Types of Chicken Rice and Where to Eat Them

A trip to Singapore wouldn’t be complete without a taste of Singapore’s national dish – Hainanese Chicken Rice. There’s just something incredibly satisfying about digging into this simple dish of chicken and fragrant rice that has captured all our hearts.

Sadly, not all chicken rice dishes are created equal. In fact, there are quite a few different spins on this seemingly basic dish. From the dish in its most original form to creations like chicken rice risotto, here are Singapore’s many types of chicken rice, and places to try them.

The Original Singaporean-Style Chicken Rice

How it’s done:

The original version of chicken rice involves steeping chicken in boiling water and blanching until fully cooked. Soak it in cold water immediately to cool it down so the meat doesn’t continue cooking, but remains soft and tender. Instead of just water, the rice is cooked with chicken stock, chicken fat, pandan leaves, ginger, fried garlic and shallots. This myriad of aromatics is what gives the rice its distinct, complex fragrance that has taken the nation (and the world) by storm.

While seemingly simple, this dish is hard to perfect. Some places in Singapore however, have managed to fine-tune their recipes, attracting throngs of people hungry, eager customers daily.

One of the most popular Hainanese Chicken Rice stalls in Singapore, they’re known for their incredibly tender poached chicken and heavenly rice. According to Anthony Bourdain, the rice is “exceptionally fragrant and flavoursome” and “delicious even on its own”.

The owners don’t just sit back and bask in their glory either! Constantly improving and perfecting their already-amazing recipe, they’ve managed to rack up multiple awards over the years, including a Bib Gourmand. So, if you’re hankering for a plate of their chicken rice, be prepared to queue for it!

More Local Favourites

Other common renditions of chicken rice you’ll be able to find in Singapore are Soy Sauce Chicken Rice and Roasted Chicken Rice.

Soy sauce chicken rice is by braising chicken a soy sauce mixture. This way, the meat has the tenderness of poached chicken with the sweet and savoury flavour of soy sauce. Roasted Chicken Rice, as the name suggests, is traditionally made by roasting the chicken in a wood-fired brick oven. The fat drips off and caramelises, giving you crisp, crackly, and deliciously addictive skin.

Besides the usual sliced chicken and flavoured rice, this popular local dish also comes in the form of rice balls! Similar to Japanese onigiri, chicken rice balls are made by packing and shaping steaming hot chicken rice into spheres and then serving with sliced chicken. They’re not as widespread as your usual chicken rice, but we’ve found some shops that serve chicken rice balls!

A set meal here includes two tennis ball-sized chicken rice balls, Hainanese steamed chicken, and braised pork belly. Wash it all down with a bowl of herbal tau pok soup that’s hot and peppery, reminiscent of bak kut teh.

At Restaurant Labyrinth, you’ll find chicken rice, but without chicken and rice. Say what? Chef-Owner Han Li Guang has given our local delight an avant-garde spin by extracting the essence of chicken rice and then packing the rich broth into a punchy cube with a texture resembling tofu. It is then served with soy sauce, spicy grated ginger, chopped spring onions, and slivers of cucumber.

Your Guide to Local Kuehs

An irreplaceable part of any Singaporean’s diet, kuehs are the ultimate crowd-pleaser. That’s mostly because there are so many, there’s got to be at least one you like. To all the kueh fans out there, here’s some good news: you can learn to make your favourite local kuehs at the Singapore Food Festival! Before signing up though, let’s take a crash course on some of the most popular local kuehs.

Malay/Nyonya Kuehs

Sweet and fragrant, Malay and Nyonya kuehs are one of Singapore’s most iconic foods. The three main ingredients are pandan leaf, glutinous rice, and coconut. You’ll be amazed at how many delicious treats can come out of just these few simple, local ingredients.

The most striking feature of these traditional Malay kuehs is their shape. Glutinous rice topped with sweet dessicated coconut is wrapped in a banana leaf, giving the kueh its triangular shape, and steamed. If you’re looking at the more common Nyonya interpretation, you’ll see that the rice is a gorgeous shade of blue.

Kueh Dadar is essentially sweet, coconut-flavoured Pohpiah. These dainty rolls of delight have a fragrant gula melaka-infused coconut filling and a gorgeous green skin. The skins are dyed green using pandan leaves and cooked into paper-thin crepes, so that the pastry both looks and tastes too tempting to resist.

Sinfully indulgent and decadent, the kueh salat is satisfaction in a bite. A generous layer of melt-in-your-mouth kaya custard rests on glutinous rice steamed with more pandan and coconut milk. Bursting with the distinctive fragrance and mild sweetness of these two ingredients in every bite, the kueh salat is as delicious as it is eye-catching.

 

Teochew/Fujian Kuehs

As opposed to their petite and sweet counterparts, Chinese kuehs are usually savoury and rather filling. Because of this, they’ve become affordable and popular breakfast foods. Glutinous rice also plays a key role in these kuehs, but is cooked with ingredients like dried shrimp and mushrooms instead.

An iconic snack everyone knows and loves, tutu kuehs are what nostalgia must taste like. Soft, cakey, and pillowy, a thin layer of steamed rice flour wraps around a filling of either ground peanuts or shredded coconut. The kuehs cook rapidly too, so you can watch in anticipation as they’re prepared on the spot.

At once delicate and hearty, the Soon Kueh is a tantalising blend of chewy, soft, and crunchy. Its soft and chewy texture comes from the unique skin, a translucent, thin layer made with rice and tapioca flour. A filling of radish and bamboo shoots contribute the crunchiness, while garlic and dried shrimp give the entire kueh a savoury fragrance.

3. Ang Ku Kueh

Literally “Red Turtle Kueh”, this snack gets its name from its bright red skin, which looks like a turtle shell. With a sweet filling of ground peanuts and sugar, or a paste made from mung beans, and a sticky, tender skin that’s delightfully mochi-like, it’s no wonder the kueh has stolen the hearts of generations of Singaporeans.

Bright pink, shaped like a wonky triangle, and featuring an intricate pattern, a Png Kueh is truly a pretty sight. The sticky and chewy skin holds glutinous rice, cooked with aromatics like mushrooms, shallots, and dried shrimp to give the rice a complex mix of flavours. Here’s a fun fact: the Png Kueh is supposed to look like a peach, which explains its curious colour and shape. Traditionally, red or pink Png Kuehs are for the gods and white ones are for ancestors.

5. Chwee Kueh

Unlike most other Teochew kuehs, Chwee Kueh isn’t made of a skin wrapped around some filling. This popular hawker breakfast features a firm, almost pudding-like steamed cake with pickled radishes on top. Simple yet delicious, the crunchy and salty radishes complement the plain, silky rice cake perfectly.

Made with top-notch Mao Shan Wang and Wang Zong Wang durians, the golden-hued custard is smooth, buttery, and full of flavour. One bite won’t be enough, so it’s a good thing the Durian Salat comes in a 2.5-kilogram cake. It’s meant to serve twelve, but if you want the whole thing for yourself, who are we to judge?

5. Durian Fried Rice at Escape Restaurant and Lounge

As the easiest way to use up leftovers, fried rice is a forgiving dish you can throw pretty much anything into. Still, it has its limits, and putting durian in there clearly pushes those limits. Durian and fried rice may seem like an odd combination, but the fruit does surprisingly well in a savoury dish. When you add in a dose of sambal, you’ll get a firework of flavours, with smoky wok hei, aromatic durian, and the spicy umami of sambal coming together on your tongue. Make sure to bring your sense of adventure, because this isn’t a dish for the faint-hearted!

Have all your cravings for local cuisines satisfied at Alley on 25

It’s daunting to decide on what to eat, especially when you’re entrusted with the decision-making by your group of friends. Whether they’re craving satisfying stir-fries or if you’re into gorgeous grills, kill two (or in this case, five) birds with one stone at Alley on 25.

Providing a holistic experience of local street dining in the comfort of Andaz Singapore’s lush ambience, you could say that Alley on 25 has it all. With 5 restaurants to choose from, diners can tuck into a variety of dishes over a breathtaking view of the city’s skyline. And let’s be honest here: who could say no to that?

If you’re thinking of popping by, here’s the lowdown on what each of the restaurants has to offer.

 

Icehaus

If the name hasn’t given it away already, Icehaus specialises in cold dishes such as seafood on ice, cold cuts, salads, sandwiches, and desserts. And by desserts, we mean they dish up quality Italian soft-serve ice cream from in-house specialist dessert machines. They’ve even got a special collaboration with Neh Neh Pop, owned by local Singaporean Chef Bjorn Shen; get your hands on the Andaz Pop, a palm sugar-coconut ice cream and red bean-caramel filled popsicle, coated with pandan-flavoured white chocolate.

Diners looking for a refreshing start to their meal will appreciate the Heirloom Tomato Salad. Tomatoes of various colours stand out against the basil, whole olives, and a splash of apple balsamic vinegar and Tuscan olive oil. A mishmash of greens, yellows, and reds, the colours tempt you to take a bite.

On the other hand, the Boston Lobster Rolls come as a triad of warm, autumn hues. Comprised of brioche rolls with lobster filling, it’s simple and straightforward. A mouthful of each gives you springy clusters of lobster meat, coated in tangy chipotle mayonnaise with creamy avocado. We liked how the refreshing tomatoes and jalapeños cut through the flavours as well.

Entering Auntie’s Wok & Steam is akin to stepping into your favourite aunt’s kitchen where smells of familiar stir-fries welcome you with open arms. You’ll also notice that the tables here have more seats too, staying true to the Chinese tradition of enjoying big family meals together.

One of the signatures here is Auntie’s Ma Po Silken Tofu, which is actually quite different from the usual Ma Po dishes you’re used to. Auntie’s version is a lot gentler to the palate; silky tofu cubes are stir-fried in a thick and tangy sauce with luxurious Alaskan king crab and crisp wood ear mushroom.

Pair that with their Organic Fried Rice, a glorious mound speckled red and white with shreds of crab meat, egg, and slivers of asparagus. Auntie Wok & Steam’s servings are also extremely generous (read: GINORMOUS), so don’t forget to bring your #foodsquad for this one.

 

Plancha'Lah!

Plancha’Lah! is a mash-up of two words: the Spanish word ‘a la plancha’, meaning to cook on the griddle and the common Singlish expression ‘lah!’. Much like its name, this eatery offers its diners Asian-inspired fare done through the Spanish griddle-cooking method. Plancha’lah has a smaller dining space, but the intimate setting allows diners to have a full view of what the chefs here can do.

Order the Patagonian Toothfish “en papillote” for a little performance to remember. Watch as the chef seasons and cooks the toothfish, fennel, shimeiji mushrooms, and tomatoes right in front of you before placing everything into a cooking bag. This is where the fun starts: the chef splashes a bit of water onto the griddle, getting a nice drastic sizzle before putting the treasured parcel on top to finish it off. It’s served as is, bag and all, so that diners get to open the parcel like a little gift.

We were particularly excited about the Hokkaido Scallops, too. The chef skillfully sears two plump scallops together with green asparagus, sugar snap peas, and trompette mushroom. Everything is plated with a truffle butter finish before it arrives at the table. Creamy, luscious, and inviting, this is definitely a dish to look forward to!

 

The Green Oven

Ok, full disclosure: the massive green oven situated by the entrance of this restaurant is the main draw here. While it adds a rustic touch to the ambience, the oven is also the hearth and home of the kitchen which gives diners an indication that the dishes here spells ‘Comfort’ with a capital C.

The Green Oven takes your everyday Mac & Cheese and gives it a little upgrade; their Lobster Mac & Cheese is an indulgence unto itself. The pasta is al-dente, with lobster chunks and a slathering of cheese that’s crisp on top and molten underneath. If you need a solid pick-me-up, this baby will have you sorted.

For those seeking comfort in the form of something meatier, you can’t go wrong with the Braised Osso Buco. Again, comfort is key: a weighty veal shank and vegetables go into the oven in a bath of Barolo wine jus (yasss). The result is a casserole with its contents fork-tender, dripping with flavour.

Pro-tip: Order a Brumble to go with this meal. A concoction of Phraya rum, Merlet Creme de Cassis, lemon, and vanilla bitters, this rich cocktail make for a perfect pairing. We kid you not.

With barbecued grub and grills as their focus, you can bet that you’re getting flavour, flavour, flavour here.

We dove right into the Black Angus Beef Skewer, presented on a small clay grill with fragrant jasmine rice. The beef cubes are tender, each delicately flavoured with just the right amount of soy-mirin glaze. Have it with the lightly-charred shishito peppers a mild hint of heat. In contrast with the beef is the Crispy Kipfler Potatoes in a rich sour cream and Parmesan cheese sauce. Potatoes, sour cream, AND cheese? You heard us right.

Adding to the lineup of tantalising grills is the Chicken Burger with Teriyaki Sauce and shredded cabbage. Chicken patties tend to lean on the dry side but Smoke & Peppers will impress you with the patty on this bad boy that’s done to a juicy perfection. The sweet and savoury sauce elevates the flavour of the patty, and shredded cabbage gives it texture and crunch. Round up the meal with the Mango-Sago Panna Cotta and coconut ice cream, and you’re good to go.

Impeccable service and exquisite food – these two pillars of a Japanese dining experience are definitely apparent here at TAKU. Omakase-style is central to this new restaurant, however it also offers reasonably priced lunch courses. Of course, the main draw here is the exceedingly fresh sushi but guests can take a stab the Japanese Wagyu Steak or New Zealand Aging Lamb Chop too.

9 Places Where Singaporean Food is Done Right

So much food, so little time. . .

In a foodie paradise like Singapore, there’s no lack of places to chow down and satisfy any and all cravings. Those hankering after local food have an especially vast selection of establishments and cuisine to choose from (obviously). But which are the places that do Singaporean food right? We’ve all had the misfortune of biting into an overcooked chicken rice or gluey rojak, and we’re here to save you from that particular misadventure.

Mooi Chin Place

This charming eatery has been in operation since 1935, and it holds the distinction of being the oldest Hainanese restaurant in the country. You don’t get to that age without having proven your mettle, and to this day, Mooi Chin continues to serve up reliably yummy Hainanese dishes. Expect a simple and but satisfying experience at this establishment, made manifest in the food, décor and service.

Wild Rocket

On the other end of the spectrum, there aren’t many better places to experience modern Singaporean than at Wild Rocket. Tucked away in Mt. Emily park, Chef Willin Low will take you on an elevated culinary journey that celebrates his love for his nation’s food. In his own words: “I have travelled the world and eaten some really wonderful meals, but at the end of the day, I want to come home and eat hawker food.” Although we’re pretty sure Maxwell doesn’t dish out laksa pesto linguine, his sentiment shines through in the cuisine (and pulls at our heartstrings a bit). Come for an a-la-carte meal, or sit at the concrete counter for an omakase tasting menu that Chef Low often serves personally.

Song Fa Bak Kut Teh

No Singaporean food list is complete without a Bak Kut Teh joint, and we think Song Fa doesn’t always get the love it deserves. With several central locations now – our favorite being Chinatown Point –  enjoy a cozy atmosphere perfect for peppery bone soup filled with those chunks of garlic that launch’d a thousand ships (or was it the youtiao?). Song Fa delivers a nuanced flavor, tender meat, and a menu of braised dishes that compliment the meal well. We could jia tang all night long until our bellies overflow with one of our all-time favorite comfort foods.
