7 Quirky Tips to Help You Nail The Perfect #FoodPorn Shot

If you’re a foodie like us, then you probably follow one (or a hundred) Instagram accounts that fill your feed daily with drool-inducing images. You might have even tried replicating some of them yourself. Somehow, you just can’t get your bowl of ramen to look half as good. Ever wonder how these Instagrammers manage to take such perfect pictures?

Here are seven quirky tips that might sound a little strange or bizarre, but are guaranteed to help you nail that perfect #foodporn shot.

 

1. Soft, Natural Light Is Your Friend

You’ve probably heard this before: soft daylight is the best lighting for food (or any) photographs. So if you want to take advantage of the best lighting conditions you can get, always ask to be seated at a table that is close to a window or door. If your dining companions get suspicious of your need to always be seated by a window, tell them that you simply like watching the world go by while sipping on your cuppa.

 

2. Stuck in the Dark but You’re My Flashlight

We’ve all tried taking a picture in a candlelit dining room. And when we can’t seem to get enough light, we turn on the flash, and voila! Your picture turns out dull and flat, so you give up and dig in before your White Alba Truffle Risotto gets cold. Sounds familiar?

If your cell phone’s flash won’t cut it, why not ask your friends to turn on their cell phone’s flashlight and hold it above your food instead? Lighting a little too harsh now? Simply put a thin napkin between the light source and your food, to diffuse the light and get it just right. Want a more even lighting? Always keep a piece of paper or a sheet of aluminium foil (essentially a makeshift bounce card) in your handbag or backpack. By placing your makeshift bounce card on the shaded side of your dish, you can brighten up the dark areas and soften the shadows of your food!

 

3. Light Up Your Drink

You know how we suggested using a friend’s cell phone flashlight to light your food from above? The same trick can be used to illuminate your drink (It goes without saying that this only works with beverages served in glassware. Duh.) by lighting it from the side or behind! The waitstaff might think that you’re checking the drink for impurities but what you’re really getting is a beautiful glow which really highlights the effervescence in a fizzy drink that you usually see in those slick Coca-Cola commercials. Pro tip: a pinch of salt right before you take your picture, reinvigorates the bubbles in carbonated beverages like beer, champagne, and sodas.

 

4. Look Alive!

Food is alive and sensual, so it goes without saying that it doesn’t always have to sit perfectly still either. You can show it being sliced, served, with a bite taken out of it, or held out to the camera. And contrary to what you might think, the perfect #foodporn shot doesn’t necessarily mean that the picture of your food should only be taken the way the chef intended it to look. So don’t worry about that lime wedge that is slightly off-kilter after your waiter brought your fish tacos to you, or that you have water rings dotting the table which your egg benedict is sitting on. In fact, professional food photographers have stylists that create these “imperfections” in order to make a scene more realistic ‒ case in point, a slightly messy table top with a summer barbecue spread suggests an epic get-together with family or friends.

So go ahead, embrace the chaos, and stand out from the sea of “perfect” food images (Disclaimer: we are not encouraging you to make a mess at your table). These “action” shots and “imperfections” are guaranteed to add a certain je ne sais quoi to your feed.

 

5. Pops Of Colour

Not every restaurant or cafe has gorgeous marble counters, colourful plates, or a stunning feature wall to add colour to your #foodpic. But fret not, you can always introduce colour to your photo via other ways.

Having spaghetti bolognese? Ask the staff for a couple of sprigs of parsley and some extra shaved parmesan cheese to add life to your brown-hued plate. Dining out with a friend who’s got nicely manicured nails, or multi-coloured bracelets and rings? Get them to hold your plate of food or cup of coffee. Getting some ice cream? Always, ALWAYS ask for sprinkles on top (only if it makes sense of course. You can’t have rainbow sprinkles on a scoop of Mao Shan Wang ice cream. Or can you? Hmm…).

 

6. Show Your Good Side

Everyone has a “good side” when it comes to taking pictures, so it’s no surprise that different foods will look their best at different angles. Food with height (like burgers and sandwiches) are best photographed from the side, so you can better see all the glorious layers and textures; while two-dimensional options (like açaí bowls and pizzas) look best in overhead shots.

The rules aren’t exactly fixed, so always take pictures from different angles and also play with both landscape and portrait modes in order to choose the best image. This might require you to stand on a chair for the ultimate flat lay shot of your brunch, or for you to squat in front of a tiled counter to get the perfect backdrop for your ice cream. Either way, get comfortable with the judgemental stares and finger-pointing because it’s all worth it for the Gram!

 

7. Phone-Ception

If you’ve tried all our tips so far and still have friends or a partner who’s willing to dine out with you, cherish them because you’ve found a keeper, and you’re going to need to borrow their phone again…

Besides experimenting with angles, ever thought of experimenting with frames? Well, instead of taking a photo of your food, the most meta thing that you can do is to take a picture of YOURSELF taking a picture of YOUR food. And it would really help if you or your friend has a colourful cell phone cover (no cracked cell phone screen protectors please!), or if one of you has nicely painted nails or accessories to boot. You will also want to pay attention to what is within the frames of your photos. And if the shot is too hard to nail, involve the afore-mentioned friend and get them to frame the food shot, while you take the phone-ception shot.

The Perfect Pasta Pt. 2: Tips and tricks from Singapore’s Best Chefs

In part 2 of “The Perfect Pasta” series, we bring you guys TWO more pasta recipes from Singapore’s best Italian chefs. You can now wow your family and friends by making your own Tortelli pasta, or treat your date to a plate of homemade crab meat penne in tomato sauce that’s sure to make them swoon.

Penne Polpa Di Granchio

Penne Polpa Di Granchio is Pasta Fresca’s signature seafood-based pasta. This delectable dish is tossed with a tomato sauce that’s made with peeled San Marzano tomatoes and soft, flaky crab meat that help to add texture. To brighten the dish up, a sprinkle of white wine is added, enhancing the pasta’s overall flavour.

Recipe for Penne Polpa Di Granchio

Ingredients (serves 4):

  • 3 tbsp olive oil
  • 280g soft crab meat
  • 60g chopped garlic
  • 600g tomato sauce (peeled San Marzano tomatoes)
  • 200g cherry tomatoes
  • 20g chopped parsley
  • Salt & Pepper to taste
  • 600g fresh penne pasta
  • White wine

Directions

  1. Heat the pan with the olive oil.
  2. To the pan, add a teaspoon of chopped garlic and saute until golden brown.
  3. Add the soft crab meat and stir-fry for about 30 secs. Sprinkle with white wine.
  4. Add the tomato sauce and cook for about 5 minutes, then add cherry tomatoes.
  5. At this point, you can add salt and pepper to taste, before finishing with freshly chopped parsley.
  6. Meanwhile, cook the pasta in boiling water with salt for 2-3 minutes until al dente. Then, drain and toss into the pan with the sauce.
  7. Cook for 30 secs on high fire before serving.

Tips:

  • When cooking a tomato-based dish with white wine, the key is not to use too much wine. This will make the dish too sour and overpower the sweetness of it. Just a sprinkle will do!
  • Do not season your pasta sauce too early. This is a common mistake. You will only know what is missing when the flavours of all the ingredients come together. You can then start adding your seasonings, right before you toss in the boiled pasta. This is the best method as it will allow you to adjust your seasonings according to taste.

Tortelli is a type of stuffed pasta that can be made into several different shapes such as square (like ravioli) and a semicircle (like anolini). In this recipe, Chef Marco Manocchio teaches you how to make pasta from scratch using just three ingredients – plain flour, egg yolks, and semolina flour! Fill them with a homemade ricotta filling and saute them with your favourite pasta sauce, and you have a meal that’ll impress.

Recipe for Tortelli

Ingredients for the pasta dough:

  • 3 egg yolks
  • 300g plain flour
  • 200g semolina flour

Directions to make the pasta dough:

  1. In a mixing bowl, add in all the ingredients and mix well to form a dough.
  2. Chill the dough in the refrigerator overnight.

Ingredients for the pasta filling:

  • 50g butter
  • 50g flour
  • 70g milk
  • 20g parmesan
  • 50g ricotta cheese
  • 50g spinach
  • Salt, pepper, and nutmeg

Directions to make the filling:

  1. In a pan over low heat, melt the butter, stir in the flour, and cook it for two minutes.
  2. Next, add the milk and stir to incorporate the paste into the milk. This is similar to how you cook a bechamel sauce.
  3. Add the remaining ingredients and season with salt, pepper, and nutmeg according to taste.

Directions for assembly of the Tortelli:

  1. Take the dough out from the fridge and place it on a lightly floured, clean and flat surface. Knead dough until smooth and elastic before rolling it out using a rolling pin. You can use a pasta machine/roller to help you.
  2. Using a cookie cutter with a diameter of 8 to 10 cm, cut out dough rounds.
  3. Dust each cutout with semolina flour before stacking them on top of one another. Cover the cutouts with cling wrap to avoid drying out the dough.
  4. Allow the filling to cool before putting it into a piping bag. Pipe the cooled filling onto the middle of each cutout.
  5. Start folding the tortelli. First, dip your finger into some water and dampen half an arc of the tortelli.
  6. Fold your tortelli into half and seal it from one side to another to avoid air pockets from forming in the tortelli.
  7. Finally, dampen the two ends of the tortelli and bring them together. Give them a good pinch to combine both ends.
  8. In a pot of boiling water, cook your tortelli for about 2 minutes, or until they float. Your tortellis are done!
  9. Serve with your favourite marinara sauce or broth.

Tips:

  • When rolling out the pasta dough, ensure that they are neither too thick nor too thin. The dough should be just about thin enough such that you are able to roughly see the outline of your hand when you place it beneath the dough.
  • If you don’t have a piping bag, you can put the filling onto the middle of the cutouts using two spoons.

Winederlust’s Green Pea Espuma is a unique dish you’re not likely to find anywhere else! The espuma – essentially, food foam – is made from pea tendrils and alfalfa. The dish is whipped into a foam so fluffy that eating it is what we imagine slurping up a cloud is like. A final drizzle of truffle oil adds depth and fragrance resulting in a comforting dish full of mellow and earthy notes.

If you can’t decide between cooked tuna or sashimi, then the Tuna Tataki Chimichanga is a must-try. Cooked to tataki perfection, the tuna is nicely seared outside yet still tender inside. As you bite into it, the tuna goes from savoury and just a little smoky to silky-smooth and sweet, a combo that got us craving more. Don’t scarf down everything too quickly though, because we haven’t gotten around to the other components yet.

Use the tostada as a plate, pile it with tuna, onions, avocado, and tabbouleh, and eat it in one bite. You won’t regret it.

Prefer the tried-and-tested classics? Don’t worry, there’s something for you too. While it does put a distinctive spin on the traditional dish, Winederlust’s Caprese Mozzarella Salad ticks all the boxes and more. The smooth and milky mozzarella adds a delightful element of softness and roundness to the tangy heirloom tomatoes and fresh, minty basil, while the nutty smoked tempeh (bet you weren’t expecting that!) keeps everything nicely grounded, creating a depth of flavour you don’t get in your usual Caprese.

Binge watching Hell’s Kitchen has taught us one thing about cooking: scallops are notoriously difficult to get right. That’s why we were pleased to find that Winederlust does justice to their gorgeous Hokkaido Scallops. Creamy and plump without being overly chewy, each scallop boasts a yummy sear, while the tangy raspberry dressing cuts nicely through the sweet meat.

This may be a simple dish but it’s pretty much the epitome of elegance in simplicity. The Flank Steak is more than enough to make any meat lover fall in love. Paired with a smooth and earthy mushroom puree, the plate of beefy goodness is an indulgent treat. If the meat’s too rich for you, try it with the tender rutabaga coins – truly a match made in heaven.

All hail the Sous Vide 12 Hours Pork Belly! You won’t be able to resist this one: pork belly that’s been sous vide for 12 hours so that it’s fork-tender, paired with pork jus cooked with herbs and served on a bed of braised lima beans. The melt-in-your-mouth pork and bold flavours of herb-infused jus make this an addictive dish we can’t get enough of. A little grated daikon helps to balance the dish by providing some freshness, contrasting with the richness of the pork.

As its name suggests, The Sea’s all about seafood, with a little taste of the big blue sea in every bite. Featuring red snapper, squid, and tiger prawns, you’ve essentially got the entire ocean swimming on your plate. We would’ve been happy with a big plate of seafood, but it doesn’t stop there. There’s also a smattering of tropical fruits to brighten the dish with the occasional nuance of bright, floral flavours. Finally, scattered peanuts contribute a playful crunch every now and then, so you’ll never know what to expect next.

Let’s navigate back to land and go right into their Seared Duck Breast with this sublime seared duck breast with mouth-watering notes of a caramelised duck. Full of richness and depth, the succulent meat is complemented by butternut pumpkin and charred asparagus. The veggies are bursting with fresh and sunny flavours that evoke a charming garden – it’s all too easy to imagine you’ve just picked them from your backyard.


Of course, this place wouldn’t be called Winederlust if they didn’t have wines. These dishes are all part of their Weekend Wine Buffet, a special that’s every bit as awesome as it sounds. Each main is going for just $10, and you’ll get unlimited wine hand-picked by the experienced sommeliers too.

In The Pantry: Palmira Bertuca of Marcello

Seeing Palmira Bertuca behind the bar is a pick-me-up in itself: armed with a heartwarming personality, a beaming smile, and killer bartending skills, it’s easy to see how Palmira’s won the heart of patrons at Marcello, Singapore’s first Italian cocktail bar, again and again. We sit with Palmira and talk life, love, and everything in between.

 

You started bartending at the age of 18 – what made you decide to choose to bartend as a career?
I actually fell into bartending by mistake – I guess you could say that bartending found me! A close friend of mine told me about a job in a club, where I could work to earn some extra cash over the weekends. I was only 18 years old at the time and was still studying. I fell in love with bartending, and haven’t worked another job since!

As a female bartender in an industry dominated by men, it must have been challenging to get to where you are now. What’s one experience you would never forget?
It’s true that bartending is typically thought of as a male-dominated industry, but I think women are really starting to make their mark, too! I’ve always found that I’ve been judged for my knowledge and skills as a bartender, as opposed to the fact that I’m a woman; this has been the case everywhere I have worked, too, so I really do think that attitudes are changing.

What advice would you give to someone who is looking to venture into a career in bartending?
To be truly passionate about bartending and mixology – bartending truly becomes part of your life, so you need to be fully committed and really enjoy your time behind the bar. A large part of our job is interacting with customers, so we need to really believe in and love what we’re doing, or else it will show! I’d also say to read as much as you can to make sure you’re at the top of your game and make sure that you take care of yourself – drinking lots of water and making sure you get enough rest are both really important!

Palmira Bertuca, Head Bartender Marcello

They say that taste – much like music – can transport you to a particular past memory. Is there a drink that does that for you?
The Americano cocktail was the first drink I made at home for my parents when I was a young bartender. I was still new to the industry but was already madly in love with my job, and now, whenever I make this drink I remember that passion I felt.

Also, whenever I drink Vecchio Amaro de Calpo, I’m taken back to my younger days when I didn’t know what Amaro really was yet – I remembered it always being in my grandparents’ fridge, and I used to have small sips from my mum’s glass when she was enjoying it after dinner.

If you could choose to bartend for 3 of the most influential/famous people in the world, who would they be?

  1. Michelle Obama, so I could ask how she won Barack’s heart!
  2. Dr Dre, so I could hear all of his cool stories about NWA.
  3. Sophia Loren – she’s such a representation of Italian beauty and style all over the world

The best city or country with the best drinking scene is…?
Definitely London – it’s the most vibrant city in the world, and there is so much happening every day. The bartending scene is very competitive, too, so if you make it in London you can do it anywhere! My favourite bars there are Bar Termini, The Connaught Bar and, of course, The London Edition.

Second only to London and New York, though is Singapore, which is by far the fastest growing city in the international bar scene, and I’m so humbled to be part of this.

If you weren’t bartending, what do you think you would be doing now?
I would probably be unemployed! (laughs) Jokes aside, I really love dealing with people and being part of their experience. A great experience starts from the moment they make a reservation, or when they walk into the bar and have someone friendly chat with them. If I wasn’t working as a bartender, I think I’d still want to be part of that, so I would probably be working in the industry in some other capacity.

What’s your favourite ingredient to use when concocting a drink?
A dash of Fernet and/or a pinch of salt – both have the power to soften the edges of a drink. Fernet can give a totally new dimension to a drink, whilst salt can enhance the sourness and zest within a cocktail.

If you had to drink one thing for the rest of your life, what would it be?
My favourite cocktail has to be a Negroni – why? It’s the one drink that you can describe with one word: Balance. The Campari with the Vermouth are in perfect harmony, whilst the Gin adds that extra kick, making the Negroni one of the most popular cocktails in the world. It’s one thing Italians can be very proud of… second only to Pizza Napoletana!

An interesting fact about yourself would be?
I love to travel, and I’ve lived in four different countries so far.

Atlas is probably one of the most gorgeous bars you’ll ever visit in Singapore, aptly located at the Gotham-esque Parkview Square. Decorated with ornate, neo-gothic interiors, vast lounge sofas, and a massive glass tower holding one of the largest collection of gin in Singapore, you won’t want to leave this space once you’ve set foot in it.

A visit to this speakeasy-inspired bar is a must and when you do, have yourself the signature Atlas Martini with orange bitters and Champagne vinegar. If you’re feeling a little fancy, try the Cecil Beaton, a herbaceous little gem comprising of rare Australian spiced dry gin, hibiscus water, Earl Grey tea and milk.

The edgy restaurant and bar in Tanjong Pagar exudes elegance and flair that extends from its interiors down to its creations. As a cult favourite among epicureans, the bar is also known for its innovative and ‘out-of-the-box’ take on gastronomy.

In the bar’s latest endeavour to create ‘the world’s first edible menu’, diners get to experience specially scented gummy bears that represent 12 avant-garde cocktails that come with intriguing names like Baby, Happiness, and Lust. If that doesn’t pique your interests, we don’t know what will!

With an introduction like that, how can one not sit up and take notice? Drawing inspiration from its surroundings, Native uses locally and regionally foraged ingredients in its cocktails which inevitably helps them stand out from the slew of bars that ride on the American speakeasy bandwagon.

Some of the more exotic ingredients you’ll find on the menu include jasmine blossom, turmeric leaves, tapioca, soursop, and  – get ready for this one – weaver ants (you read that right). If you’re popping by to give their creations a try, we’d recommend the Ceylon Arrak that’s derived from coconut flower sap aged in Sri Lankan wood. If you’re feeling antsy to try something unique, leave your fears at the door and order Antz, a Thai rum-based drink that’s topped with ants on a frozen basil leaf.

While this establishment keeps everything on the down low – from the lack of online presence to its discreet entrance – many have gone through the trouble of hunting it down for a taste of what the team behind 28 has to offer – and boy, are you in for a ride.

One of the popular drinks here is the 6 Foot 7 Foot, a whirlwind of a drink filled with rum, cognac, rye, and absinthe with torched bananas. Prefer to keep it simple? You can’t go wrong with an Old Fashioned or Zaya Rum.

Joining the ranks of “prominent” hidden bars in Singapore comes Operation Dagger, a secretly successful drinkery that oozes minimalistic chic with its striking interior of raw concrete and rugged furniture, complete with bottles upon bottles of alcohol that line its shelves. Forget about the theatrics here – owner and head mixologist Luke Whearty helms the bar, whipping up some of the most innovative cocktails from house-made meads and house-infused spirits.

A creation that you must not miss include the Cabbage, a drink comprising of sous vide natural wine from fermented red cabbage with apple and rose. Better yet, go ‘omakase’ and try a flight of cocktails chosen especially for you by the bartender!

Much like its namesake, Gibson is just the type of place for non-conformists and those who aren’t afraid to venture into flavours of the unknown. The bar is also located in an old Singaporean shophouse, which adds to the charm of the place that most diners find themselves inevitably drawn to.
