The flavours of the chicken rice with chilli sauce and the taste of sambal, otah, and Nasi Lemak are unmistakable and, dare we say it, endearing.

If you’re familiar with bruschetta, you’ll know to expect a slice of grilled bread rubbed with garlic and topped with freshly chopped tomatoes and olive oil. At Uncle Kiisu, however, you’re treated to a localised take on the Italian favourite: their Mentaiko Cheese Bruschetta is served as a crispy you tiao or dough fritter that’s doused over with sharp mentaiko cheese and a dollop of gleaming ikura roe. Salty with a whole lotta crunch, this quirky creation is definitely worth a try.

Uncle Kiisu’s chawanmushi will have you forgetting the traditional ones in no time! Their version of the steamed egg custard is filled with hotate (scallop) chunks, and a truffle-infused jelly shaped like a magical unicorn sits atop an overflowing pile of ikura roe. Talk about indulgence! It’s almost too beautiful to dig into but trust us: the best way to enjoy this thing is to mix everything together and have it one bite at a time.

Love something with a kick? You can’t go wrong with the Sambal Kuro Ribs. Making this bad boy goes a little something like this: take a slab of Iberico pork ribs and steam-bake it overnight in a sambal marinade. Right before serving, buah keluak is lathered all over and torched to give it that nice, aburi char. Juicy and robust, this massive platter is enough to satisfy your fiery cravings, that’s for sure!

Wok hei, wok hei, and more wok hei! We can’t praise Uncle Kiisu enough for the MTK by Aunty M, a plate of mousetail noodles that’s wok-fried to perfection in their secret concoction of spices. Every mouthful gives you an explosion of flavours – the savoury century egg chunks, fresh minced prawn bits, and tender pork slices – and they tempt you to dive in for more.

Expect to be served with local-realness as their dessert on the menu hits a little closer to home. The Kiisu Muah Chee is given a Japanese treatment, flavoured with matcha powder, black sesame, and peanut powder. We were lucky enough to try the yuzu-flavoured one and it’s definitely something we’ve not had anywhere else! Pillowy and simple, this dish is just what you need to end a flavour-packed meal.

Just a heads-up, the menu varies each day according to the chef’s preference. However, we can assure you that the dishes will not disappoint you! The salty, musky, eel goes perfectly with the shiso, whose minty and refreshing flavour balance out the rich unagi. Another delicious treat is the Sakura Ebi Kakiage Ponzu Dashi. The flavourful fritters are filled with sakura shrimp and seasonal vegetables, complemented by the tangy undertones of the ponzu dashi.

Dessert is a decadent and luxurious affair. Aptly called “Mount Flow”, your sweet treat comes in a form of a soft and light milk lava cake with fragrant Shizuoka melon sorbet. Its flavour profile is feather-light, floral, and delicate – just like how you’d feel if you were having a picnic in the gentle breeze at the foot of Mount Fuji.

7 Dishes to Try at Ramen Revolution 2018

Calling all ramen fans! Slurp up all the chewy, springy noodles and umami-filled broth you can manage at this year’s Ramen Revolution. Feast on new and adventurous ramen flavours, premium ingredients, and a host of different styles – all for just $10 per bowl! Of course, you’ve got limited stomach space, so you’ve got to be selective about what you eat.

Here are the 7 ramens we’re most looking forward to trying:

1. Kiramekino Shiosoba

The first things on our list are, of course, the stalls that came in all the way from Japan – especially if they’re in the Michelin Bib Gourmand. With very simple toppings and a clear broth, Junk Story’s Kiramekino Shiosoba doesn’t look like much. Don’t judge a soup by its colour though, because their delicious broth is what earned them the Bib Gourmand. The secret ingredient? Hamaguri clam, which gives the broth a layer of flavour that reminds you of the refreshing, salt-tinged sea air.

2. Tori Paitan

Most of us know and love tonkotsu ramen for its rich, bracing broth, but it’s about time you tried its chicken-based cousin, paitan. Paitan is so creamy and thick it almost looks like gravy, and every mouthful is bursting with an intense chicken flavour. The paitan ramen you’ll get at Ramen Revolution is from Men Dokoro Wakamusha, and is made by simmering whole chickens so that the broth is full of collagen and chicken-y goodness.

3. Truffle Ramen

You won’t be able to resist the earthy, fragrant tones of truffle wafting from this stall. Kanshoku’s truffle ramen isn’t just ramen with a bit of truffle oil splashed on top. Every bit of it, down to the last noodle, is infused with truffle. They also use Hakata ramen, which is thinner than regular ramen, meaning a generous truffle-to-noodle ratio that hits the spot in each and every bite. Pair that with the light charring on their blow-torched pork chashu for a dish that’s nothing less than addictive.

4. Ebi Tsukumen

Step out of your comfort zone and try a bowl of tsukemen. Instead of having the noodles and broth in the same bowl, you dip the noodles into a separate bowl of sauce so you can get your ramen fix even on a hot day. The Ebi Tsukumen by Ebi-Tori Menzo is a seafood-lover’s dream come true, with a thick and flavourful sauce made from boiling whole prawns. For some added intrigue, the sauce is Italian-inspired as well, and you even get a piece of bread to complete the European feel.

5. Extreme Black Tonkotsu Ramen

With everything dyed jet black, this is probably one of the sexiest bowls of ramen we’ve ever seen. Its intense colour comes from squid ink and bamboo charcoal, but don’t think they’re just there for the looks! These special ingredients also give the tonkotsu broth a deep, intense flavour, and the charcoal is packed full of minerals as well! And have we mentioned that their noodles are hand-made from scratch every day?

6. Grand Tonkotsu Ramen

Get ready for luxury in a bowl! So Ramen’s Grand Tonkotsu Ramen lives up to its name, with generous slices of three cuts of pork: braised pork cheek, braised pork belly, and of course, chashu. Their black onion sauce is a topping you never knew you needed, fragrant and aromatic so the ramen isn’t too heavy. Even the thin hosomen noodles are made from premium wheat flour!

7. Jiro Style Aburi Chashu Ramen

If you haven’t already tried Jiro style ramen, then it’s high time you did! Named after a shop called Ramen Jiro, this style sparked its very own ramen revolution in Japan, with its very own fan base – the Jirorians. It’s a mega-sized serving, with a huge pile of veggies and meat, finished with a heaping stack of grated garlic. A must-try for the strong of gut, Jiro-style ramen packs quite a punch!

The Japanese restaurant with a contemporary French twist in Causeway Bay

 Located at the heart of bustling Causeway Bay, La Bombance is famous for its sumptuous kaiseki experience that melds a variety of cuisines together. The original Tokyo restaurant has been awarded a Michelin star for a whopping nine consecutive years and this standard carries through to the Hong Kong outpost.

Like any good kaiseki meal, you can bet on a series of beautiful dishes created using fresh seasonal produce. But if you’re expecting the old-school version, think again! La Bombance’s menu features traditional classics with a subtle French twist and each mini work of art is elegant without being too pretentious.

Charcoal Grilled Dried Hokkaido Kinki Set

We recommend heading down during lunch if you’re pressed for time or lack the stomach space for 10 courses. Opt for the Charcoal Grilled Dried Hokkaido Kinki Set – gentle whiffs of this feast hit your nose as you exit the elevator to La Bombance – and savour a fish that’s delicately crispy on the outside with firm flesh within. Each order comes with a slew of the usual sides including Japanese rice, miso soup, and dessert. For a touch of luxury, indulge in the Steamed Egg Custard with Perigord Truffle; the contrast between the silky soft custard and the crunch bits of rice sprinkled on top is a real treat.

The Mini Kaiseiki Set is another crowd favourite. Designed to reflect the seasons, this is six courses that taste and look amazing. Keep an eye, or tastebud, out for the sauces. Chef Okamoto brings the French sensibility for perfectly-balanced, complex sauces to an otherwise traditional Japanese spread. It’s these nuances that take La Bombance to another level.

During the day, the restaurant is awash in light, streaming in from the full-height glass panels, all the better to bring warmth to the wooden touches and modern elements decorating the space. With both world-class kaiseki and breathtaking views of Victoria Harbour, La Bombance is nothing short of spectacular.

How to eat yakitori and the best places in Singapore to enjoy them

One of the more popular foods in Japan, yakitori is skewered chicken grilled over a charcoal fire. You’ve probably eaten them before, but how much do you know about these tasty morsels? It’s time to brush up your yakitori know-how!

 

What is Yakitori?

There are many different types of yakitori, made using various parts of the chicken from the thigh to the skin. After grilling over the open fire, they are usually seasoned with two kinds of seasonings: tare sauce and salt. Tare sauce, a thickened and sweetened soy sauce with a stronger flavour profile, is heavier on the palate. Shio (salt) seasoning, on the other hand, allows the taste of the meat to shine through.

 

Yakitori Condiments

To flavour your yakitori, you can choose from a range of unique Japanese condiments which can be usually found on the tables of yakitori restaurants. For some heat, go for the Shichimi Togarashi, which is a powdered mix of seven different spices such as chilli, mustard, and sansho pepper, made from ground sansho peppercorns. To add some tang, try the umeboshi, a very sour paste made from salt-pickled Japanese plums.

 

How Should I Eat Yakitori?  

To fully savour the flavours of yakitori, start eating meats which are more lightly seasoned before working your way up to those which are heavier tasting. To get an authentic Japanese experience, grab a handful of those skewers before chomping the meat straight off the stick. Messy but oh-so-good. And, when you’re finished eating, place your skewers into the cup/container provided. You will find them on every table!
