ending up in the kitchen.

 

What’s your favourite kitchen tool and why?

It’s this Japanese knife given to me 8 years ago as a Christmas present – can’t live without it, really.

What’s an ingredient that you think is underrated?

Anchovies, the salted ones in brine. They’re love to use as a dressing or you can make mayonnaise with them, serve them with lamb, chicken, or even fish. Basically everything! It has a nice umami, salty, fishy flavour that’s a lovely addition to dishes.

What’s a dish that you think everyone should know how to make?

An English roast dinner. You’ve got to roast the whole joint of meat, you’ve got 5 to 6 different types of vegetables ready all at the same time. There’s a lot of time-planning involved and it’s just really homely.

What’s the one ingredient that you must have in your pantry?

Salt. It’s the heart of everything.

The best city or country for food is…

I’d say Italy, mainly because they have such great produce there. I’ve been there a few times – to Modena, Bologna, and Rome – and they generally have really good, really simple food that are all about the ingredients. Parma ham, bolognese… yeah. [laughs]

Your favourite thing to eat in your home country is…

Sunday Roast. You should try it, it’s great!

What’s the worst cooking crime you’ve committed?

Oh I do have a story but it’s not something else I’ve done, it’s something someone else did: in the first restaurant I worked in, a customer sent a steak back twice. The guy on the grill, he just took the steak and threw it onto the deep fryer, muttered something under his breath, put it back on the same plate, and sent it out.

Name a chef whom you look up to.

It’s with this last head chef that I worked for called Gary Foulkes. I worked with him twice at two different restaurants. He just runs the kitchen very well, great palate, great technical cook as well.

An interesting fact about yourself?

When I was a kid, I’d wanted to be a magician. [laughs] But I ended up being a chef.

David Blaine was around at the time and I thought, “Yeah, well, I could do that!” But maybe not. [laughs]

Your fondest food memory is…?

Cooking with my nan when I was a kid. She was a really good cook – taught me how to bone a chicken and how to make pastry and stuff. She’s the one who got me into cooking.

If you could have one last meal, what would it be?

Probably a lasagne.

It’s daunting to decide on what to eat, especially when you’re entrusted with the decision-making by your group of friends. Whether they’re craving satisfying stir-fries or if you’re into gorgeous grills, kill two (or in this case, five) birds with one stone at Alley on 25.

Providing a holistic experience of local street dining in the comfort of Andaz Singapore’s lush ambience, you could say that Alley on 25 has it all. With 5 restaurants to choose from, diners can tuck into a variety of dishes over a breathtaking view of the city’s skyline. And let’s be honest here: who could say no to that?

If you’re thinking of popping by, here’s the lowdown on what each of the restaurants has to offer.

 

Icehaus
Icehaus

If the name hasn’t given it away already, Icehaus specialises in cold dishes such as seafood on ice, cold cuts, salads, sandwiches, and desserts. And by desserts, we mean they dish up quality Italian soft-serve ice cream from in-house specialist dessert machines. They’ve even got a special collaboration with Neh Neh Pop, owned by local Singaporean Chef Bjorn Shen; get your hands on the Andaz Pop, a palm sugar-coconut ice cream and red bean-caramel filled popsicle, coated with pandan-flavoured white chocolate.

Diners looking for a refreshing start to their meal will appreciate the Heirloom Tomato Salad. Tomatoes of various colours stand out against the basil, whole olives, and a splash of apple balsamic vinegar and Tuscan olive oil. A mishmash of greens, yellows, and reds, the colours tempt you to take a bite.

On the other hand, the Boston Lobster Rolls come as a triad of warm, autumn hues. Comprised of brioche rolls with lobster filling, it’s simple and straightforward. A mouthful of each gives you springy clusters of lobster meat, coated in tangy chipotle mayonnaise with creamy avocado. We liked how the refreshing tomatoes and jalapeños cut through the flavours as well.

 

Auntie's Wok & Steam
Auntie’s Wok & Steam

Entering Auntie’s Wok & Steam is akin to stepping into your favourite aunt’s kitchen where smells of familiar stir-fries welcome you with open arms. You’ll also notice that the tables here have more seats too, staying true to the Chinese tradition of enjoying big family meals together.

One of the signatures here is Auntie’s Ma Po Silken Tofu, which is actually quite different from the usual Ma Po dishes you’re used to. Auntie’s version is a lot gentler to the palate; silky tofu cubes are stir-fried in a thick and tangy sauce with luxurious Alaskan king crab and crisp wood ear mushroom.

Pair that with their Organic Fried Rice, a glorious mound speckled red and white with shreds of crab meat, egg, and slivers of asparagus. Auntie Wok & Steam’s servings are also extremely generous (read: GINORMOUS), so don’t forget to bring your #foodsquad for this one.

 

Plancha'Lah!
Plancha’Lah!

Plancha’Lah! is a mash-up of two words: the Spanish word ‘a la plancha’, meaning to cook on the griddle and the common Singlish expression ‘lah!’. Much like its name, this eatery offers its diners Asian-inspired fare done through the Spanish griddle-cooking method. Plancha’lah has a smaller dining space, but the intimate setting allows diners to have a full view of what the chefs here can do.

Order the Patagonian Toothfish “en papillote” for a little performance to remember. Watch as the chef seasons and cooks the toothfish, fennel, shimeiji mushrooms, and tomatoes right in front of you before placing everything into a cooking bag. This is where the fun starts: the chef splashes a bit of water onto the griddle, getting a nice drastic sizzle before putting the treasured parcel on top to finish it off. It’s served as is, bag and all, so that diners get to open the parcel like a little gift.

We were particularly excited about the Hokkaido Scallops, too. The chef skillfully sears two plump scallops together with green asparagus, sugar snap peas, and trompette mushroom. Everything is plated with a truffle butter finish before it arrives at the table. Creamy, luscious, and inviting, this is definitely a dish to look forward to!

 

The Green Oven

Ok, full disclosure: the massive green oven situated by the entrance of this restaurant is the main draw here. While it adds a rustic touch to the ambience, the oven is also the hearth and home of the kitchen which gives diners an indication that the dishes here spells ‘Comfort’ with a capital C.

The Green Oven takes your everyday Mac & Cheese and gives it a little upgrade; their Lobster Mac & Cheese is an indulgence unto itself. The pasta is al-dente, with lobster chunks and a slathering of cheese that’s crisp on top and molten underneath. If you need a solid pick-me-up, this baby will have you sorted.

For those seeking comfort in the form of something meatier, you can’t go wrong with the Braised Osso Buco. Again, comfort is key: a weighty veal shank and vegetables go into the oven in a bath of Barolo wine jus (yasss). The result is a casserole with its contents fork-tender, dripping with flavour.

Pro-tip: Order a Brumble to go with this meal. A concoction of Phraya rum, Merlet Creme de Cassis, lemon, and vanilla bitters, this rich cocktail make for a perfect pairing. We kid you not.

With barbecued grub and grills as their focus, you can bet that you’re getting flavour, flavour, flavour here.

We dove right into the Black Angus Beef Skewer, presented on a small clay grill with fragrant jasmine rice. The beef cubes are tender, each delicately flavoured with just the right amount of soy-mirin glaze. Have it with the lightly-charred shishito peppers a mild hint of heat. In contrast with the beef is the Crispy Kipfler Potatoes in a rich sour cream and Parmesan cheese sauce. Potatoes, sour cream, AND cheese? You heard us right.

Adding to the lineup of tantalising grills is the Chicken Burger with Teriyaki Sauce and shredded cabbage. Chicken patties tend to lean on the dry side but Smoke & Peppers will impress you with the patty on this bad boy that’s done to a juicy perfection. The sweet and savoury sauce elevates the flavour of the patty, and shredded cabbage gives it texture and crunch. Round up the meal with the Mango-Sago Panna Cotta and coconut ice cream, and you’re good to go.

Hosted by celebrity chef David Chang of Momofuku fame and food writer (and Chang’s foodie-in-crime) Peter Meehan, Ugly Delicious is a refreshing take on gastronomy that covers everything from amazing, every day eats to the sociological and culinary history of popular foods.

Forget about white tablecloth restaurants. Instead, step out onto the streets as Chang and Meehan draw your attention back to food at its very core. Join the duo as they travel to Naples for AVP-certified pizza, tuck into street-side tacos in Los Angeles and Mexico, and gather over Thanksgiving at Chang’s family home. Each episode touches on thought-provoking discussions with revered chefs (Spago’s Wolfgang Puck from Spago, René Redzepi from Noma) as well as TV personalities (comedian Aziz Ansari, actress Gillian Jacobs), challenging them to think about what food means to themselves and to the community. 

A word of caution: make sure you have tonnes of snacks with you as you watch – hunger is guaranteed. There’s nothing this docuseries hasn’t served that won’t whet your appetite.

Chang frequently uses the hashtag on his social media platforms. The title in itself epitomises the whole series, prompting viewers to remember that good food isn’t always Insta-ready. In fact, sometimes the messiest or ugliest dishes are the best ones that you’ll ever come by.

Both entertaining and enlightening, it comes as no surprise those who have watched the series are hungry for more (spoiler alert: there are only 8 lip-smacking episodes in the first season). True to its name, Ugly Delicious is proof that food doesn’t need to look pretty to be “food porn”. When you binge-watch this (and you will), it’s almost impossible not to drool the piles of crawfish boils, piping hot fried chicken tossed in sticky, sweet hot sauce, and more.

We’re not kidding – you WILL get hungry.

Whether you agree with Wolfgang Puck that people should steer away from “originality” or if you have second thoughts about Ali Wong’s stand on what makes a good Asian restaurant, there’s one takeaway from this series that we can all get behind: Food is a human experience, and no two experiences are ever alike.

The longest-lasting fireworks display in the world

The Lunar New Year is celebrated by almost ¼ of the world’s population, with China being the largest population to date. It is thought that setting off fireworks at the stroke of midnight “scares off” evil spirits from the previous year and kick-starting the new one on a clean slate. The festival also sees the biggest annual fireworks usage globally; there isn’t a single hour in any other country that witnesses the lighting of fireworks at such a scale than in China – and they produce about 90% of the world’s fireworks!

Enjoying Lion & Dragon Dances

The Chinese lion and dragon are creatures that are associated with luck and prosperity. During Chinese New Year, Lion Dance troupes go from door-to-door around neighbourhoods performing dances to invite good fortune to people’s homes. In return, the residents will reward them with a red packet. The dance can range from a 3-minute performance to an elaborate 10-minute display of acrobatic feats depending on the amount awarded.

On the other hand, the Dragon Dance is usually a public performance since it requires a large number of Dragon dancers to hold up the dragon’s body (which can go up to over 200 feet long!) on poles, creating an illusion of a flying dragon in the air.

Adhering to Chinese New Year superstitions

Starting the new year on a good note is of utmost importance, which is why it comes as no surprise that there are a number of superstitions that the Chinese follow to ensure a smooth-sailing year ahead. The following are just a few prominent ones; how many of these do you actually follow?

  • Avoid taking medicine during the first couple of days of Chinese New Year so that your year ahead isn’t plagued with illnesses
  • Don’t sweep or take out garbage on the first day of Chinese New Year to avoid “sweeping away the luck and fortune” that come to your home
  • Avoiding eating porridge for breakfast as porridge is seen as a sign of being ‘poor’ (since porridge is a common food for the poor in China)
  • Don’t do the laundry on the first and second day of the Lunar New Year because these two days are celebrated as the birthday of the Water God (‘shui shen’ / 水神)
  • You shouldn’t wash your hair on the first day of Chinese New Year or else you’d be ‘washing your fortune away’

Eating foods that are considered lucky

What’s a festival without some good ol’ feast fest! In Chinese culture, even the food that we eat during Chinese New Year has to have some sort of symbolism to them. Among the most popular (and important ones) to have are Nian Gao 年糕 or Glutinous Rice Cakes (to signify that one will prosper and reap better rewards in the new year), lucky fruits such as mandarin oranges and pomelos (symbolising fullness and wealth), and fish (which represents more savings to come in the following year).
