Who’s Who at This Year’s World Gourmet Summit?

Here’s an inspirational story for all our aspiring chefs: French culinary legend Raymond Blanc is completely self-taught! We’re serious – the man who’s won both an honourary Order of the British Empire and the insignia of Chevalier in the Ordre National de La Légion d’Honneur (the highest French decoration) for his prowess in the kitchen has never had an ounce of official training. Apparently, he only started cooking for a crowd when the chef at a restaurant he waited tables for fell ill, and he took over to save the day. Forget Wolverine, this guy’s origin story is the craziest we’ve ever heard.

Jumping forty-six years into the future, he’s now the most respected chef in the world, with several Michelin-starred restaurants under his belt. The jewel in his crown is undoubtedly Le Manoir aux Quat’Saisons, which has earned and kept 2 Michelin stars for three decades.

For the first time in twenty-two years, Chef Raymond Blanc is back for the World Gourmet Summit, where he’ll be hosting a masterclass and cooking up a storm of French delights you won’t want to miss.

She quit her sensible accounting job to chase her dreams and open the restaurant Bye Bye Blues in 1991, which has since won a Michelin star and the title of “Best Restaurant in Palermo”. Is it possible to be too Instagrammable? Dreamworks Koukou Cafe opened last month at Bugis+, and it’s a massive cuteness overload. It serves Asian-themed dishes like dim sum, glutinous rice, and K.B.P (code for kong bak pau), all sporting the adorable faces of your favourite Dreamworks characters. Eat Green, Eat Clean at Verde Kitchen

The term ‘eating clean’ has long been associated with the bland and the boring. On the contrary, healthy eating doesn’t mean that you need to sacrifice on flavour, and Verde Kitchen is here to prove just that.

This 32-seater establishment comes across as a humble one, with minimalistic decor and an intimate setting. Food wise, the kitchen’s philosophy is to advocate for and serve diners sustainably sourced meals. Expect locally-grown, organic, and certified produce as well as free-range meats on the menu. The fact that they cultivate some of their own vegetables cements their commitment to the cause.

We were also impressed with the waiting staff who were well-versed in the ingredients used in both the dishes and drinks (go on, ask them about Kombucha).

 

Salad

Verde Kitchen Salmon Sashimi & Pomelo Salad
Not all salads are made equal; that was certainly the case with Verde Kitchen’s Salmon Sashimi & Pomelo Salad. Piled high with crisp greens, juicy pomelo chunks, crunchy wakame, and voluptuous slices of salmon, it only took us one bite to fall deeply in love with this colourful medley of ingredients.

Diners can also rest assured that the salmon used here is sustainably farmed, certified by the Aquaculture Stewardship Council (ASC).

Looking for something a little punchier? The Green Mango & Quick-seared Tiger Prawns is set to be your new best friend. The brilliantly seared tiger prawns go swimmingly with coriander, refreshing mint leaves, and a bright dressing of lemongrass sauce. It’s one dish we won’t be forgetting anytime soon!

Mains

When it comes to the mains at Verde Kitchen, their Free-range Pulled Pork burger reigns supreme over all others.

With Verde Kitchen’s Organic Basil-crusted Glacier 51 Tooth Fish, you can instantly tell the difference in its texture and flavour.

The Marine Stewardship Council (MSC)-certified sustainably wild caught fish is firm, with a slightly creamy taste that goes wonderfully with the herbaceous basil crust and the natural thyme jus. We took a bite, and agreed in unison.

Adding local flavours to the menu is Verde Kitchen’s Malay-style Organic Lacto Chicken. To encourage healthy eating, the dish comes with a side of brown rice instead of the traditional white rice. The spicy turmeric curry has just the right amount of heat that mellows when paired with the rice. However, the organic okra is all set to keep that spice kick going if that’s something you prefer.

 

Dessert

Verde Kitchen Chia Seed & Caramelized Hazelnut Pudding

If there’s one sweet treat that is sure to leave you feeling 100% satisfied with none of that post-dessert guilt, it’s their Chia Seed & Caramelised Hazelnut Pudding. Don’t let its simplicity deceive you because this little number is flavour-packed.

We love how the toasted macadamia nuts, plump blueberries, and burst-in-your-mouth mini passionfruit spheres meld together to elevate the silky, creamy pudding through both texture and taste.

This exciting new eatery successfully achieves stunning flavours with sustainable ingredients. We only worry that we might find it difficult scoring a seat once the word is out, and legions of new fans start pouring in.

In The Pantry: Chef Jack Allibone of Bayswater Kitchen

Plucked from London to helm Bayswater Kitchen in sunnyside Singapore, up-and-coming Chef Jack Allibone’s warm nature seems to fit right in. From his food to his hospitality, Chef Jack injects sincerity and honesty in everything he creates.

We sat down with the blue-eyed British lad for a quick chat to find out how he went from wanting to be a magician to ending up in the kitchen.

 

What’s your favourite kitchen tool and why?

It’s this Japanese knife given to me 8 years ago as a Christmas present – can’t live without it, really.

What’s an ingredient that you think is underrated?

Anchovies, the salted ones in brine. They’re love to use as a dressing or you can make mayonnaise with them, serve them with lamb, chicken, or even fish. Basically everything! It has a nice umami, salty, fishy flavour that’s a lovely addition to dishes.

What’s a dish that you think everyone should know how to make?

An English roast dinner. You’ve got to roast the whole joint of meat, you’ve got 5 to 6 different types of vegetables ready all at the same time. There’s a lot of time-planning involved and it’s just really homely.

What’s the one ingredient that you must have in your pantry?

Salt. It’s the heart of everything.

The best city or country for food is…

I’d say Italy, mainly because they have such great produce there. I’ve been there a few times – to Modena, Bologna, and Rome – and they generally have really good, really simple food that are all about the ingredients. Parma ham, bolognese… yeah. [laughs]

Your favourite thing to eat in your home country is…

Sunday Roast. You should try it, it’s great!

What’s the worst cooking crime you’ve committed?

Oh I do have a story but it’s not something else I’ve done, it’s something someone else did: in the first restaurant I worked in, a customer sent a steak back twice. The guy on the grill, he just took the steak and threw it onto the deep fryer, muttered something under his breath, put it back on the same plate, and sent it out.

Name a chef whom you look up to.

It’s with this last head chef that I worked for called Gary Foulkes. I worked with him twice at two different restaurants. He just runs the kitchen very well, great palate, great technical cook as well.

An interesting fact about yourself?

When I was a kid, I’d wanted to be a magician. [laughs] But I ended up being a chef.

David Blaine was around at the time and I thought, “Yeah, well, I could do that!” But maybe not. [laughs]

Your fondest food memory is…?

Cooking with my nan when I was a kid. She was a really good cook – taught me how to bone a chicken and how to make pastry and stuff. She’s the one who got me into cooking.

If you could have one last meal, what would it be?

Probably a lasagne.

The 8 Best Brunches in Singapore

This cafe makes hauling yourself to the Central Business District on a weekend worth it, with its top-notch breakfast servings and super tasty drinks. (We are partial to the Avocado Superfood Green Platter, their seasonal donburis and their made-on-the-spot smoothies.) Despite being around since late 2015, the queues still persist but the food is worth the wait. Thankfully, you can make a reservation here.

Atlas Coffeehouse

This middle-child cafe – its older and younger sisters are the now-defunct Assembly Coffee and Lunar Coffee Brewers in Shenton Way – located in Bukit Timah consistently serves great food and fantastic coffee. It’s the perfect pitstop, whether it’s after a walk through the Botanic Gardens or you need a place to wait for your kids/spouse/friend. In claustrophobic Singapore, the high ceilings provide a much-needed breather, and the staff never stop smiling despite the crowds.

A must-try: the Summer Chicken Stew, which is especially delicious on rainy days.

The Bakery by Woodlands Sourdough

We are reluctant to trumpet this place any more than necessary: seats are few and far between, and weekend crowds start to build up at 8.30am on the dot when it opens. But it is, arguably, the best place in Singapore to go for your sourdough fix.

We love their Sunday spin on Bialys, a Polish pastry they present with chopped onions, cheddar, and cracked eggs. Another favourite is the Rye Strawberry Balsamic Brownie, a sinful conclusion to a great breakfast. No meats served here, but that’s because these guys know that bread is their forte. Go early.

We’ve been here for brunch, lunch, and dinner a few times and the guys running this place always manage to keep things fresh. Here there are starters (if you’re gunning for something new, why not try the Crab, Sweet Corn and Scallion Fritters), mains, AND desserts (we applaud the half-portion size they have for their berry-ful waffles). Eating Out in Singapore: Table Manners Every Singaporean Should Know

Manners maketh man, but sadly, dining etiquette isn’t a compulsory component in most schools. We run through the basics of eating out in Singapore with its myriad of cuisines and settings, whether it’s a glitzy Italian joint or your favourite kopitiam.

1. Wait for everyone to be served.

Eating out is a communal thing, so it’s rude if you start without everyone at the same time.  If it’s a small group of two to four people, definitely wait. In a bigger setting, like a business meal, hold off munching too, unless the host asks you to start. The best part is that this can be applied in any situation, whether you’re at a fancy French restaurant or at a zichar coffeeshop.

2. Don’t grab the wrong plate / drink

How many of us have ended up with someone else’s drink, or shuffling plates around because someone took somebody else’s while at formal Western sittings? Here’s an easy way to remember where yours are: have both your index fingers meet the thumbs on each hand, and you’ll get a ‘b’ and ‘d’. ‘B’ for bread plate, ‘d’ for drink.

3. The Lazy Susan turns in one direction only

There’s no back and forth with this rotating table at family-style dinners. The first dish should face the most senior at the table, and it spins in the clockwise direction. It’s not polite when your arms cross another’s to get to the food, so wait till the dish is in front of you.

4. Handling the soup spoon

When drinking Western soups, scoop from inside to out, and bring the spoon to your mouth (not the other way around). For Chinese soups, scoop in the reverse direction.

Show respect for cultures and customs

Make sure to leave your chopsticks across the bowl or on a rest if you’re not using them — sticking them upright in your rice bowl is a big taboo because it looks like joss sticks for the dead. If you’re eating fish, don’t flip it over after you’re down with the top half, as it is said to symbolise a fisherman’s boat being overturned, and thus bad luck. And if you’re dining with Muslims, do not pass food with your left hand.

Be neat

Throw your bones and other unwanted organic matter on the plate, not the table. Just because you’ve seen 10,000 uncles do it at hawker centres doesn’t mean it’s okay.

Club Street Social’s Lunch Menu Gets Our Stamp of Approval

Club Street Social is known for being a great place to relax, soak up Singapore’s nightlife, and…have an excellent lunch? No really, how did we overlook the fact that this popular bar transforms from classy, glamorous joint at night to vintage cafe in the day. To remedy this error, we joined the crowds from Chinatown and Telok Ayer, and hopped on down to give their delicious and healthy lunch fare a go. (Spoiler: We liked it.)

Appetiser: Beetroot and Burrata Salad

Even if you’re not a huge fan of salads, you have to try the Beetroot & Burrata Salad. All its elements are deliberately chosen to complement each other, making this much better than the usual bowl of assorted veggies, toppings, and a drizzle of dressing.

Chunks of beetroot, sweet slices of orange, and fragrant hazelnuts sit atop a bed of fluffy quinoa. The entire bowl is topped with a generous knob of creamy burrata cheese and given an addictive finish of nutty, browned butter, making it just sinful enough to be immensely satisfying. We had to force ourselves to stop eating to save space for other dishes (but I couldn’t stop nibbling on the burrata cheese!). Plus, don’t get us started on its visual appeal.

Quinoa dyed beetroot pink, eye-catching orange slices, milky-white cheese, and a tinge of vibrant green coriander makes this a feast for the eyes as well as the stomach. The whole salad is a gorgeous mix of colours, flavours, and textures that combine to make each bite even better than the last.

Sharing Snacks: Saffron Risotto Balls

Fried to golden-brown perfection, the Saffron Risotto Balls are a decadent and tempting treat. When you bite into them, the initial satisfying crunch melts into a pillow-soft mouthful of rich, saffron-infused rice.

But our favourite bit was the surprise in the middle: a core of stretchy, melty, delicious cheese. These nibbles are served with Club Street Social’s very own smoky tomato sauce; its charred, tangy flavours enhance the sweet and slightly pungent saffron.

Sandwich: Chicken Panini

For those bemoaning the lack of grab-and-go or eat-at-my-desk options, don’t speak too soon! We ordered the Chicken Panini and it was hands down our favourite dish of the day. Slices of sous vide chicken breast, sweet Roma tomatoes, earthy coriander pesto are sandwiched between slices of crunchy, light, toasted ciabatta, creating a marvellously comforting panini that showcases the beauty of simplicity.

You can tell that the panini is carefully prepared to bring out the best in the each and every ingredient. Thanks to the sous vide cooking, the chicken breast is tender and moist. The fresh tomatoes are sweet and balanced by the mellow taste of the coriander pesto. We’re ashamed to say that we spent too much time taking photos and didn’t get around to eating the panini until much later, but amazingly the bread didn’t get soggy at all and still retained a hearty bite without being overly chewy.

Overall, the Chicken Panini is everything a sandwich should be. It’s simple and comforting, with fresh ingredients which all go perfectly together to give you mouthfuls of pure bliss.

Main Course: Farro Risotto

The first thing we noticed about this dish was its unique presentation: rice coated in a vibrant green sauce and garnished with a sprinkle of fried spinach. If you’re a fan of goat’s cheese, you’ll go crazy for the Farro Risotto, which is topped with generous slices of seared goat’s cheese that’s just barely starting to melt. Made with farro instead of the usual Arborio rice, the risotto has a pleasant bite, somewhat like brown rice, that sets it apart from its softer cousins. Its beautiful green sauce is made from spinach; though it’s a little plain on its own, the goat’s cheese really lifts the sauce and brings out the veggie’s light fragrance.
