In The Pantry: Palmira Bertuca of Marcello

Seeing Palmira Bertuca behind the bar is a pick-me-up in itself: armed with a heartwarming personality, a beaming smile, and killer bartending skills, it’s easy to see how Palmira’s won the heart of patrons at Marcello, Singapore’s first Italian cocktail bar, again and again. We sit with Palmira and talk life, love, and everything in between.

 

You started bartending at the age of 18 – what made you decide to choose to bartend as a career?
I actually fell into bartending by mistake – I guess you could say that bartending found me! A close friend of mine told me about a job in a club, where I could work to earn some extra cash over the weekends. I was only 18 years old at the time and was still studying. I fell in love with bartending, and haven’t worked another job since!

As a female bartender in an industry dominated by men, it must have been challenging to get to where you are now. What’s one experience you would never forget?
It’s true that bartending is typically thought of as a male-dominated industry, but I think women are really starting to make their mark, too! I’ve always found that I’ve been judged for my knowledge and skills as a bartender, as opposed to the fact that I’m a woman; this has been the case everywhere I have worked, too, so I really do think that attitudes are changing.

What advice would you give to someone who is looking to venture into a career in bartending?
To be truly passionate about bartending and mixology – bartending truly becomes part of your life, so you need to be fully committed and really enjoy your time behind the bar. A large part of our job is interacting with customers, so we need to really believe in and love what we’re doing, or else it will show! I’d also say to read as much as you can to make sure you’re at the top of your game and make sure that you take care of yourself – drinking lots of water and making sure you get enough rest are both really important!

Palmira Bertuca, Head Bartender Marcello

They say that taste – much like music – can transport you to a particular past memory. Is there a drink that does that for you?
The Americano cocktail was the first drink I made at home for my parents when I was a young bartender. I was still new to the industry but was already madly in love with my job, and now, whenever I make this drink I remember that passion I felt.

Also, whenever I drink Vecchio Amaro de Calpo, I’m taken back to my younger days when I didn’t know what Amaro really was yet – I remembered it always being in my grandparents’ fridge, and I used to have small sips from my mum’s glass when she was enjoying it after dinner.

If you could choose to bartend for 3 of the most influential/famous people in the world, who would they be?

  1. Michelle Obama, so I could ask how she won Barack’s heart!
  2. Dr Dre, so I could hear all of his cool stories about NWA.
  3. Sophia Loren – she’s such a representation of Italian beauty and style all over the world

The best city or country with the best drinking scene is…?
Definitely London – it’s the most vibrant city in the world, and there is so much happening every day. The bartending scene is very competitive, too, so if you make it in London you can do it anywhere! My favourite bars there are Bar Termini, The Connaught Bar and, of course, The London Edition.

Second only to London and New York, though is Singapore, which is by far the fastest growing city in the international bar scene, and I’m so humbled to be part of this.

If you weren’t bartending, what do you think you would be doing now?
I would probably be unemployed! (laughs) Jokes aside, I really love dealing with people and being part of their experience. A great experience starts from the moment they make a reservation, or when they walk into the bar and have someone friendly chat with them. If I wasn’t working as a bartender, I think I’d still want to be part of that, so I would probably be working in the industry in some other capacity.

What’s your favourite ingredient to use when concocting a drink?
A dash of Fernet and/or a pinch of salt – both have the power to soften the edges of a drink. Fernet can give a totally new dimension to a drink, whilst salt can enhance the sourness and zest within a cocktail.

If you had to drink one thing for the rest of your life, what would it be?
My favourite cocktail has to be a Negroni – why? It’s the one drink that you can describe with one word: Balance. The Campari with the Vermouth are in perfect harmony, whilst the Gin adds that extra kick, making the Negroni one of the most popular cocktails in the world. It’s one thing Italians can be very proud of… second only to Pizza Napoletana!

An interesting fact about yourself would be?
I love to travel, and I’ve lived in four different countries so far.


While Marcello only reveals itself in the evenings, in the daytime it’s home to Publico Deli, the neighbourhood’s favourite casual Italian deli serving all-day breakfast and fresh brews. Atlas is probably one of the most gorgeous bars you’ll ever visit in Singapore, aptly located at the Gotham-esque Parkview Square. A visit to this speakeasy-inspired bar is a must and when you do, have yourself the signature Atlas Martini with orange bitters and Champagne vinegar. If you’re feeling a little fancy, try the Cecil Beaton, a herbaceous little gem comprising of rare Australian spiced dry gin, hibiscus water, Earl Grey tea and milk.

Great drinks are made even better with amazing food, and Tippling Club does this to a tee. The edgy restaurant and bar in Tanjong Pagar exudes elegance and flair that extends from its interiors down to its creations. As a cult favourite among epicureans, the bar is also known for its innovative and ‘out-of-the-box’ take on gastronomy.

In the bar’s latest endeavour to create ‘the world’s first edible menu’, diners get to experience specially scented gummy bears that represent 12 avant-garde cocktails that come with intriguing names like Baby, Happiness, and Lust. If that doesn’t pique your interests, we don’t know what will!

Asia’s #8: Native Cocktail Bar

“Open your eyes, beauty and inspiration are all around us. This is where we’re from, this is where we are. We don’t have to travel far. NATIVE is our home.”

With an introduction like that, how can one not sit up and take notice? Drawing inspiration from its surroundings, Native uses locally and regionally foraged ingredients in its cocktails which inevitably helps them stand out from the slew of bars that ride on the American speakeasy bandwagon.

Some of the more exotic ingredients you’ll find on the menu include jasmine blossom, turmeric leaves, tapioca, soursop, and  – get ready for this one – weaver ants (you read that right). If you’re popping by to give their creations a try, we’d recommend the Ceylon Arrak that’s derived from coconut flower sap aged in Sri Lankan wood. If you’re feeling antsy to try something unique, leave your fears at the door and order Antz, a Thai rum-based drink that’s topped with ants on a frozen basil leaf.

Those well-versed in the cocktail scene in Singapore wouldn’t need an introduction to this local speakeasy; 28 HongKong Street has long been a landmark destination for locals and visitors alike for its chill vibes and outstanding cocktails. While this establishment keeps everything on the down low – from the lack of online presence to its discreet entrance – many have gone through the trouble of hunting it down for a taste of what the team behind 28 has to offer – and boy, are you in for a ride.

One of the popular drinks here is the 6 Foot 7 Foot, a whirlwind of a drink filled with rum, cognac, rye, and absinthe with torched bananas. Prefer to keep it simple? You can’t go wrong with an Old Fashioned or Zaya Rum.

Joining the ranks of “prominent” hidden bars in Singapore comes Operation Dagger, a secretly successful drinkery that oozes minimalistic chic with its striking interior of raw concrete and rugged furniture, complete with bottles upon bottles of alcohol that line its shelves. Forget about the theatrics here – owner and head mixologist Luke Whearty helms the bar, whipping up some of the most innovative cocktails from house-made meads and house-infused spirits.

A creation that you must not miss include the Cabbage, a drink comprising of sous vide natural wine from fermented red cabbage with apple and rose. Better yet, go ‘omakase’ and try a flight of cocktails chosen especially for you by the bartender!

Much like its namesake, Gibson is just the type of place for non-conformists and those who aren’t afraid to venture into flavours of the unknown. The bar is also located in an old Singaporean shophouse, which adds to the charm of the place that most diners find themselves inevitably drawn to.

The Perfect Pasta Pt. 1: Tips and Tricks from Singapore’s Best Chefs

Be it a simple plate of aglio olio or an indulgent carbonara, pasta is an Italian staple that never fails to satisfy our tummies. In this article, master chefs from Singapore’s all-time favourite Italian restaurants share their pasta recipes and tips with us. Get ready to pull out your pans and cook up a storm!

 

1. Pasta alla Nocerina by Chef Marco De Cecco from Capri Trattoria & Pizzeria

If you’re a fan of truffles, this recipe for Pasta alla Nocerina will be right up your alley. Tossed with handmade fresh sausages and perfumed with the addition of truffles, this pasta is finished with a touch of cream to dial up the indulgence.

Recipe for Pasta alla Nocerina / Pasta with Sausages and Truffles Cream Sauce

Ingredients:

  • Pasta
  • Fresh sausages
  • Truffle Paste
  • Cream
  • Shallot
  • Rosemary
  • Butter
  • Parmesan
  • Salt & Pepper

Directions

  1. Put water in a saucepan and bring it to a boil.
  2. Put the saucepan over medium heat, add butter, rosemary and onion. Cook for 3 minutes before adding the sausages. Mix and continue cooking for another 3 minutes.
  3. Add some white wine and mix until evaporated. Then, add salt, pepper, cooking cream, truffle paste and mix them together. Reduce the heat and cook for 5 minutes.
  4. Place pasta in boiling water to cook as per instructions. Be careful not to overcook it; keep it al dente. After the pasta is done, drain and pour it into the pan with the sauce. For the finishing touch, add some Parmesan cheese and mix well. Serve warm and garnish with additional rosemary.

Tips:

  • To add the sausages to the pan, break them into flakes of mincemeat before frying them.
  • Allow the sausages to brown before adding the white wine.
  • If the cream dries up too much, you may add a bit of milk.

2. Squid Ink Pasta by Chef Lino Sauro from Gattopardo Ristorante di Mare

Messy but absolutely delectable, squid ink is used to colour and flavour foods, giving pasta dishes a sexy black hue. Extracted from the ink sacs of ocean squids, the ink imparts dishes with a rich and briny flavour reminiscent of the ocean.

Recipe for Squid Ink Pasta for two

Ingredients:

  • 150g squid ink pasta
  • 50g cherry tomatoes
  • 6g chilli padi
  • 8g mirepoix (a combination of diced vegetables sauteed in butter, then used as an aromatic flavouring base for sauces, soups, and stews)
  • 8g nduja (spicy pork sausage)
  • 60g white wine
  • 20g cuttlefish
  • 200g mussels
  • 120g fish stock
  • 120g red prawn bisque
  • 30g extra virgin olive oil
  • 20g pistachio sauce
  • 5g toasted pistachios

Directions:

  1. Sweat vegetables (mirepoix) in a pan over medium heat.
  2. Add the nduja and mussels before deglazing the pan with white wine.
  3. Remove mussels once they open and add in the liquids.
  4. Toss in cooked pasta and sauté until a desired sauce consistency.
  5. Return the mussels to the pan and drizzle in the olive oil.
  6. Now brush your plate with pistachio sauce and plate your pasta. Garnish it with freshly toasted chopped pistachios.

Tips:

  • To make the mirepoix, dice up some onions, carrots and celery uniformly in a ratio of 2:1:1.
  • To make the pistachio sauce, you may refer to this recipe from SAVEUR. However, if that is too much work, then feel free to skip it.

3. Uncle’s Ettore Pesto by Chef Simone Vespasiani from Trattoria Nonna Lina

Originating in Genoa, Italy, pesto sauce is commonly used to accompany pasta dishes. The traditional Italian pesto is made with basil, pine nuts, parmesan, garlic, and quality olive oil. To get the best results, it should be made using a marble mortar and wood pestle as the marble mortar can be chilled to prevent the oxidation of the basil. The grinding also helps to tear the leaves instead of cutting them up. This helps to perfectly extract the essential oils in the basil, giving you a tasty, aromatic pesto in a beautiful green colour.

If you’re a fan of Uncle’s Ettore Pesto pasta from Trattoria Nonna Lina, you might want to sit up for this. Chef Simone dishes out a few tips for you to get that perfect pesto, together with a recipe for you to try at home!

For an original Uncle’s Ettore pesto, the secret is in using the right ingredients and tools, therefore you need:

  • Organic basil leaves (use small leaves for better taste)
  • Young, organic garlic
  • 30-month old Parmigiano Reggiano
  • Matured pecorino cheese
  • Pine nuts
  • Quality extra virgin olive oil

 

Recipe for Pesto Sauce

Ingredients:

  • 1 clove of garlic
  • 1 and 1/2 tablespoon of pine nuts
  • 2 bunches (about 1 and 1/2 cup of leaves) of fresh basil
  • a pinch of rock salt
  • 2 tablespoon of parmesan cheese, grated.
  • 1 tablespoon of pecorino cheese, grated.
  • 4 tablespoons of Extra Virgin Olive Oil DOP

Directions:

  1. Remove the stems from the basil leaves and wash the leaves with cold water. Place them carefully on a canvas to dry. Ensure that they are well-dried before preparing the pesto.
  2. Put a clove of garlic in the mortar, ensuring that you remove any inner green bits which are the less digestive parts of the garlic. Add 1/3 of the pine nuts and using an up-down motion with the pestle, crush the mixture until it reaches a creamy consistency. Scoop out the garlic cream from the mortar and put it aside. You will use it later.
  3. Put the remaining pine nuts in the mortar, add 2/3 of the basil leaves and a few grains of rock salt. Rock salt is needed as it helps to break the basil leaves during the grinding process. It also prevents oxidation. However, take care not to add too much salt!
  4. Begin by using a rotating movement to smash the basil leaves against the interior walls of the mortar. The basil leaves should be torn up instead of pounded. This helps to release the essential oils contained in the internal veins of the leaves. Continue pounding until a homogenous cream is obtained. Add the remaining leaves, a little more rock salt grains, and continue smashing.
  5. After the last batch of basil leaves are mixed in, add the garlic cream that was previously left aside, a little at a time, tasting in between additions.
  6. Add the cheeses, mix, and taste. Add salt if necessary.
  7. Finally, add the oil, stirring the mixture gently to prevent the oil from creating an emulsion.
  8. To store the pesto, ensure that your pesto is always kept under a light layer of oil to prevent oxidation.
  9. To make pesto pasta, simply cook your preferred pasta as per the recipe directions and transfer to a serving bowl. Add the pesto before slowly streaming in some pasta water and mixing through to emulsify your sauce. Serve.

Tips:

  • Use a sweet garlic and always remove the green tip inside.
  • Use a seasoned Parmesan cheese. Besides giving the dish a more intense flavour, it helps to prevent the pesto from sticking to the bottom of the plate when the pasta is seasoned.
  • Don’t forget to taste every step of the way and adjust accordingly as different batches of garlic and basil do not taste the same. If the pesto is too salty, reduce the amount of parmesan cheese and/or add less salt to the pasta water.
  • Make the pesto as quickly as possible to prevent it from oxidizing.
  • For a crunch in your pesto, add more pecorino and some walnuts.

 

No pestle and mortar? You can use a food processor instead! Here are some tips from Chef Simone on using it.

  • Chill your food processor bowl and blades in the fridge prior to use.
  • Use the food processor intermittently to prevent the blades from creating too much heat.
  • The ingredients used are the same, but it is recommended to double their amounts when using a food processor.
