How to Order Kopi Like a Pro

Understanding coffee shop lingo is no easy feat, especially with the barrage of terms available to customize your cup of joe. In this article, we break down the common kopitiam lingo for you so that the next time you’re at a coffee shop, you can order like a true blue Singaporean!

TYPES OF COFFEE
Kopi O ‘Kopi’ means ‘coffee’, and ‘O’ translates to no milk. Therefore, Kopi O is black coffee served with sugar.
Kopi C Coffee made with evaporated milk and sugar.
Kopi Coffee made with condensed milk.
OTHER TERMS
Kosong No sugar
Siew Dai Less sugar/sweet
Gah Dai More sugar/sweet
Peng Iced. You can add this suffix to any of the terms above to get your beverage with ice/cold. For example, a black coffee without sugar and with ice will be Kopi O Kosong Peng.
Pua Sio Literally translates to 半烧 (half warm). Some of the hot water is replaced with room temperature water to give you a lukewarm beverage that’s ideal for drinking.
Gao Thick coffee. The coffee they serve at coffee shops is usually diluted with some hot water before serving. To get a stronger dose of coffee with less water, order it gao.
Po Thin coffee. If you want to hold on the caffeine, order it po, where more water is added to dilute the coffee.
Di Lo Extra Thick coffee. This gets you coffee poured straight from the metal kettle, without any dilution.
Sua Get a double order of the same beverage.
Dabao / Bao Get your beverage as a takeaway.

Prefer tea? Replace ‘Kopi’ with ‘Teh’. Mix and match the above terms to customize your coffee/tea! Some examples:

    1. Kopi C Gao Siew Dai = Strong/Thick Coffee + Evaporated Milk + Less sugar
    2. Teh O Kosong Peng = Tea + No milk + No Sugar + Ice
    3. Kopi Po Gah Dai = Thin Coffee + Extra Condensed Milk
    4. Teh Peng Dabao = Tea + Condensed Milk + Ice + Takeaway
    5. Teh C Siew Dai Pua Sio Dabao = Tea + Carnation Milk + Less Sugar + Lukewarm + Takeaway

OTHER COMMON BEVERAGES
Milo / Tak Kiu A powdered chocolate malt beverage made with condensed milk and water. Tak Kiu is Hokkien for “kicking a ball”, and this describes the packaging of a Milo tin.
Milo Kosong Hot milo without milk and sugar.
Milo Dinosaur Iced milo with an additional scoop of milo powder on the top.
Teh / Kopi Tarik Tea/Coffee with condensed milk, pulled back and forth to create a frothy top. This process helps to perfectly incorporate the milk into the tea/coffee, giving the drink a better flavour. It also helps to cool the beverage down to an optimal drinking temperature.
Teh Halia Tea with condensed milk and ginger. The added ginger gives the tea a tinge of spiciness.
Yuan Yang Kopi + Teh. A harmony of coffee and tea to give you the best of both worlds.
Kopi/Teh Cino Milk with a layer of tea or coffee on top. Kopi/Teh is made the normal way and layered on top of hot milk to give you an extra milky beverage.
Diao He Chinese tea. The term literally translates to ‘fishing’, similar to how one dips a tea bag into hot water to make tea.
Michael Jackson Freshly brewed soya bean milk with grass jelly.

Chope Tries: $2 vs $85 coffee, plus how to become a Coffee Connoisseur

Think you’re a coffee expert? Could you tell the difference between a cheap and expensive blend by just taking a whiff? We took three of our coffee-loving colleagues and put them to the test.

 

Ok, while this may be an extreme case of coffee-tasting, plenty of people island-wide are picking up, or have picked up, a serious coffee addiction. If you’re a cup of joe novice and looking to attain the title of coffee snob, here’s how you can be on your way to roasting your own beans!

1. Diversify your picks

If your go-to drink is a Starbucks frappe, it’s time to branch out! There are plenty of drinks you can try when starting out with coffee – you don’t have to start long blacks and flat whites. If you’ve got a sweet tooth, try out a Mocha – a mix of chocolate syrup, milk and espresso. Chye Seng Huat Hardware makes deliciously sweet, rich mocha at a reasonable price point.

If you prefer your coffee bitter, opt for a Ristretto – a variant of the Espresso with half the water. Dutch Colony Coffee makes an excellent ristretto, with a slightly nutty taste and a velvet sheen. As you grow your coffee love, you may want to check out Sarnie’s – where all their drinks are brewed with ristretto, which gives them a strong flavour.

Don’t get us started on all the variations of coffeeshop kopi.

2. Attend a cupping session

After you’ve started trying out the variants of coffee, you can expand your knowledge and rub shoulders with coffee experts at a cupping session. A short session that allows you to taste coffee and compare tasting notes with other connoisseurs, this is one way to grow your knowledge about the many varieties of coffee available and their tastes.

Common Man Coffee Roasters offers free cupping sessions the first Friday of the month from 3-4pm. As you grow your coffee knowledge, you can try attending more advanced classes, such as Common Man’s Sensory Skills & Coffee Knowledge class, or Central Perk’s Barista Workshop to increase your expertise.

3. Get to know your barista

It’s not always easy to have a chat with the barista at your local Starbucks, so maybe a smaller coffee joint will work better. Try Penny University on East Coast Road, the aforementioned Highlander Coffee, and Artistry cafe (closed). Baristas at smaller cafes tend to be more willing to speak to you about their creations, especially when it’s off-peak hours.

Head over to the counter with your drink and ask them about where their coffee comes from – this is a good way of establishing your interest in the drink. Follow up with questions about how they brew their drinks – do they roast the beans in-house or buy them from suppliers? You can even ask the baristas what their personal favourite drinks are! Not only will this give you some firsthand insight into the world of coffee craft, the recommendations baristas make may well lead you to find your new favourite blend or beans.

4. Buy locally-produced coffee

If you’ve been buying your coffee from the supermarket, it’s time for an upgrade. While coffee connoisseurs are divided on the actual amount of time coffee can be stored, they agree that it should be no longer than a month. If that jar of Nescafe Gold has been serving you well for more than four weeks, it’s time to throw it out. Depending on your palate, there are several places for you to get locally roasted coffee. If you like blends or are looking to sample coffees from Asia and Africa, check out Papa Palheta – their coffee is served at Chye Seng Huat Hardware. Prefer something sweeter? Check out Yahava Koffeeworks, that stocks a range of coffee blends from Sumatra, Rwanda, and Columbia.

As your coffee knowledge grows, you can begin to branch out to different varietals, like the blends of Nylon Coffee. They stock espressos and brewed coffees and have tasting notes printed on their packaging. With the roast date stamped on the packaging, you can enjoy fresh coffee – the purveyors say within 4 weeks of the given date. You can even buy coffee beans and grind them to create your own blend, but more on that later.

5. Get some coffee paraphernalia

Doesn’t matter if you get a hand grinder or a professional one. When you start purchasing coffee grounds, you’ll want to start getting from bean to cup as quickly as possible in order to preserve the freshness of the drink. Simple hand grinders can cost upwards of $50, while the fancier mechanical ones are slightly more expensive. If you want to experiment with your coffee making technique, you can try using a Moka Pot to brew your coffee. Not only does it look fancy, coffee brewed in Moka pots has a heady aroma and a more full-bodied taste, according to experts.

The new outlet at Paragon incorporates the same versatility, but with a whole new level of class.

With dim lighting and an intimate dining atmosphere, this is a sweet spot for date nights. 63Celsius stands out with its unique architecture and rustic yet modern design. Golden brown and bronze hues give warmth to the restaurant, making you feel comfortable and right at home. It’s also a great place to chill with a group of friends or coworkers over their diverse and nouveau range of wines and cocktails!

To start, we had a 63Benedict—63Celsius’ very own spin on the classic Eggs Benedict! Two eggs poached sous-vide, served with smoked ham and sourdough bread. The dish is also embellished with fresh tomatillo flakes and drizzled with Aioli sauce. We loved how the egg was so silky, runny, and ultra soft – with a yolk that comes oozing at the slightest touch, it’s absolutely tempting. Enjoyable as a starter, this egg, crispy bread, and tangy Aioli sauce combo kept us anticipating for the other dishes to come.

The artistic-looking Crab and Cheese Omelette came next. Infused with Parmesan cheese and shredded crab claw meat, every bite of this creamy cheesy wonder is surprisingly delightful. We especially loved the fluffiness of the omelette, and the chewy chorizo chunks also made for an enticing contrast to the soft cheese omelette. While some places overdo it with the cheese, 63Celsius gets it just right from the get-go.

A dish that truly stood out was the Crab Meat Pasta. Tantalisingly light and stringy spaghetti was smothered in extra virgin olive oil, garlic, and chili, which gave the dish a very piquant taste. For those who can’t handle spicy food, there is a mild option available. We found the mild alternative to be the perfect level of heat with a pleasant burst of flavour that lingers.

For those who love a little indulgence, the artisanal Our famous Lobster Pasta is a signature dish that’s perfect for two. The fresh San Marzano tomato sauce and garlic provided richness and zest to the supple spaghetti. Not forgetting the Half Lobster, which had a nice briny tang!

Who doesn’t love a good ol’ steak? At 63Celsius, the Argentinian Ribeye Steak and Frites is a must try. Fair warning though–a bite out of the succulent beef slices and the crispy shoestring fries will get you HOOKED. For that extra oomph, spread the peppercorn butter and let it melt onto the steak slices before you savour a bite. Want to feel on top of the world? Re-energize yourself with a gorgeous evening view of Keppel Harbour and Sentosa. Propeller is the first rooftop bar at Harbourfront, and specialises in concocting creative cocktails. It’s tough to pick a favourite from their selection of delicious tipples, but if we had to choose, The Propeller Bay – a delicious mix of vodka, orange juice, raspberry syrup, and thyme – would be it. The homemade lime espuma topping can be torched for extra zest and is the perfect touch to propel our spirits to greater heights.

Of course, great drinks must be paired with great tapas! The bar offers a mighty combination of modern inventions, like the incredibly indulgent Pan-seared Scallops with Citrus Fennel Salad or the Seared Beef Cubes with Truffle Mayonnaise. Of course, that’s not all: if you’re lucky, you can watch the Sentosa Boardwalk fireworks from Propeller’s plush sofas. (Pro tip: it’s at 8pm.)

Chef Wan is back with yet another restaurant, and this time with the self-evident name of Chef Wan’s Kitchen. He’s making his comeback with a new mix of Moroccan, Javanese, Peranakan and Spanish recipes passed down from his grandmother to mother to auntie! (Don’t we all wish that our family had heirloom recipe books too?!) With dishes like Lawar Salad, Lontong, and Lemak Noodles, we’re head over heels for the lineup of heritage eats on the menu! The restaurant is currently pending its Halal certification, post-MUIS audit, so all Muslim friends are welcome too!

Are you a lover of hot pot? Visit this new addition to the hot pot scene, Love in the Pot 美颜锅! Open until 1:00AM, this place is a good spot for a warm and relaxed supper with friends. Try out their nutrient soup broths, in particular their specialty Collagen Soup broth. If you can’t decide, you can just order all four types in a partitioned pot for the best of all the flavours they have to offer! Don’t miss out on their handmade prawn balls and beef “ice-kacang” either – you’ll see what we mean!

Everyone agrees that this bicycle-themed café deserves praise for its relaxing ambience and hip decorations. Providing healthy rice bowls through a DIY menu that you can choose from (Carbs, Proteins, sides & dressing), this café was conceived by a bike enthusiast and his athlete wife to encourage female athletes! (and healthy eating) They’ve recently added Nitro Cold Brews to the drinks bar, so be sure to stop by to enjoy a refreshing respite from the heat!

Savour the finer things in life at Dolce Vita

It’s a long weekend, and we know what your inner foodie is thinking: it’s time to #treatyoself to a nice, comforting meal and enjoy the extra time you have on your hands! Not sure where to start? Cue Dolce Vita, an establishment that dishes out culinary masterpieces while staying true to its traditional Italian flavours.

Prepared to be amazed when the buffalo mozzarella is wheeled out of the kitchen – the 2kgs of braided cheese, flown directly from Italy, is as fresh as they come. The chef then slices the cheese on the spot and plates them with semi-dried tomatoes, anchovies, rucola salad, and a generous dressing of Italian basil oil to complete the Treccia Campana di Bufala.

Need a little Italian comfort? You’ll find it in the Risotto. Using a special selection Acquerello Rice, every mouthful gives a satisfying bite while subtle flavours of pumpkin, sauteed prawn, and soft hints of ginger oil are slowly introduced to your palate. You’d have to try this to know – it’s an experience not to be missed!

Perhaps one of the most unforgettable dishes here is the Tagliata di Manzo. The beautifully roasted US Prime Beef Ribeye imparts a subtle, beefy flavour and the meat is cooked tender throughout. Served with a side of the fluffiest mashed potatoes, fragrant sautéed vegetables, sharp capperata, and a generous lather of natural roasting juices, this is definitely a must-try!

The desserts menu is where the creativity of the kitchen team at Dolce Vita really shines. The ever-popular Tiramisu doesn’t steer far from its original but here, they craft this dessert with a modern twist that makes it both visually attractive and a pleasure to tuck into. What we found pleasantly refreshing is that the Mascarpone mousse carried a hint of citrus – orange zest that’s strained and infused into the espuma – with every mouthful. Our verdict? #muchimpressed

When the kitchen dishes up their Panna Cotta, it’s easy to see why this intricate little number steals hearts the second it hits the table. Resembling a magical fairy garden complete with adorable panna cotta ‘toadstools’ and green tea sponge cake ‘moss crumbles’, it’s almost too beautiful to eat! The berry coulis and berry sponge add a slight tang and a refreshing palate-cleanser to this creamy delight.
