Oodles of Noodles: Best Noodle Shops in Singapore

Some call these carb-heavy dishes sinful, I say it’s a staple. You can’t eat clean with this (we haven’t found an ideal zucchini pasta yet), but it’s worth training dirty for these bad boys. As a dedication to National Noodle Month in March, here are some of our favourite noodle spots around the island.

J & J Special Beef Noodle

Towards the end of the food haven that is Old Airport Road Food Centre lies a stall brewing fragrant, thick, brothy bowls of goodness. The braised beef brisket noodle soup is a standout, with its warm, full-bodied, and blended with spices to give it a hearty flavour. Uncle William serves up good meat alongside kind smiles — it’s hard to ask for anything more. Unless you want wagyu noodles or rice, which he has on the menu, too.

 Morsels Firecracker Pulled Pork Pasta
Morsels

It’s always a treat to dine at Morsels, but one of the most memorable dishes we’ve had here is the “Firecracker” pulled pork pasta. The pork is marinated for 24 hours, then braised for another three, so you know it’s juicy and flavourful. The habanero pesto is nestled in the curves of the shell pasta, so with each bite, you’ll be grabbing your glass of water, and craving your next mouthful. Don’t worry if you can’t take the heat — each bowl comes with a dollop of sour cream to ease the burn.

JB Ah Meng

This amazing zichar restaurant is always crowded, and once you have their “san lou bee hoon” (or ‘three-storey noodles’), you’ll know why. Every strand is coated with wok hei, and the charred bits are a great textural contrast to the more moist noodles inside. Fried with shrimp, egg and squid, it is an absolute must-order if you can brave the crowds.

Sumo Bar Happy

This hole-in-the-wall ramen bar was our most visited restaurant last year and we are ecstatic they are finally on Chope so we can continue our streak without the anxiety of not getting a seat. The beef ramen is great (as are the free flow onsen eggs), but my personal favourite is the sashimi mazemen. The fish is great (how can you complain when there’s otoro, ikura and akami among others?), but accompanied with the chilled yuzu noodles and ponzu sauce, and this dish is the most addictive, refreshing thing you can have on a hot day. Wash it down with one of the playful cocktails on offer.

Boon Tong Kee Kway Chap Braised Duck Roasted

Not to be confused with the chicken rice shop of the same name, this stall in Zion Road Food Centre serves braised, tender duck meat with two great chilis. But the kway chap is cooked to perfection, the Chinese equivalent of al dente, and the broth is a soothing herbal blend sure to complete the meal. Go early to avoid the queue.

A Noodle Story

There’s always a long line here for these bowls of “Singapore-style ramen”, but it’s no surprise when the food deserves its two Michelin Bib Gourmand awards. Brave the wait, and you’ll be rewarded with melt-in-your-mouth char siew, an Instaworthy (and tasty) potato-wrapped prawn, a soy sauce-infused onsen egg and crispy Hong Kong-style wontons, served on top of a bed of springy noodles. There are only 200 bowls on offer for lunch though, so get there quick.

Above and Beyond

As the name suggests, this TST mainstay at Hotel Icon is indeed ‘above and beyond’ in terms of location and dining experience! To start, savour on the Smoked Egg with Oolong Tea Leaves and Black Truffles, followed by their Steamed Garoupa Fillet with Egg White in Superior Chicken Broth: the chicken is soaked in a hot broth with freshly caught Garoupa and is simmered for 12 hours.

Our fan fave, though, has to be the Claypot Rice with Chinese Preserved Duck and Sausages (think poached duck pieces on top of piping-hot rice, giving the meat a firm-yet-tender texture). Above & Beyond truly spoils us when it comes to dishing out beautiful views and delectable dishes.

Boasting a clean, elegant, and relaxed ambience, the space is designed by world-renowned architect and designer, Paola Navone, and reflects the essence of COMO Cuisine’s offerings.

Here, you’ll get exposed to a myriad of contemporary flavours. The restaurant’s menu brings a light touch to the big flavours of the region, reflecting Singapore’s heritage as a culinary melting pot. Generous in flavour and quality, the refined and modern fare amalgamates ingredients and techniques from different regions to produce something new and unexpected.

Also located in the hip and trendy Dempsey enclave is Provisions, a 1,600 sq ft space serving up comfort food on skewers, claypot rice, and bespoke Asian-inspired cocktails. Set in an industrial-chic space with high metal chairs, wooden fixtures, and low-hanging warm fluorescent bulbs, the ambience here will remind you of the charms of yesteryear.

Provisions is an ideal dining destination for groups as communal dining is encouraged here; it was his love for bonding with family and friends over food that sparked Singaporean Chef/ Owner Justin Foo to open this place.

While they serve humble, local dishes, the chefs at Provisions are certainly not taking their craft lightly. A great amount of emphasis is placed on the origins and quality of the ingredients, with a majority hailing from the Southeast Asian region. Menu highlights include the Seafood Rice and a decadent Oyster & Uni Rice, which brings to the table two of the most amazing and rich flavours of the sea. Finally, finish your meal with tipples from their well-tended cocktail bar; the inventive cocktails are tailored to your tastes and preferences, and infuse a blend of Asian herbs and spices.

Former Executive Chef of Michelin-starred restaurant Bacchanalia Ivan Brehm is creating waves in the dining scene yet again with the opening of Nouri, a restaurant serving up ‘crossroads cooking’. Inspired by the shared common traits of different cultures across the world, the fare here aims to build community through a shared experience – dining communally and connecting with the chef and other diners.

Nouri will be open for both lunch and dinner, offering a Teishoku-style a la carte menu and a quick service 5-course tasting menu ideal for work lunches. For dinner, there are two tasting menus, priced at S$140 for 5 courses, and S$170 for 7 courses.

If you’re looking to up your knowledge about booze, then the restaurant’s adjacent bar’s beverage programme will stand you in good stead. A certified sake sommelier and a trained bartender, Matthew will be conducting programmes which will expose enthusiasts to an extensive sake list and Asian-inspired cocktails, created to reflect the unique heritage of our region.

Part of Blue Lotus Concepts International that launched the award-winning flagship Blue Lotus Chinese Eating House in 2013, this Grill House is a high-energy dining establishment which doles out dynamic, avant-garde Chinese cuisine marrying traditional Chinese flavours and essences with Western culinary techniques. Here, you’ll find remixed presentations of classic comfort foods such as a Chicken Rice Paella, Pomelo Chilli Crab La Mian, and a Hot Stone Truffle Pork Lard Rice, all cooked sans added MSG.

As for the space, this sprawling 2,133 square-feet establishment has an open kitchen, and a signature 6-seater chef’s table to play host to regular happenings such as a “Chef for a Day” experience. Patrons will get to work with the Grill House team on a theme dinner in which the organizer plays host and cooks up three dishes with the help of the full kitchen, as does the restaurant’s team for a full table of friends.

Chef Umberto Bombana of three Michelin-starred 8 ½ Otto e Mezzo fame recently unveiled his newest addition to Hong Kong’s culinary scene—Octavium. Unlike Chef Bombana’s other Central hotspot 8 ½ Otto e Mezzo Bombana, Octavium features a more intimate setting, and more simplified, yet creative menu. Must-try highlights on their degustation menu have to be the Homemade Sardinian Gnocchi with Traditional Pork Ragout and Castelmagno Cheese as well as the Grand Cru Chocolate Soufflé with Hazelnut Gelato. The former boasts a rich and cheesy sauce that gives the gnocchi a silky, smooth texture whilst the latter offers a delicious molten centre and a light, springy exterior—pure chocolaty decadence from the inside out.

Japan Food Town is celebrating their first year anniversary with a 1-for-1 promo!

First up was this glorious, immaculately-plated Shokado-bento from TAKI. The bento is a treasure trove of classic Japanese dishes such as tamago, yakitori skewers, and thick slices of sashimi. The chawanmushi that came with the set was silky smooth, bouncy, and had a melt-in-your-mouth texture that we couldn’t get enough of.

At TAKI, diners can get acquainted with a one-of-a-kind dining experience. Called “Kuzushi-Kappo”, this new branch of Japanese cuisine involves adding a modern and casual twist to traditional Japanese dining, using fresh and premium ingredients. Originating in Kyoto, it is fast gaining worldwide popularity.

Next, our taste buds were treated with this simple yet absolutely delectable stuffed egg omelette at Osaka Kitchen. With the head outlet in Tokyo recognized as a Michelin Bib Gourmand restaurant in 2016, you know you’re in good hands here. Sit at the counter and watch the chefs whip up your meal, while you dig into teppanyaki dishes fresh off the flat iron top.

Called Tonpei Yaki, this dish features a crepe-like omelette that is stuffed with chopped pork belly strips and rolled into a fluffy egg pillow. Prior to serving, the chef adds generous amounts of mayo and okonomiyaki sauce. We absolutely loved this – the saltiness of the okonomiyaki sauce perfectly balanced the sweetness and creaminess of the mayo, and together with the fluffy egg omelette, it was an explosion of tastes and textures.

Beef takes centre stage at Japanese hot pot restaurant Nabe Seizan, opened by the same chef behind 2-Michelin starred restaurant Seizan in Tokyo. What differentiates them from other hot pot restaurants is their soup stock. Made with 100% premium bottled water, the soup is prepared with a unique blend of kelp, kombu, bonito, and tuna, with absolutely no added MSG.

With a stock so pristine, there’s no need for dips and sauces – all you need is a good couple of swirls of the beef in the boiling stock and consider yourself sorted! The natural essence of the beef is meaty and tender, coming through beautifully as it cooks. The broth also imparts a slight umami to the beef, adding new dimensions of flavour that you wouldn’t have thought possible. Simple, yet oh-so-amazing.

At Inaniwa Yosuke, a restaurant specializing in handmade udon noodles, the beauty lies in the simplicity of its dishes. We tried two versions of the noodles: one chilled and the other in hot broth. The noodles in the Kake Udon were steeped in a steaming vinegary broth, while the Zaru Udon came chilled, with 2 dipping sauces.

To prepare the chilled udon, the chef boils the noodles for 2-3 minutes, rinses them twice in cold water to stop the noodles from cooking further, before skillfully pulling it into a neat bundle. The udon is then served with a smooth sesame dip and a soy sauce that has hints of wasabi. Soft, chewy, and silky, the noodles were truly remarkable, with the wasabi adding a punch to every bite.

Yakiniku beef lovers will rejoice at the sight of the premium meats served at Yakiniku Heijoen. Here, they treat their beef like fine wine, only procuring top quality Wagyu beef varieties from all over Japan.

We had the Deluxe Heijoen Kalbi which features Japanese beef carefully sourced from black-haired cattle. Thin, beautifully sliced beef are presented to you at the table, which a waiter later proceeds to help you cook them to perfection. Buttery with an almost mellow milky flavour, the beef is moist, tender, and has an astoundingly melt-in-your-mouth quality that you won’t soon forget. The marbling of the beef fat adds a level of complexity to the otherwise plain meat. Despite the simplicity of having it gently cooked over a hot grill, the nuances of flavours is anything but simple.

Beef buffs will also be able to sample top-notch Nozaki beef from Japan at Yakiniku Heijoen. Nozaki beef is an A-5 grade meat, the highest out of 5 levels, and is sourced from cows which are taken care of under a thorough fattening management. This gives the meat an excellent flavour, while not being overly rich.

Sushi takes a creative spin at SABAR, a restaurant specializing in all things mackerel. Using top-quality mackerel from Aomori, the Assorted Saba Sushi comes with saba cooked in 3 ways – Aburi, Vinegar, and Grilled. Rolled into a compact oval shape, the rice grains used are from Yamagata prefecture and have a texture reminiscent of those used in Chinese rice dumplings.

All of us couldn’t stop raving about the Shime Saba which had a slight tang imparted by the vinegar and salt marinade used. If there’s anything I would come back for, it would be for the vinegar mackerel sushi, hands down.

Takewaka opened his first shop over 3 decades ago in Tsukiji, the biggest wholesale fish and seafood market in the world. Here, every piece of sushi is handcrafted by experienced and skilled chefs, using the freshest catch of the day.

The interior of Tsukiji Sushi Takewaka is simple and understated with two kinds of seatings – floor and counter. Upon entering the restaurant, we promptly plopped ourselves onto the high stools and watched in amazement as the sushi chef nimbly assembled our sushi platter. We had the Tsukiji, a platter of authentic Edomae-style sushi that came with a variety of nigiri sushi. Fresh and clean-tasting, it didn’t take long for us to wipe the plate clean.

Rice is usually thought of as the supporting role in a meal, or as a mere accompaniment to meats and vegetables. However, a meal at Bonta Bonta will change your mind about the humble rice grain. Here, the rice is selected by a rice sommelier and processed to the highest standards to qualify as Kinmemai. It is moist, fluffy, and has a slight buttery taste, making it an excellent base for rice bowls such as the Salmon Oyako Don that we had.

The Salmon Oyako Don was a stunning sea of orange – think thick cuts of salmon sashimi, aburi salmon, and beads of fish roe crowning a bed of warm Kinmemai rice. The chewy rice grains balanced out the richness of the fatty salmon while the fish roe added a pop of umami to each bite; this was truly a bowl of decadence.

Behind the Scenes with 2 Michelin Star Shisen Hanten!

Culinary genius and two-Michelin star chef Kentaro serves up phenomenal Sze Chuan cuisine at Shisen Hanten, a restaurant he affectionately dubs his ‘baby’. It’s the only one out of Japan, and it has a plethora of flavourful, mouth-watering (and numbing!) delights on offer! I’ve stepped behind the scenes to watch chef Kentaro work his magic, and you, my lucky reader, gets to join me!

First up: Stir-fried Boston Lobster with Chilli Sauce

The Boston lobsters are bought live and kept in a tank in the restaurant, so expect fresh lobster meat instead of the standard frozen fare! He starts off by gently coating both halves of the lobster in flour.

He then drops them into a wok of hot oil, swirling the wok gently and giving the oil a good stir to redistribute heat. The lobsters are removed in less than a minute.

Chef Kentaro then mixes in chili bean paste, tomato sauce, egg, garlic, ginger, onions, and vegetable oil and a little bit of water to form a thick, tasty broth. The briny crustaceans are then dropped in the mix.

They’re given a quick toss in the wok to soak up all the goodness of the sauce.

The lobsters are then served with mantou (fried Chinese buns) so you can mop up the delicious sauce and savour it even when you’re done with the lobster! The crustacean was fresh, succulent, and perfectly cooked, and even reminiscent of Singapore’s signature Chili Crab with its tangy, sweet, spicy and incredibly comforting taste.

Next up was ‘Chen’s Mapo Doufu’, stir-fried tofu in hot Szechuan pepper-flavoured meat sauce!

Chef Kentaro starts by adding dried chili, black beans, bean paste and a scoop of chili oil into an oiled wok.

He then adds in minced pork, and gives the wok a quick stir.

The tofu (that had been simmering in a wok of boiling water, along with a pinch of salt) is then added to the spicy sauce.

In goes some soy sauce, a generous amount of pepper, scallions, and finely chopped onions.

He gives it final stir with a touch more water, and there we have it…

Silky, soft, spicy perfection! The sauce was smokey and perfect with a bowl of rice, and had just the right amount of mouth-numbing kick. By far the best mapo tofu I’ve ever had.

I’ve had the pleasure of trying out their other goodies too, like their Foie Gras Chawanmushi with Crab Roe Soup. The chawanmushi base was silky and soft, and the taste of foie gras was distinct yet delicate – it complimented the dish perfectly without being overwhelming. The entire thing was topped with a phenomenal crab roe soup – slightly thick and viscous, quite like the consistency of shark’s fin soup, but filled with succulent chunks of crab meat and the umami flavour of roe. I wanted to lick the bowl clean – it was THAT good!

Duck Shisen Hanten

Next up is the wildly popular London Roast Duck,. You’re not going to believe what I’m about to tell you, but I assure you that it’s true: the London duck they served at Shisen Hanten was on par with the famous ones you can get at Goldmine & Four Seasons in London itself. Hear me out – I’ve never had duck as good as the ones I’ve had in London in my 23 long years in Singapore, so I wasn’t really expecting much (to be perfectly honest with you), but one bite took me right back to frolicking about under grey London skies. Slightly crunchy, crisp skin, tender and perfectly spiced meat, and an amazing explosion of flavours and textures. SO DELICIOUS. I was reaching for the sharing plate so often that I decided to just claim the entire thing as my own (after making sure my dining companions didn’t want any more, of course).

Fish Shisen Hanten

The Wok-Fried Turbot Fish with Shishito Peppers was fresh and tender, served fried and swimming in a delicious broth filled with green chili, bean sprouts and shishito peppers for a nice mouth-numbing kick. The broth was delicate and slightly spicy (and so good I decided to slurp some like soup after a while – I’m not the most glamourous dining companion, I admit) and perfectly highlighted the sweetness and freshness of the fish.

There is no better way to finish off a hearty meal than with a light, refreshing dessert – and the Cold Almond Pudding hits all the right notes! Silky smooth and slightly milky, just the thing you need to cool yourself down after a spicy, hearty meal.

Trust me when I say that the Singapore Michelin Guide was right when they bestowed Shisen Hanten with 2 Michelin stars… It really doesn’t get any better than this!

Garage Bar

These days it seems like every corner harbours yet another craft brewery enmeshed in Sai Ying Pun and Soho. Fear not, it’s not the same scene in Mong Kok. At Garage Bar, chill out amidst loungers sprinkled between two vintage Citroën vans, one from 1966 and the other from 1972.
