In The Pantry: Chef Mok from Shang Palace

An imagination that dreams up buns masquerading as mushrooms yet finds comfort in the humble Hong Kong milk tea. Youthful features that surprise you once you find out about his full-grown children. We sit down for a round of quick-fire questions with the man of many subtle contradictions, Chef Mok Kit Keung — a trailblazer in Michelin-starred Chinese cuisine and newly appointed executive Chinese chef at Shang Palace, Shangri-La Singapore — to talk about his favourite restaurant in the world, which sauce holds his heart, and more.

What’s one ingredient you can’t live without?
For me, sauces are the most important in the kitchen, whether it’s XO sauce or sweet and sour sauce. But if I had to choose just one, I’d say oyster sauce is an absolute must.

What’s your favourite kitchen tool and why?
Spatula for stir-frying.

What’s an ingredient you think is underrated?
None. If people are raving about it, there must be something good there.

What’s a dish everyone should know how to make?
Fried rice. I believe that Chinese people need to know to make fried rice. In fact, I almost always eat rice for all three meals.

What’s your favourite restaurant in the world?
Shang Palace! [laugh] But if I had to choose, it would be L’Abeille or La Bauhinia at Shangri-La Paris.

What’s the best city or country for food?
Hong Kong, hands down.

What’s your favourite thing to eat in your home country?
Seafood! It’s always fresh–live–in Hong Kong.

What’s your comfort food?
Dim Sum and Hong Kong Milk Tea.

Chic restaurant, bar, and coffee joint ’63Celsius’ opens at Paragon!

It’s always a delight to discover new eateries that serve quality food and pay attention to customer comfort. That’s exactly what 63Celsius encompasses. You might be familiar with 63Celsius’ first outlet at Asia Square, catering largely to the office crowd. Some notable mentions on their menu include the fresh and savoury Prawn & Oyster Pasta, and their refreshing concoction of the popular Chicken Rice. The new outlet at Paragon incorporates the same versatility, but with a whole new level of class.

63Celsius definitely has the elegance to fit right in at a sophisticated location like Paragon. With dim lighting and an intimate dining atmosphere, this is a sweet spot for date nights. 63Celsius stands out with its unique architecture and rustic yet modern design. Golden brown and bronze hues give warmth to the restaurant, making you feel comfortable and right at home. It’s also a great place to chill with a group of friends or coworkers over their diverse and nouveau range of wines and cocktails!

To start, we had a 63Benedict—63Celsius’ very own spin on the classic Eggs Benedict! Two eggs poached sous-vide, served with smoked ham and sourdough bread. The dish is also embellished with fresh tomatillo flakes and drizzled with Aioli sauce. We loved how the egg was so silky, runny, and ultra soft – with a yolk that comes oozing at the slightest touch, it’s absolutely tempting. Enjoyable as a starter, this egg, crispy bread, and tangy Aioli sauce combo kept us anticipating for the other dishes to come.

63P-Crab-&-Cheese-Omelette

The artistic-looking Crab and Cheese Omelette came next. Infused with Parmesan cheese and shredded crab claw meat, every bite of this creamy cheesy wonder is surprisingly delightful. We especially loved the fluffiness of the omelette, and the chewy chorizo chunks also made for an enticing contrast to the soft cheese omelette. While some places overdo it with the cheese, 63Celsius gets it just right from the get-go.

Crab meat

A dish that truly stood out was the Crab Meat Pasta. Tantalisingly light and stringy spaghetti was smothered in extra virgin olive oil, garlic, and chili, which gave the dish a very piquant taste. For those who can’t handle spicy food, there is a mild option available. We found the mild alternative to be the perfect level of heat with a pleasant burst of flavour that lingers.

For those who love a little indulgence, the artisanal Our famous Lobster Pasta is a signature dish that’s perfect for two. The fresh San Marzano tomato sauce and garlic provided richness and zest to the supple spaghetti. Not forgetting the Half Lobster, which had a nice briny tang!

63P-Ribeye-Steak-&-Frites

Who doesn’t love a good ol’ steak? At 63Celsius, the Argentinian Ribeye Steak and Frites is a must try. Fair warning though–a bite out of the succulent beef slices and the crispy shoestring fries will get you HOOKED. For that extra oomph, spread the peppercorn butter and let it melt onto the steak slices before you savour a bite. 126 Wen Shi Dao

For affordable roadside dim sum that’s just as good as fine-dining restaurants, 126 Wen Dao Shi is a clever play on words and numbers (in Cantonese it’s Wan Dou Sek). Started in 1985, it has been faithfully serving delicious dim sum at 126 Sims Avenue to a large and growing crowd of regular customers. It has since added another outlet at Boon Keng under its name. Be sure to come during off-peak hours as seats are hard to get!
