Fresh Eats: All-New in April

It’s Good Friday! What better way to spend your long weekend than having a delicious meal at one of these newly opened restaurants? This month, we introduce Dreamworks-themed food, bold Middle-Eastern cuisine, and more exciting new eats for you to sink your teeth into.

1. ATOUT Restaurant

Sausage Rolls (1)

Chef Patrick Heuberger is back in the restaurant business with the newly-opened ATOUT Restaurant. “Atout” is French for “Trump Card”, and we’re certainly hoping this casual eatery will bring success to the renown (and greatly missed) chef. Even though it’s been open for just a few weeks, ATOUT has already won the hearts of many diners. Nestled in the midst of lush plants and serving up light nibbles as well as simple sit-down meals, it looks all set to be Singapore’s new favourite mid-day hangout.

Their “Night Fury Steak Rice” features black glutinous rice in the shape of Toothless’s face, while their dim sum baskets open to reveal Po the Kung Fu Panda.

Caffe Fernet is an Italian restaurant with a refreshing concept: elegance in simplicity. It breathes new life into classic Italian flavours with deceptively minimalist dishes that are really, really, good. The key is high-quality ingredients served with just a little bit of seasoning because truly good food doesn’t need frills and fancy touches to shine. Don’t forget to order one of their classic cocktails to complement your food either. Lovers of good food, good cocktails, or both should definitely visit Caffe Fernet for modern Italian dining done perfectly right.

Like all good ramen restaurants, there are a huge selection of broths to choose from to suit all tastes. Sitting on a bed of springy noodles are mouth-watering slices of duck, duck meatballs, and the ever-present seaweed and eggs. Time to grab a pair of chopsticks and dive in!

The bar serves some great drinks as well, using only top-quality artisanal spirits in their cocktails. Pair your food with a refreshing tequila or sweet sangria for a more indulgent experience.

Eat Green, Eat Clean at Verde Kitchen

The term ‘eating clean’ has long been associated with the bland and the boring. On the contrary, healthy eating doesn’t mean that you need to sacrifice on flavour, and Verde Kitchen is here to prove just that.

This 32-seater establishment comes across as a humble one, with minimalistic decor and an intimate setting. Food wise, the kitchen’s philosophy is to advocate for and serve diners sustainably sourced meals. Expect locally-grown, organic, and certified produce as well as free-range meats on the menu. The fact that they cultivate some of their own vegetables cements their commitment to the cause.

We were also impressed with the waiting staff who were well-versed in the ingredients used in both the dishes and drinks (go on, ask them about Kombucha).

Salad

Verde Kitchen Salmon Sashimi & Pomelo Salad
Not all salads are made equal; that was certainly the case with Verde Kitchen’s Salmon Sashimi & Pomelo Salad. Piled high with crisp greens, juicy pomelo chunks, crunchy wakame, and voluptuous slices of salmon, it only took us one bite to fall deeply in love with this colourful medley of ingredients.

Diners can also rest assured that the salmon used here is sustainably farmed, certified by the Aquaculture Stewardship Council (ASC).

Looking for something a little punchier? The Green Mango & Quick-seared Tiger Prawns is set to be your new best friend. The brilliantly seared tiger prawns go swimmingly with coriander, refreshing mint leaves, and a bright dressing of lemongrass sauce. It’s one dish we won’t be forgetting anytime soon!

Mains
Verde Kitchen Free-Range Pulled Pork Burger

When it comes to the mains at Verde Kitchen, their Free-range Pulled Pork burger reigns supreme over all others.

Served with cheddar cheese, colourful coleslaw, and microgreens, the whole ensemble is presented on a toasted sunflower seed brioche bun. The pulled pork is tender and nicely-charred to give it that distinct smoky flavour, while the sunflower seeds provide that extra crunch.

Goodbye, sloppy burgers.

Verde Kitchen Organic Basil-Crusted Glacier 51 Tooth Fish

With Verde Kitchen’s Organic Basil-crusted Glacier 51 Tooth Fish, you can instantly tell the difference in its texture and flavour.

The Marine Stewardship Council (MSC)-certified sustainably wild caught fish is firm, with a slightly creamy taste that goes wonderfully with the herbaceous basil crust and the natural thyme jus. The dish comes with a side of stir-fried local mushrooms which Executive Chef Vijayakant Shanmugam claims tastes even better than those imported from Europe.

We took a bite, and agreed in unison.

Verde Kitchen Organic Lacto Chicken

Adding local flavours to the menu is Verde Kitchen’s Malay-style Organic Lacto Chicken. To encourage healthy eating, the dish comes with a side of brown rice instead of the traditional white rice. The spicy turmeric curry has just the right amount of heat that mellows when paired with the rice. However, the organic okra is all set to keep that spice kick going if that’s something you prefer.

Dessert

Verde Kitchen Chia Seed & Caramelized Hazelnut Pudding

If there’s one sweet treat that is sure to leave you feeling 100% satisfied with none of that post-dessert guilt, it’s their Chia Seed & Caramelised Hazelnut Pudding. Don’t let its simplicity deceive you because this little number is flavour-packed.

We love how the toasted macadamia nuts, plump blueberries, and burst-in-your-mouth mini passionfruit spheres meld together to elevate the silky, creamy pudding through both texture and taste.

This exciting new eatery successfully achieves stunning flavours with sustainable ingredients. We only worry that we might find it difficult scoring a seat once the word is out, and legions of new fans start pouring in.

In The Pantry: Chef Jack Allibone of Bayswater Kitchen

Plucked from London to helm Bayswater Kitchen in sunnyside Singapore, up-and-coming Chef Jack Allibone’s warm nature seems to fit right in. From his food to his hospitality, Chef Jack injects sincerity and honesty in everything he creates.

We sat down with the blue-eyed British lad for a quick chat to find out how he went from wanting to be a magician to ending up in the kitchen.

What’s your favourite kitchen tool and why?

It’s this Japanese knife given to me 8 years ago as a Christmas present – can’t live without it, really.

What’s an ingredient that you think is underrated?

Anchovies, the salted ones in brine. They’re love to use as a dressing or you can make mayonnaise with them, serve them with lamb, chicken, or even fish. Basically everything! It has a nice umami, salty, fishy flavour that’s a lovely addition to dishes.

What’s a dish that you think everyone should know how to make?

An English roast dinner. You’ve got to roast the whole joint of meat, you’ve got 5 to 6 different types of vegetables ready all at the same time. There’s a lot of time-planning involved and it’s just really homely.

What’s the one ingredient that you must have in your pantry?

Salt. It’s the heart of everything.

The best city or country for food is…

I’d say Italy, mainly because they have such great produce there. I’ve been there a few times – to Modena, Bologna, and Rome – and they generally have really good, really simple food that are all about the ingredients. Parma ham, bolognese… yeah. [laughs]

Your favourite thing to eat in your home country is…

Sunday Roast. You should try it, it’s great!

What’s the worst cooking crime you’ve committed?

Oh I do have a story but it’s not something else I’ve done, it’s something someone else did: in the first restaurant I worked in, a customer sent a steak back twice. The guy on the grill, he just took the steak and threw it onto the deep fryer, muttered something under his breath, put it back on the same plate, and sent it out.

Name a chef whom you look up to.

It’s with this last head chef that I worked for called Gary Foulkes. I worked with him twice at two different restaurants. He just runs the kitchen very well, great palate, great technical cook as well.

Jack Allibone_2

An interesting fact about yourself?

When I was a kid, I’d wanted to be a magician. [laughs] But I ended up being a chef.

David Blaine was around at the time and I thought, “Yeah, well, I could do that!” But maybe not. [laughs]

Your fondest food memory is…?

Cooking with my nan when I was a kid. She was a really good cook – taught me how to bone a chicken and how to make pastry and stuff. She’s the one who got me into cooking.

If you could have one last meal, what would it be?

Probably a lasagne.

Much like Chef Jack’s welcoming and laid-back nature, Bayswater Kitchen is where you can leave your worries at the door and unwind during your meal. The seafood here is as fresh as they come, so dive in with your hands if you really want to get up close and personal with your seafood – we promise, Chef Jack won’t hold it against you.

The 8 Best Brunches in Singapore

Breakfast is the most important meal of the day, but we can’t all wake up at 8am on weekends, which is exactly the reason why brunches were created. Sadly, they’ve also been labelled the basic b*tch equivalent of meals, associated with overpriced eggs, funky-smelling hollandaise sauce, and annoying micro-influencers trying to get that flat-lay for their Instagram.

We shortlist our favourite brunch places that capture a range of budgets, and most importantly, the way to your stomach.

The Populus Coffee & Food Co.

Populus InteriorPopulus-0023-2
This cafe makes hauling yourself to the Central Business District on a weekend worth it, with its top-notch breakfast servings and super tasty drinks. (We are partial to the Avocado Superfood Green Platter, their seasonal donburis and their made-on-the-spot smoothies.) Despite being around since late 2015, the queues still persist but the food is worth the wait. Thankfully, you can make a reservation here.

Atlas Coffeehouse

Mixed Berries Compote WaffleThe ATLAS Super-Bowl
This middle-child cafe – its older and younger sisters are the now-defunct Assembly Coffee and Lunar Coffee Brewers in Shenton Way – located in Bukit Timah consistently serves great food and fantastic coffee. It’s the perfect pitstop, whether it’s after a walk through the Botanic Gardens or you need a place to wait for your kids/spouse/friend. In claustrophobic Singapore, the high ceilings provide a much-needed breather, and the staff never stop smiling despite the crowds.

A must-try: the Summer Chicken Stew, which is especially delicious on rainy days.

The Bakery by Woodlands Sourdough

We are reluctant to trumpet this place any more than necessary: seats are few and far between, and weekend crowds start to build up at 8.30am on the dot when it opens. But it is, arguably, the best place in Singapore to go for your sourdough fix.

We love their Sunday spin on Bialys, a Polish pastry they present with chopped onions, cheddar, and cracked eggs. Another favourite is the Rye Strawberry Balsamic Brownie, a sinful conclusion to a great breakfast. No meats served here, but that’s because these guys know that bread is their forte. Go early.

Yan Ting

This place isn’t cheap – prices range from $65++ to $188++, depending on whether they are set menus and you get alcohol – but the quality is assured. After all, haven’t we all braced the queue for a dim sum place that just didn’t live up to the hype? This corner-occupying joint along Upper Thomson is perfect for those looking for something a little more substantial, like a juicy duck confit hash or a richly marinated pulled pork sandwich. Seats here are spread across long tables, canteen-style, so you don’t have to wait too long to dine here. We also love their extensive drinks menu, which features over 30 craft beers, in-house roasted coffee, and enough tea flavours to find something you like.

Fresh Fruits Lab

Brunch here is more affordable than most, with dishes ranging from $13 to $17. It’s also got the charming, laidback vibe that permeates the East Coast, which makes you feel you can relax and savour each bite. Our favourite part about the lab, though, are their delicious, cold-pressed juices.

We’ve been here for brunch, lunch, and dinner a few times and the guys running this place always manage to keep things fresh. Here there are starters (if you’re gunning for something new, why not try the Crab, Sweet Corn and Scallion Fritters), mains, AND desserts (we applaud the half-portion size they have for their berry-ful waffles). Eating Out in Singapore: Table Manners Every Singaporean Should Know

Manners maketh man, but sadly, dining etiquette isn’t a compulsory component in most schools. We run through the basics of eating out in Singapore with its myriad of cuisines and settings, whether it’s a glitzy Italian joint or your favourite kopitiam.

Serving food
Cr: upserve.com

1. Wait for everyone to be served.

Eating out is a communal thing, so it’s rude if you start without everyone at the same time.  If it’s a small group of two to four people, definitely wait. In a bigger setting, like a business meal, hold off munching too, unless the host asks you to start. The best part is that this can be applied in any situation, whether you’re at a fancy French restaurant or at a zichar coffeeshop.

Table setting
Cr: commons.wikimedia.org

2. Don’t grab the wrong plate / drink

How many of us have ended up with someone else’s drink, or shuffling plates around because someone took somebody else’s while at formal Western sittings? Here’s an easy way to remember where yours are: have both your index fingers meet the thumbs on each hand, and you’ll get a ‘b’ and ‘d’. ‘B’ for bread plate, ‘d’ for drink.

Lazy Susan
Cr: erinng.com

3. The Lazy Susan turns in one direction only

There’s no back and forth with this rotating table at family-style dinners. The first dish should face the most senior at the table, and it spins in the clockwise direction. It’s not polite when your arms cross another’s to get to the food, so wait till the dish is in front of you.

Soup spoon
Cr: marthastewart.com

4. Handling the soup spoon

When drinking Western soups, scoop from inside to out, and bring the spoon to your mouth (not the other way around). For Chinese soups, scoop in the reverse direction.

Serving spoon
Cr: www.webstaurantstore.com

Don’t double-dip

Use serving spoons for sharing plates. It’s 2018, so let’s keep our hygiene standards up.

Chopsticks taboos
Cr: tofugu.com

Show respect for cultures and customs

Make sure to leave your chopsticks across the bowl or on a rest if you’re not using them — sticking them upright in your rice bowl is a big taboo because it looks like joss sticks for the dead. If you’re eating fish, don’t flip it over after you’re down with the top half, as it is said to symbolise a fisherman’s boat being overturned, and thus bad luck. And if you’re dining with Muslims, do not pass food with your left hand.

Messy Eater
Cr: familymealblog.com

Be neat

Throw your bones and other unwanted organic matter on the plate, not the table. Just because you’ve seen 10,000 uncles do it at hawker centres doesn’t mean it’s okay.

Chope!
Cr: thesmartlocal.com

Respect the chope

Love it or hate it, the ubiquitous tissue paper at hawker centres signifying a table is reserved is here to stay. Sure, it’s annoying, and not an efficient use of space (since said diner is still queuing up for food somewhere) — but don’t be that guy who upsets the balance of things.

If you’d rather not get into a fight, why not make your reservations on this version of Chope instead?

Club Street Social’s Lunch Menu Gets Our Stamp of Approval

Club Street Social is known for being a great place to relax, soak up Singapore’s nightlife, and…have an excellent lunch? No really, how did we overlook the fact that this popular bar transforms from classy, glamorous joint at night to vintage cafe in the day. To remedy this error, we joined the crowds from Chinatown and Telok Ayer, and hopped on down to give their delicious and healthy lunch fare a go. (Spoiler: We liked it.)

IMG_0206

Appetiser: Beetroot and Burrata Salad

Even if you’re not a huge fan of salads, you have to try the Beetroot & Burrata Salad. All its elements are deliberately chosen to complement each other, making this much better than the usual bowl of assorted veggies, toppings, and a drizzle of dressing.

Chunks of beetroot, sweet slices of orange, and fragrant hazelnuts sit atop a bed of fluffy quinoa. The entire bowl is topped with a generous knob of creamy burrata cheese and given an addictive finish of nutty, browned butter, making it just sinful enough to be immensely satisfying. We had to force ourselves to stop eating to save space for other dishes (but I couldn’t stop nibbling on the burrata cheese!). Plus, don’t get us started on its visual appeal.

IMG_0212.jpg

Quinoa dyed beetroot pink, eye-catching orange slices, milky-white cheese, and a tinge of vibrant green coriander makes this a feast for the eyes as well as the stomach. The whole salad is a gorgeous mix of colours, flavours, and textures that combine to make each bite even better than the last.

IMG_0208.jpg

Sharing Snacks: Saffron Risotto Balls

Fried to golden-brown perfection, the Saffron Risotto Balls are a decadent and tempting treat. When you bite into them, the initial satisfying crunch melts into a pillow-soft mouthful of rich, saffron-infused rice.

IMG_9582 (1).gif

But our favourite bit was the surprise in the middle: a core of stretchy, melty, delicious cheese. These nibbles are served with Club Street Social’s very own smoky tomato sauce; its charred, tangy flavours enhance the sweet and slightly pungent saffron.

IMG_0215.jpg

Sandwich: Chicken Panini

For those bemoaning the lack of grab-and-go or eat-at-my-desk options, don’t speak too soon! We ordered the Chicken Panini and it was hands down our favourite dish of the day. Slices of sous vide chicken breast, sweet Roma tomatoes, earthy coriander pesto are sandwiched between slices of crunchy, light, toasted ciabatta, creating a marvellously comforting panini that showcases the beauty of simplicity.

You can tell that the panini is carefully prepared to bring out the best in the each and every ingredient. Thanks to the sous vide cooking, the chicken breast is tender and moist. The fresh tomatoes are sweet and balanced by the mellow taste of the coriander pesto. We’re ashamed to say that we spent too much time taking photos and didn’t get around to eating the panini until much later, but amazingly the bread didn’t get soggy at all and still retained a hearty bite without being overly chewy.

Overall, the Chicken Panini is everything a sandwich should be. It’s simple and comforting, with fresh ingredients which all go perfectly together to give you mouthfuls of pure bliss.

IMG_0220.jpg

Main Course: Farro Risotto

The first thing we noticed about this dish was its unique presentation: rice coated in a vibrant green sauce and garnished with a sprinkle of fried spinach. If you’re a fan of goat’s cheese, you’ll go crazy for the Farro Risotto, which is topped with generous slices of seared goat’s cheese that’s just barely starting to melt. Made with farro instead of the usual Arborio rice, the risotto has a pleasant bite, somewhat like brown rice, that sets it apart from its softer cousins. Its beautiful green sauce is made from spinach; though it’s a little plain on its own, the goat’s cheese really lifts the sauce and brings out the veggie’s light fragrance.

Grab a lunch set!

Your appetite might love the sound of lunch at the fabulously chic Club Street, but we understand if your bank account is a tad hesitant. Never fear; you’ll be able to solve the age-old dilemma of wallet vs stomach with Club Street Social’s lunch set. Order any main you like, and top up just $5 to add on a soup or salad of the day, plus a dessert and cup of coffee or tea.

MUME’s Richie Lin On Unstable Suppliers, Sustainability, and 3 Words to Live By

The conversation about sustainability in the F&B industry has been gaining buzz in Asia for some time now, with chefs getting ‘woke’ – as current-day lingo goes – to food waste, farming, and endemic(native) ingredients. Riding this wave is Bangkok’s {Re} Food Forum. A 2-day symposium, held on 19-20 March 2018, where 40 of the food industry’s greatest gather to spread the word about sustainability via masterclasses, thought-provoking discussions, and incredible dinners.

The lineup of names is truly star-studded, think Magnus Nilsson of Fäviken (you might recognise him from Chef’s Table), Thitid “Ton” Tassanakajohn of Le Du, and Richie Lin of MUME. Ranked #43 on Asia’s 50 Best Restaurants for 2017, MUME’s style of liberal yet thoughtful cooking plus Lin’s mastery of the skills – honed from his time at the renowned Quay in Sydney and Noma in Copenhagen – leave us constantly impressed, so when he sat down to share his thoughts on the sustainability movement, obviously, we listened!

MUME food

On the significance of {Re}

[perfectpullquote align=”left” bordertop=”false” cite=”” link=”” color=”” class=”” size=”22″]The fact that {Re} has come into existence is meaningful enough.[/perfectpullquote]

MUME started using local ingredients, organic, and sustainable products, because we wanted to take part and contribute to the awareness of social responsibility. With regard to {Re}…they try to create a platform for people who actually care about and would practice the topics concerned here. It doesn’t really matter what topic it is, whether food waste, local produce or diversity of indigenous ingredients. The fact that {Re} has come into existence is meaningful enough.

On his journey into endemic ingredients

Most of the restaurants that I have worked in all embraced endemic. Quay uses almost 100% Australian ingredients, and promotes natural farming by working with a lot of different farms, and they’ve even started to grow forgotten vegetables and crops. Noma is obviously another [sic] frontier. With Nur (a restaurant in Hong Kong touting local, seasonal and organic vegetables where Lin worked before opening MUME, now closed), we wanted to bring over the idea to Asia. So in almost all my career, I believe in this type of cooking. It’s just a natural thing for us, and the style of cooking evolves by what you believe in.

MUME food 1

On the farmers MUME work with to practise cooking sustainability

Even before we started the restaurant, I worked with a couple of farmers already. Tomo Lin(林中智)is probably the one that is more well-known. He not only grows organic crops, but also does sustainable, natural farming. When I was working at Nur, I came to Taiwan to source ingredients. I visited Tomo’s farm and we became friends since then. At that time, in 2014, he wasn’t supplying to any fine dining restaurants, and I’m probably the first one to persuade him to do so. Because I appreciated what he was doing, and I felt like he should be selling to restaurants.

[perfectpullquote align=”full” bordertop=”false” cite=”” link=”” color=”” class=”” size=”22″]We choose to work with small farmers because usually they are the ones willing to do things differently and care more about the environment.[/perfectpullquote]

So I asked him if he was willing to work with me, and I gave him a lot of reference on what fine dining looks like: edible flowers, shoots, etc.. He was very interested. We work with many other farmers. The problem with Taiwan’s farming is that they are all very small scale, and they grow limited items. We choose to work with small farmers because usually they are the ones willing to do things differently and care more about the environment.

We employ a guy, I-shan Wang, to take care of sourcing. We put a lot of effort in finding great ingredients that can be served simply. This is better than needing to work mediocre ingredients.

MUME food 2

On begging farmers for new things he wants but Taiwan doesn’t have

Yes, we are constantly doing that. Before we opened, believe it or not, no one was selling edible flowers. There were edible flowers- the farmers just didn’t know people wanted it.

To be honest, a couple of restaurants is not going to make much of a change. We try to set an example; bring awareness to the general public.

Now we’re trying to find indigenous produce, like the Taiwanese quinoa we are using. Indigenous quinoa is very special for me. I always associate quinoa with South America. It strikes me that Taiwan has our own quinoa with very good quality. But I can’t just serve it in a salad. Rather than creating a simple dish, I want to make it interesting. So I tell a story that, inspired by my trip to Mexico, I research the method of making masa dough, and I make tortillas out of Taiwanese quinoa. We know how to make the produce more appealing to the public.

We also try to be more diverse on the diet. If everyone eats just one thing, then everyone grows just one thing. In the long term, it’s not good for the soil. You need rotation to sustain the land. But the problem is, if the farmers rotate the crops, they cannot sell. So they grow the same crops for the whole year, because they can always sell it. If we’re willing to change our diet, they will be willing to grow more diverse crops.

MUME food 3

On suppliers and anticipating instability

We have to be flexible. The weather is changing every year. Last year was the hottest in 20 years in Taiwan. I was at Tomo’s farm two weeks ago and it was 30 degrees. Everything died. Now it should be winter, but this year barely had autumn, which means there may not be winter vegetables. We can still find summer crops available, like mangoes. That’s weird.

We design dishes with flexibility in mind. Say I’m making a salad, because there are 30 ingredients, I can use whatever available to make that dish. Protein is more stable. Regarding vegetables and fruits, we can adapt and change by weekly basis or daily basis. We can always just take out one thing, or even if I can’t get anything, we just take that dish off the menu.

[perfectpullquote align=”full” bordertop=”false” cite=”” link=”” color=”” class=”” size=”22″]We also try to be more diverse on the diet. If everyone eats just one thing, then everyone grows just one thing. In the long term, it’s not good for the soil. You need rotation to sustain the land. But the problem is, if the farmers rotate the crops, they cannot sell. So they grow the same crops for the whole year, because they can always sell it. If we’re willing to change our diet, they will be willing to grow more diverse crops.[/perfectpullquote]

On food waste and leftover experiments

Every restaurant has its own way to deal [sic] with food waste. For us, we try to use whole vegetables and whole animals. If I have a fish, we try to use the whole fish, even the fish bone. If we use a carrot, we also use the top and try to serve everything. We use the skin, the tail. Leftovers will be used in staff meal.

We [also] make our own ricotta. We hang it and we have a lot of whey. We use that whey to season stuff. Usually people just throw that away. But we see the possibility, and we incorporate the acidity into the dishes.

MUME food 4

On the potential of Taiwan’s F&B community & sustainability

I think Taiwan has a lot of potential, and Taiwan should put focus on the environmental issues. We have the agriculture, the land, and the climate. We have everything that can move toward a positive direction. Still, more than 50% of food in Taiwan is imported. It’s normal for people to purchase imported produce, and a lot of people see imported produce [as] superior [to] local produce. So there’s still a lot to do.

The only restaurant I know trying is Shoun Ryugin. I give the chef, Hieda Ryohei, a lot of respect. He’s really trying hard to showcase Taiwanese ingredients.

It’s not just about the F&B community. We need diners to support as well. Local ingredients are expensive, and not stable. First, restaurants need to be able to charge more, and have the diners accept it. Second, to be fully dedicated to using local produce takes a lot of effort in sourcing, and it’s difficult to maintain.

[perfectpullquote align=”right” bordertop=”false” cite=”” link=”” color=”” class=”” size=”22″]…we are the ones who have the ability start taking actions.[/perfectpullquote]

On who is more important: the producer, the chef, or the customer

I think the customer is definitely the most important; they are the demand. [But] you can’t change the supply if no one wants it. It doesn’t matter how hard I persuade the farmer, if he can’t make a living, he won’t do it. [And as chefs,] we are the ones who have the ability start taking actions.

MUME team

On the message he has for those who want to be chefs

Integrity. Work with the people you believe in. Bear in mind what you do would have an impact on the environment.

On 3 words to live by

  1. Fearless. Don’t be afraid to try, to fail.
  2. Integrity
  3. Love. Be able to cook with love. If you think about the whole idea you want to be a cook, it’s not just a job, it’s a passion, it’s a career, otherwise you won’t be successful. It’s love for the profession you do. You have to cook with love, just as you cook for your family.
